Introducción: La medicina ancestral ha utilizado plantas con cualidades medicinales para prevenir y tratar enfermedades; aun cuando este tipo de investigaciones se han incrementado, son escasos los estudios con tubérculos andinos. Objetivo: Determinar la actividad biológica de extractos acuosos y etanólicos de los tubérculos andinos Tropaeolum tuberosum (mashua) y Ullucus tuberosus (melloco). Métodos: La investigación fue experimental y se desarrolló in vitro. La muestra estuvo constituida por 2 tubérculos andinos utilizados en la medicina ancestral. Se aplicaron técnicas de extracción en medio acuoso y etanólico. Los extractos fueron evaluados para determinar la actividad hemoaglutinante, anticoagulante y antimicrobiana con cepas ATCC. Resultados: Se demostró actividad hemoaglutinante en el extracto acuoso de T. tuberosum sobre eritrocitos A. Todos los extractos acuosos mostraron actividad anticoagulante, Tropaeolum tuberosum inhibió la actividad de la coagulación sanguínea (vía intrínseca) con un TTPa> 300 seg. Tanto los extractos acuosos y etanólicos exhibieron actividad antimicrobiana contra cepas ATCC, Tropaeolum tuberosum inhibió el crecimiento de Staphylococcus aureus 25923 con halos de 17 y 22 mm y Ullucus tuberosus (blanco) con halos de 10 y 30 mm, respectivamente. Los extractos acuosos de Tropaeolum tuberosum y Ullucus tuberosus (rojo) inhibieron el crecimiento de Candida tropicalis 66029 con halos de 27 y 12 mm y respectivamente. Conclusiones: Determinada la actividad biológica, se evidencia que los tubérculos andinos estudiados aglutinan eritrocitos humanos, específicamente eritrocitos del grupo A, así mismo, capacidad de inhibir las proteínas plasmáticas de la coagulación y de inhibir el crecimiento bacteriano y micótico de cepas ATTC.


Introduction: Ancestral medicine has used plants with medicinal qualities to prevent and treat diseases, even though this type of research has increased, studies with Andean tubers are scarce. Objective: To determine the biological activity of aqueous and ethanolic extracts of the Andean tubers Tropaeolum tuberosum (mashua) and Ullucus tuberosus (melloco). Methods: The research was experimental and was developed in vitro. The sample consisted of 2 Andean tubers used in ancestral medicine. Extraction techniques were applied in aqueous and ethanolic medium. The extracts were evaluated for hemagglutinating, anticoagulant and antimicrobial activity with ATCC strains. Results: Hemagglutinating activity was demonstrated in the aqueous extract of T. tuberosum on A erythrocyte. All aqueous extracts showed anticoagulant activity, Tropaeolum tuberosum inhibited blood coagulation activity (intrinsic pathway) with an aPTT>300 sec. Both aqueous and ethanolic extracts exhibited antimicrobial activity against ATCC strains, Tropaeolum tuberosum inhibited the growth of Staphylococcus aureus 25923 with halos of 17 and 22 mm and Ullucus tuberosus (white) with halos of 10 and 30 mm, respectively. The aqueous extracts of Tropaeolum tuberosum and Ullucus tuberosus (red) inhibited the growth of Candida tropicalis 66029 with halos of 27 and 12 mm, respectively. Conclusions: Once the biological activity was determined, it was evident that the Andean tubers studied agglutinated human erythrocytes, specifically group A erythrocytes, as well as the ability to inhibit plasma coagulation proteins and inhibit the bacterial and fungal growth of ATTC strains.

This research paper presents the preliminary outcomes of an investigation conducted on the levels of heavy metals (such as As, Cd, Pb, Al, Mn, Cu, Ba, Cr, and Ni) and pesticide residues found in both traditional and modern potato cultivars grown in Moquegua, one of the principal copper-producing departments of Peru. A total of 160 samples of potatoes and soil were collected at altitudes between 58 and 3934 m above sea level (m.a.s.l.), and measured by inductively coupled plasma mass spectrometry (ICP-MS) and inductively coupled plasma optical emission spectrometry (ICP-OES), respectively. Determinations of pesticide residues were conducted by using the QuEChERS method. Metal concentrations in potato samples varied from 0.006 to 0.215 mg/kg for Pb; 0.01-0.25 mg/kg for As; 0.001-0.048 mg/kg for Cd; 0.4-47.9 mg/kg for Al; 0.008-0.802 mg/kg for Cr; 0.505-2.729 mg/kg for Cu; 0.022-29.894 mg/kg for Mn; 0.03-2.76 mg/kg for Ba; to 0.006-0.419 mg/kg for Ni. Among the principal findings of the study were that (i) potatoes grown at lower altitude (Chala and Yunga regions) accumulated more As, Cr, Ni and Al than those grown at higher altitudes (Suni region); (ii) modern potatoes in most cases show a higher concentration of metals than native ones; (iii) the principal positive correlation found between soil and potatoes was for As; (iv) 90% of the samples analyzed were free from pesticide residues.

Potato (Solanum tuberosum L.) is one of the main crops in the Andean region and due to environmental aspects, the use of biocontrol agents is considered a safe way to produce potato seed tubers.The objective of the study was to evaluate potato inoculation with Trichoderma sp. as a matrix and rhizobacteria Bacillus simplex and Azotobacter sp. on the growth of potato seedlings from in vitro culture, for the production of seed tubers in a greenhouse. The inoculation of microorganisms was carried out in pots, using five potato genotypes for processing. The inoculation treatments were: control, Trichoderma sp., Trichoderma sp. + Azotobacter sp., Trichoderma sp. + Bacillus simplex, Trichoderma sp. + B. simplex + Azotobacter sp. The potato genotypes were cv. Unica (CIP392797.22), cv. Bicentenaria, the advanced clones CIP 396311.1, CIP 399101.1, and the experimental clone UH-09 from the Universidad Nacional José Faustino Sánchez Carrión. A completely randomized design was used, under a factorial arrangement and comparisons between treatments were made at p<0.05. All inoculant treatments exceeded the control in number and weight of tubers per plant as well as in tuber size. Inoculations of Trichoderma sp. alone or with Azotobacter sp. increased plant height, number of leaves per plant and vegetative uniformity; inoculations with the Trichoderma sp. + B. simplex + Azotobacter sp. consortium, improved the dry weight of the foliage, number of shoots per plant and vegetative vigor. There were significant interactions between potato genotypes and inoculant treatments for plant uniformity, vegetative vigor, and the foliage's dry weight. Coinoculation with Trichoderma sp. and some bacterial strains promote the growth of in vitro potato seedlings, increasing the size and weight of the seed tubers and plant biomass, indicating an interrelation between fungi and bacteria that influence the production of potatoes in a greenhouse.(AU)


A batata (Solanum tuberosum L.) é uma das principais culturas da região andina e devido aos aspectos ambientais, o uso de agentes de biocontrole é considerado uma forma segura de produzir tubérculos de batata-semente. O objetivo do trabalho foi avaliar a inoculação de batata com Trichoderma sp. como matriz e rizobactérias Bacillus simplex e Azotobacter sp. sobre o crescimento de mudas de batata provenientes de cultivo in vitro, para produção de tubérculos-semente em casa de vegetação. A inoculação dos microrganismos foi realizada em vasos, utilizando-se cinco genótipos de batata para processamento. Os tratamentos de inoculação foram: testemunha, Trichoderma sp., Trichoderma sp. + Azotobacter sp., Trichoderma sp. + B.simplex, Trichoderma sp. + B.simplex + Azotobacter sp. Os genótipos de batata foram cv. Única (CIP392797.22), cv. Bicentenaria, os clones avançados CIP396311.1, CIP399101.1, e o clone experimental UH-9 da Universidade Nacional José Faustino Sánchez Carrión. O delineamento foi inteiramente casualizado, em esquema fatorial e as comparações entre os tratamentos foram feitas com p<0,05. Todos os tratamentos com inoculantes excederam o controle em número e peso de tubérculos por planta, bem como em tamanho de tubérculo. Inoculações de Trichoderma sp. sozinho ou com Azotobactersp. aumento da altura das plantas, número de folhas por planta e uniformidade vegetativa; inoculações com o Trichoderma sp. + B.simplex + Azotobacter sp. consorcio, melhorou a massa seca da folhagem, número de brotações por planta e vigor vegetativo. Houve interações significativas entre genótipos de batata e tratamentos inoculantes para uniformidade e vigor vegetativo, e para a massa seca da folhagem. Coinoculação com Trichoderma sp. e algumas cepas bacterianas promovem o crescimento de mudas de batata in vitro, aumentando o tamanho e o peso dos tubérculos-semente e da biomassa vegetal, indicando que existe inter-relação entre fungos e bactérias que influenciam a produção de batata em casa de vegetação.(AU)

The replacement of synthetic polymers by starch biofilms entails a significant potentiality. They are non-toxic materials, biodegradable, and relatively easy to gather from several sources. However, various applications may require physicochemical properties that might prevent the use of some types of starch biofilms. Causes should be explored at the nanoscale. Here we present an atomic force microscopy surface analysis of starch biofilms extracted from the Andean tubers melloco (Ullucus tuberosus), mashua (Tropaeolum tuberosum), oca (Oxalis tuberosa), and potato (Solanum tuberosum) and relate the results to the macroscopic effects of moisture content, water activity, total soluble matter, water vapor permeability, elastic properties, opacity and IR absorption. Characterization reveals important differences at the nanoscale between the starch-based biofilms examined. Comparison permitted correlating macroscopic properties observed to the topography and tapping phase contrast segregation at the nanoscale. For instance, those samples presenting granular topography and disconnected phases at the nanoscale are associated with less elastic strength and more water molecule affinity. As an application example, we propose using the starch biofilms developed as a matrix to dispose of mouthwash and discover that melloco films are quite appropriate for this purpose.

The Atrato river basin is one of the world's most biodiverse areas; however, it is highly impacted by mercury gold mining, which generates air, water, and soil pollution. (1) Background: The concentrations of persistent heavy metal pollutants, mercury (Hg), lead (Pb), cadmium (Cd), and arsenic (As) in the fish, fruits, and vegetables most consumed by the riverside inhabitants of the middle basin of the Atrato river represent a danger to public health; (2) Methods: A total of 154 samples of different fruits and vegetables and 440 samples of fish were analyzed by atomic absorption spectroscopy. A sample of 446 people were surveyed to evaluate food consumption and carcinogenic and non-carcinogenic risk; (4) Conclusions: High concentrations of As, Hg, Pb, and Cd were identified in fish, fruits-tubers, and vegetables-stems commonly consumed by inhabitants of the middle basin of the Atrato River, which exceeded the Codex limits and the limits established by the WHO/FAO, especially for carnivorous fish species. A high carcinogenic and non-carcinogenic risk was evidenced amongst inhabitants of the middle basin of the Atrato River due to the consumption of fish contaminated with high concentrations of As, MeHg, and THg. The risk due to the consumption of vegetables was very low.

Common roots and tubers such as arracacha, Asterix potato, cassava, potato, sweet potato, taro, and yam are consumed by millions of people. These foods are an integral part of the diet in developing countries and are nutritionally important as energy reserves due to their carbohydrate content. Although many studies have been performed on these foods, comparative chemical profiles have been still poorly evaluated. In this work, we applied nuclear magnetic resonance (NMR) analysis associated with chemometrics to evaluate the chemical composition of extracts obtained in deuterated water from roots and tubers that are commercially consumed in Brazil and the rest of the world. From the 31 metabolites characterized in the extracts, 22 were quantified. Multivariate analyses showed 8 metabolites which were primary responsible for the distinction between samples, including choline, γ-aminobutyrate (GABA), glutamine, asparagine, isoleucine, fructose, glucose, and sucrose. Thus, our work shows important information on the chemical composition in addition to the mere carbohydrate content of these food matrices. This knowledge can provide information about food safety and beneficial nutritional values of the studied tubers and roots, which can be useful to consumers and the food industry.

The objective was to estimate the physiological and productive performance of potato genotypes in two organic cultivation systems. Two trials were conducted, being one in a protected and on in an open-field environment. A randomized complete block design with four replicates and five treatments (genotypes 'Agata', 'Atlantic', 'BRS Ana', 'BRSIPR Bel' and 'BRS Clara') was used. Physiological, productive characteristics and defects associated with tubers were obtained. The protected environment is the most appropriate to produce organic potatoes under the evaluated conditions. Genotypes 'BRSIPR Bel' and 'BRS Ana' exhibit a high productive potential in organic conditions.


Objetivou-se estimar o desempenho fisiológico e produtivo de genótipos de batata em dois ambientes de cultivo em sistema orgânico. Foram conduzidos dois ensaios, sendo um em condições de ambiente protegido e outro em campo aberto. Empregou-se o delineamento em blocos completos casualizados com quatro repetições e cinco tratamentos referentes aos genótipos 'Agata', 'Atlantic', 'BRS Ana', 'BRSIPR Bel' e 'BRS Clara'. Avaliaram-se atributos fisiológicos, produtivos e defeitos associados aos tubérculos. O ambiente protegido é o mais adequado para a produção de batata orgânica nas condições avaliadas. Os genótipos 'BRSIPR Bel' e 'BRS Ana' possuem alto potencial produtivo em condições de sistema orgânico.

Abstract The present research evaluated the anti urolithic potential of Cyperus rotundus tubers extract using in silico, in vitro and in vivo techniques. In silicostudy was performed of Cyperus rotundus constituents and pathological protein oxalate oxidase (PDB Id: 2ETE). In vitrostudy, nucleation and aggregation assay involved for assessment of ethanol extract of Cyperus rotundus tuber (50-3000 µg/ml).In vivo studies involved that the Cyperus rotundusethanolic extract (100, 200 and 400 mg/kg B.wt.) wastreatedonsodium oxalate induced urolithiatic rats for seven days,evaluated kidney function by urine and serum biochemical analysis and statistical analysis performed usingGraphPad prism5 software.In silico results showedthat Cyperus rotundus constituents,Humulene epoxide, 4-Oxo-alpha-ylangene, Cubebol were exhibited better binding energyonoxalate oxidase.Ethanolic extract of Cyperus rotundustuber was exhibited nucleation, aggregation of calcium oxalate monohydrate crystals inhibition in dosedependent manner. Sodium oxalate treatment was triggered biochemical changesin the urine that have been substantially prevented by the ethanolic extract of Cyperus rotundus tuber. The current findings Cyperus rotundus anti urolithic activity due to antioxidant essential oils. The molecular docking results could be used to optimize lead and develop the appropriate urolithiasis treatment.

RESUMEN La batata Ipomoea batatas (L.) Lam. es una manifestación de la biodiversidad silvestre y cultivada del Neotrópico, caracterizada por hojas anchas y tubérculos feculentos. La especie es objeto de investigación, por su amplio uso e importancia en regiones tropicales y subtropicales, por sus propiedades nutricionales y aporte energético, convirtiéndose en un recurso imprescindible para la seguridad alimentaria. El objetivo de esta investigación fue evaluar el rendimiento agronómico, en valor relativo del forraje (VRF) y rendimiento y calidad de almidón, en tubérculos de batata. Se evaluaron 10 clones seleccionados por alta materia seca en tubérculos, con un diseño de bloques completos al azar, con 3 repeticiones y 6 plantas por repetición. Se destacó el clon 440-078, con un VRF de 133,07 y por el alto rendimiento de tubérculos los clones 440-656 y 440-621, considerados como materiales promisorios para calidad del tubérculo; este último presentó el peso de tubérculo más alto en las tres categorías identificadas A, B y C. El clon Tainung-66, se posicionó con -1.53 de ISP, asociado con bajos valores de fibra (28,9 y 20,25 de FDN y FDA, respectivamente), que le confieren una digestibilidad burda del tubérculo del 72 %. Además, se determinaron diferencias significativas (p <0,05), en las propiedades de empastamiento del almidón, con superioridad del clon 440-016, por sus características retrogradantes, con 221 cP y el clon Tainug-66, por su estabilidad teniendo en cuenta la viscosidad.


ABSTRACT The sweet potato Ipomoea babatas (L.) Lam., is a manifestation of the wild and cultivated Neotropical biodiversity, characterized by leaves with value as forage and starchy tubers, it is the object of research for its wide use and importance in tropical and subtropical regions, for its nutritional properties and contribution energy, becoming an essential resource for food security. The agronomic yield was evaluated in relative forage value (RFV), yield, and starch quality in sweet potato tubers. 10 clones selected for high dry matter in tubers were evaluated, with a randomized complete block design with 3 repetitions and 6 plants per repetition. Clone 440-078 stood out with an RFV of 133.07 and due to its high performance in tubers, clones 440-656 and 440-621, considered as promising materials for tuber quality, the latter presented the highest tuber weight in the three identified categories A, B, and C. The Tainung-66 clone is positioned in first place with -1.53 ISP associated with low fiber values (28.9 and 20.25 of NDF and ADF respectively), which give it a gross tuber digestibility of 72 %. Significant differences (p <0.05) in starch plastering properties were determined, with superiority at clone 440-016 for its retrograde characteristics with 221 cP and the Tainug-66 clone for its stability taking into account the maximum viscosity (Vm) and the viscosity of the cold paste (VPF) with 730 cP and 738 cP respectively.

Colocasia esculenta (L.) Schott and Xanthosoma sagittifolium (L.) Schott are the most popular tubers among the Araceas family. Their chemical composition related to their nutritional benefits could make these rhizomes a valid option for the nutritional and technological improvement of food products. This chapter provide a clarification about the correct nomenclature of both tubers giving an insight around the principle components and their health effects. The scientific literature review has primarily highlighted several in vitro and animal studies where the consumption (leaves and whole tuber) of Colocasia esculenta (L.) Schott and Xanthosoma sagittifolium (L.) Schott was related with certain antihyperglycemic, antihypertensive, hypoglycemic and prebiotic effects. Owing to their functional properties, different component from these rhizomes, specially starch, mucilage and powders are being used by the food industry. Their ability to behave as thickener and gelling agent has allowed their incorporation in baked food, food paste and beverages. This chapter suggests the development of more research around these rhizomes since they could potentially play, with other crops, an important role in the future sustainable strategies to feed the planet.

Aflatoxins are carcinogenic compounds produced by some species of Aspergillus, especially those belonging to Aspergillus section Flavi. Their occurrence in food may start in the field, in the post-harvest, or during storage due to inadequate handling and storage. Because cassava is a staple food for a high percentage of the Brazilian population, we evaluated the presence of aflatoxin-producing species in cassava tubers, cassava products (cassava flour, cassava starch, sour starch, and tapioca flour), and in soil samples collected from cassava fields. In addition, the levels of aflatoxin contamination in cassava products were quantified. A total of 101 samples were analyzed, and 45 strains of Aspergillus section Flavi were isolated. Among the identified species, Aspergillus flavus, Aspergillus arachidicola, Aspergillus novoparasiticus, and Aspergillus parasiticus were found. The majority of strains (73.3%) tested for their aflatoxin-producing ability in synthetic media was positive. Despite that, cassava and cassava products were essentially free of aflatoxins, and only one sample of cassava flour contained traces of AFB1 (0.35 µg/kg).

The European Commission requested the EFSA Panel on Plant Health to prepare and deliver risk assessments for commodities listed in Commission Implementing Regulation (EU) 2018/2019 as 'High risk plants, plant products and other objects. This Scientific Opinion covers plant health risks posed by tubers of Ullucus tuberosus imported from Peru, taking into account the available scientific information, including the technical information provided by Peru. The relevance of an EU quarantine pest for this opinion was based on evidence that: (i) the pest is present in Peru, (ii) U. tuberosus is a host of the pest and (iii) the pest can be associated with the commodity. The relevance of any other pest, not regulated in the EU, was based on evidence that: (i) the pest is present in Peru (ii) the pest is absent in the EU; (iii) U. tuberosus is a host of the pest; (iv) the pest can be associated with the commodity and (v) the pest may have an impact and can pose a potential risk for the EU territory. There are five pests i.e. one insect (Amathynetoides nitidiventris), two nematodes (Atalodera andina and Nacobbus aberrans) and two viruses (the Andean potato latent virus (APLV) and the potato virus T (PVT)) that fulfilled all relevant criteria were selected for further evaluation. For the five pests, the risk mitigation measures proposed in the technical dossier from Peru were evaluated taking into account the possible limiting factors. For each of the five pests, an expert judgement is given on the likelihood of pest freedom taking into consideration the risk mitigation measures acting on the pest, including uncertainties associated with the assessment. The degree of pest freedom varies among the pests evaluated, with PVT being the pest most frequently expected on the imported commodities. The Expert Knowledge Elicitation indicated, with 95% certainty, that between 9,157 and 10,000 tubers out of 10,000 would be free of PVT.

In recent years, interest has increased in the search for new starch sources, especially among Andean tubers, such as Arracacha (or Peruvian Carrot). This work studied the chemical composition, structural features, and thermal and adsorption properties of four sub-varieties of yellow Arracacha grown in Colombia: comun (Com), cartagenera (Car), yema de huevo (YH) and clon 22 (C22). Starches from the Com, Car and YH sub varieties presented similar properties, amylose content around 30%, relative crystallinity around 31% and gelatinization temperature around 60 °C. On the other hand, starch from the Clon 22 (C22) variety presented the highest amylose content, leading to an increase in gelatinization temperature (63 °C), and lower relative crystallinity (24%). Furthermore, digestibility studies show that C22 presented a higher resistant starch content. Our results show that Arracacha is a very interesting starch source, despite few studies on the properties of the different sub-varieties.

Tubers and roots have been used in human nutrition since ancient times once they are resistant to pests and easy to grow even in soils poor in nutrients. The most consumed include cassava, potatoes, taro, and yam. In many regions, they are the main source of energy, which has led to industrial-scale cultivation of some such as yacon, burdock, Jerusalem and artichoke, known as sources of fructooligosaccharides, due to the increased demand for prebiotic fibers and the need for lower energy foods. This chapter will present a general approach to tubers and roots and their important role in human nutrition. At the end of the chapter, those recognized as prebiotics and the processing methods for extracting fibers will be discussed.

With the intensification of production systems, dairy cow feeding has undergone changes creating the need to increase substitute feed options, focusing on more efficient, modern, and sustainable alternatives. Few researches were carried out evaluating the inclusion of sweet potato flour as an energy source in substitution of maize for ruminants. The aim of this study was to evaluate the in vitro gas production of ground corn replacement by sweet potato flour at different levels. For in vitro gas production, four treatments were performed, consisting of corn replacement by sweet potato flour at the levels of 0, 33, 66, and 100%, in a diet consisting of corn silage, soybean meal, and ground corn. In vitro incubations were conducted in sealed bottles containing 50 ml of the inoculum prepared using ruminal fluid and 0.5 g of each treatment. Gas production was determined in 96 consecutive hours. The cumulative gas production was greater when the corn was 100% replaced by SPF (224 ± 1.45 and 231.9 ± 1.45 ml/g DMi for 0 and 100% of replacement, P = 0.01). Degradation rates were 7.10, 7.59, 8.08, and 8.59 ± 0.06% per hour for the 0, 33, 66, and 100% replacement rates, respectively (P 0.001). There was also a difference (P = 0.002) in the lag time, in which diets with the highest SPF inclusion had a lower colonization time. In conclusion, sweet potato flour produced more gas and was more rapidly degraded than corn.(AU)

Thirteen fruits, eight legumes and three tubers consumed in the Andean regions of Ecuador were studied to determine their bioactive compounds, organic acids, sugars content, total antioxidant capacity, as well as to determine which among them showed the greatest contribution in terms of antioxidant activity and which compounds contributed to it. Among fruits, taxo fruits (Passiflora mollissima (Kunth) L.H. Bailey) presented the highest values of total phenolic, carotene content, and total antioxidant capacity. The ají ratón (Capsicum chinense Jacq) showed the highest content of vitamin C. Taxo showed the highest content of ß carotene, whilst lycopene was identified only in guayaba fruits (Psidium guajava L.) and ají ratón was the principal source of lutein. In legumes, chocho perla (Lupinus mutabilis Sweet) showed the highest values for both total phenolic and flavonoid content, whilst frejol negro (Phaseolus vulgaris L.) and frejol canario (Vigna unguiculata (L.) Walp) showed the highest values for FRAP and DPPH assay, respectively. Between tubers, the jícama (Smallanthus sonchifolius (Poepp.) H. Rob.) had the majors values in terms of total phenolic, flavonoid content, and total antioxidant capacity. In terms of total antioxidant capacity, taxo fruits have the highest contribution in terms of total antioxidant capacity, whilst the dendogram shown the occurrence of five distinct groups in which taxo was located in the first largest group. Our data contributing towards gaining better knowledge about the Andean Ecuadorian diet and the composition of Andean food in order to estimate dietary intakes of health-promoting components.

RESUMEN Dentro de los tubérculos andinos de mayor importancia, después de la papa, se encuentra la ibia (Oxalis tuberosa Mol.) ya que constituye un alimento básico para las comunidades campesinas. Boyacá es uno de los departamentos de Colombia, en donde todavía existe la tradición de cultivar y consumir tubérculos como los cubios, ullucus y rubas o ibias, sin embargo están amenazados por la erosión genética. No existen estudios sobre estos recursos fitogenéticos en Boyacá, por lo cual el objetivo de esta investigación fue colectar y caracterizar morfológica y molecularmente materiales de ibias en este departamento. El análisis morfológico mostró que las características más discriminantes fueron: color de los tallos aéreos, pigmentación de las axilas, color del follaje, color de la flor, color del pedúnculo y pedicelo, color predominante de la superficie del tubérculo, color secundario de la superficie del tubérculo, color predominante y secundario de la pulpa, distribución del color secundario de la pulpa y forma de los tubérculos. El análisis de similitud diferenció a los materiales en dos grandes grupos, de acuerdo principalmente a características morfológicas como el color y hábito de floración. El valor de heterocigosidad promedio para la población total fue de 0.39 el cual se considera alto al compararse con otros estudios de diversidad genética en ibias. El análisis de varianza molecular y el Fst (coeficiente de diferenciación genética) muestran que existe una alta variabilidad genética entre los materiales de ibias evaluados la cual debe ser conservada y aprovechada dentro de futuros programas de mejoramiento.


ABSTRACT Among the most important Andean tubers, after potato, is the ibia (Oxalis tuberosa Mol.) because it is a staple food for peasant communities. Boyacá in one of the departments of Colombia, where there is still tradition to grow and consume tubers like cubios, ullucus and rubas or ibias; however, they are threatened by genetic erosion. There are no studies on these plant genetic resources in Boyacá, therefore the goal of this research was to collect and morphological and molecularly characterize ibias in this department. Morphological analysis showed that the most discriminate characteristic were color aerial stems, pigmentation armpits, foliage color, flower color, color peduncle and pedicel, predominant color of the tuber surface, secondary color of the surface tuber, dominant and secondary color of the pulp, distribution of secondary pulp color and shape of tubers. The similarity analysis discriminate the materials in two groups according mainly to morphological characteristics such as color and flowering habit. The value of average heterozygosity for the total population was 0.39, which is considered high when compared with other studies of genetic diversity in ibias. The analysis of molecular variance and Fst (coefficient of genetic differentiation) show that existed a high genetic variability among the ibias evaluated which it should be maintained and exploited in future breeding programs of Andean tubers.

RESUMEN Se evaluó químicamente el perfil de aminoácidos y contenido de vitaminas según la metodología oficial, las harinas crudas de batata y tratadas térmicamente por cocción. Se obtuvieron harinas crudas con contenidos de carbohidratos totales de 84,81%, almidón 50,65%, proteínas de 2,94%, contenidos de grasa cruda de 0,34%. Se encontraron diferencias estadísticamente significativas (p≤ 0,05) por efecto de los tratamientos aplicados. Se redujo el contenido de humedad, cenizas, carbohidratos totales y azúcares reductores. Se observó un incremento en el contenido de fibra cruda. Predominaron en todas las harinas los aminoácidos ácido glutámico y ácido aspártico, el aminoácido limitante fue triptófano. Por efecto de los tratamientos aplicados, hubo diferencias (p≤ 0,05) en la composición de la mayoría de los aminoácidos, incrementando su concentración. El contenido de vitaminas A y C disminuyó por efecto de los tratamientos aplicados (p≤ 0,05). Se concluye que las harinas crudas de batata y cocidas pueden ser empleadas en la formulación de alimentos ya que aportan buenas cantidades de nutrientes.


ABSTRACT The chemical composition, amino acid profile and vitamin content of sweet potato flour (raw and heat treated by cooking) were evaluated according to official methodology. Crude flours with total carbohydrate content of 84.81%, starch 50.65%, proteins 2.94% and crude fat contents 0.34% were used. Statistically significant differences were found (p≤ 0.05) due to the effect of the applied treatments. The content of humidity, ash, total carbohydrates and reducing sugars were reduced and an increase in crude fiber content was observed. The amino acids glutamic acid and aspartic acid predominated in all flours. We observed low levels of the amino acid tryptophan. There were statistically significant differences (p≤ 0.05) due to the effect of the treatments applied on the composition of most of the amino acids, increasing their concentration. Vitamin A and C content decreased due to the effect of the applied treatments (p≤ 0.05). Raw and cooked sweet potato flours can be used in food formulation because they provide good amounts of nutrients.
