ABSTRACT Purpose To address the paucity and potential of context-based prospective memory (PM) assessment tasks suitable to Indian ethnicity, the study aimed to develop a novel context-based PM task and determine its psychometric properties among neurotypical adults. Methods Rendered images in 2-D were extracted from a 3-D shopping mall, where PM and ongoing tasks were embedded within them to provide participants with a semi-immersive experience. The design and scoring of the novel task were constructed in alignment with the Memory for Intentions Screening Test. Fifty neurotypical adults in and around Mangaluru were recruited. The Memory of Intentions Test (MIST) and novel context-based PM task were administered. Results The validity of the novel task was established with a Content Validity Index of 0.98. The intraclass correlation for the test-retest reliability of the novel context-based PM task was 0.92 (p<0.001) and the inter-rater reliability was 0.98 (p<0.001). The internal consistency of the six subscales was high (Cronbach's α= 0.86), and the Spearman-Brown coefficient indicated a strong split-half reliability of 0.87. Spearman's correlation showed that the trials exhibited strong connections to the dichotomic characteristics of the subscales to which they belonged. Further, McNemar's test suggested similar profiles of the participants for the MIST and novel task. Conclusion The results of the present study suggest that the novel context-based PM task offers good validity and reliability measures, providing valuable insight into the mechanisms of PM, and therefore, could be ideal for inclusion in a battery of cognitive assessments.

Traditional foods (TFs) hold increasing global relevance due to their potential to address health and dietary challenges. This study explores TF consumption and patterns in a middle-income country's general population. Using 2017 Ecuadorian highlands survey data, we identified four consumption clusters with distinct TF preferences. Chi-square tests identified variations in independent variables across clusters. Poisson regression models highlighted city, age, education, and food habits as independent predictors of TF-based clusters. Our findings broaden TF importance to nutrition beyond specific populations. Understanding consumption patterns and socioeconomic links supports nuanced public health strategies to tackle contemporary health, social equity, and sustainability issues.

This study aims to identify the main causes of food waste (especially fruit and vegetables) and their relationship with prevention practices at supermarket and supplier levels. To do so, we conducted case studies in four Brazilian supermarket chains and their suppliers. Our findings show that although supermarkets seem to be concerned about avoiding food waste, they mostly focus on internal prevention actions, reflecting the lack of collaboration and information between supermarkets and suppliers. The low investment of supermarkets in actions to prevent food waste is focused only on their internal operations and, despite this, training is inefficient due to the high level of staff turnover and lack of involvement of suppliers in participating in this training. The use of technologies such as packaging, traceability, refrigeration, and transport equipment is insufficient, it increases production costs. A lack of strict legislation in Brazil makes it difficult for supermarkets and suppliers to donate food. Cultural issues specific to Brazil, such as consumer overhandling fruit and vegetables before buying these products, generate a great deal of waste. The paper contributes to the literature by identifying the main root causes of food waste and providing a list of prevention practices that supermarkets and suppliers can benefit from. Managerially, it can help supermarket managers spot the causes of food waste within their operations, and hence change, improve or implement practices and behavior to prevent food waste.

Trata-se de um estudo qualitativo com base na Psicodinâmica do Trabalho e que analisa o trabalho das operadoras de caixa de supermercado, investigando sua organização e a dinâmica prazer-sofrimento psíquico envolvida. Foram entrevistadas individualmente quinze mulheres, de quatro diferentes supermercados da cidade de Belém-PA, usando roteiro semiestruturado. O material foi examinado conforme a técnica de Análise de Núcleos de Sentido (ANS). Verificou-se uma rígida organização do trabalho das operadoras de caixa de supermercado, contendo poucas possibilidades de transformação do sofrimento em vivências de prazer. Há pouco espaço para as operadoras expressarem as dificuldades do trabalho, tais como: insatisfação com as chefias, falta de reconhecimento no trabalho, assédio sexual, constrangimentos praticados pela clientela e precariedade nas condições de trabalho. A submissão, a crença religiosa e o riso aparecem como estratégias coletivas de defesa para suportar as adversidades do cotidiano laboral.


This is a qualitative study based on Psychodynamic of Work which analyzes the work of supermarket cashiers, investigating its organization and the psychic pleasure-suffering dynamic involved. Fifteen women from four different supermarkets in the city of Belém-PA were interviewed individually, using a semi-structured script. The material was examined according to the Meaning Cores Analysis (MCA) technique. There was a rigid organization of the work of supermarket cashiers, with few possibilities to transform suffering into experiences of pleasure. There is little space for operators to express work difficulties, such as, for example: dissatisfaction with managers, lack of recognition at work, sexual harassment, constraints practiced by the customers and precarious working conditions. Submission, religious belief and laughter appear as collective defense strategies to withstand the adversities of daily routine.

The study aims to characterize the foods advertised in supermarket circulars in Belo Horizonte, Brazil, as well as to analyze the price and discounts applied to the products. Supermarket circulars were obtained from five supermarket chains during 2018. Foods were classified according to the NOVA classification system and the Pan-American Health Organization (PAHO) nutritional profile model. Advertised prices, with and without discount, were recorded. Ultra-processed foods responded for 66.9% of ads, followed by fresh or minimally processed foods with 19.9%, processed foods with 9.5%, and processed culinary ingredients with 3.7%. Only 3.5% of the products did not exceed any critical nutrients of the PAHO model. Processed foods had a higher cost (R$3.27/100 g) in relation to other food categories. Products excessive in trans-fat and sodium were statistically significant cheaper when compared to those that did not present inadequacy of these nutrients. The reverse was verified for foods excessive in saturated fat, in total fat and in added sugars. Processed culinary ingredients were more frequent on sale (27.7%), while processed foods were the least advertised with discount (15.9%). Products that were adequate in saturated fat, trans fat, total fat and added sugar were statistically significant more announced with discount. Processed culinary ingredients presented the lowest percentage of discount (13.5%). The study confirms the position of supermarket circulars in Brazil as an obstacle to healthy eating, due to the higher incidence of processed and ultra-processed food advertisements, although no greater financial stimulus was noted for these products.

There is growing evidence that the food environment can influence diets. The present study aimed to assess the relative availability and prominence of healthy foods (HF) versus unhealthy products (UP) in supermarkets in Buenos Aires, Argentina and to explore differences by retail characteristics and neighborhood income level. We conducted store audits in 32 randomly selected food retails. Food availability (presence/absence, ratio of cumulative linear shelf length for HF vs. UP) and prominence inside the store (location visibility) were measured based on the International Network for Food and Obesity/NCDs Research, Monitoring and Action Support (INFORMAS) protocol. On average, for every 1 m of shelf length for UP, there was about 25 cm of shelf length for HF (HF/UP ratio: 0.255, SD 0.130). UP were more frequently available in high-prominence store areas (31/32 retails) than HF (9/32 retails). Shelf length ratio differed across commercial chains (p = 0.0268), but not by store size or type. Retails in the lower-income neighborhoods had a lower HF/UP ratio than those in the higher-income neighborhoods (p = 0.0329). Availability of the selected HF was overcome largely by the UP, particularly in high prominence areas, and in neighborhoods with lower income level, which may pose an opportunity for public health interventions.

Globally, increasing number of fruits and vegetables are being consumed to maintain healthy eating habits. Family farming plays a crucial role in fruits and vegetables production; products are marketed in supply chains, which are increasingly demanding, diversified, and complex. Participation of the family farms in each of these supply chains is subject to their ability to meet the increasingly strict participation criteria. In this context, this study identified the main factors that affect the participation of the family farmers in the supermarket supply chains for fresh fruits and vegetables. A systematic literature review was conducted, covering the period from 2005 to 2019. Results indicated eleven variables that affect the participation of the fruits and vegetables family farms in the supermarket supply chains. These variables were grouped in an analytical framework, which comprised four factors: characteristics of the producer, characteristics of the farm, institutional aspects, and available infrastructure. This framework is useful for the development and implementation of the public and private policies for successful participation of fruits and vegetables family farmers in supermarket supply chains.(AU)


Preocupações ambientais e a busca por uma alimentação saudável têm levado ao aumento mundial de consumo de frutas, legumes e verduras. A agricultura familiar é um segmento muito importante na produção de frutas, legumes e verduras, sendo os seus produtos comercializados em cadeias de suprimentos crescentemente mais exigentes, complexas e diversificadas. A participação de produtores familiares em cada uma destas cadeias de suprimentos está submetida a capacidade deles atenderem critérios de inserção cada vez mais estritos.As cadeias de suprimentos de frutas,legumes e verduras que abastecem os supermercados não fogem a esta situação.Neste contexto, este artigo identificou os principais fatores que condicionam a inserção dos agricultores familiares nas cadeias de suprimentos de frutas, legumes e verduras dos supermercados.Para tanto, foi realizada uma revisão sistemática da literatura num período compreendido entre 2005 e 2019. Os resultados encontrados mostraram que existem onze variáveis que condicionam a inserção da agricultura familiar em cadeias supermercadistas de frutas, legumes e verduras. Estas variáveis foram agrupadas em um framework analítico composto por quatro fatores: características do produtor e da propriedade, aspectos institucionais e infraestrutura. BACKGROUND: Occupations might influence the employees' psychophysical conditions and an important issue is the human activity mechanization, which favors a hypokinetic work status and leads to several chronic diseases. One of the most hypokinetic occupations is the supermarket cashier, in which the individual may spend many hours a day in the same body position. OBJECTIVE: The goal of this study was to evaluate the association between cardiovascular risk, quality of life and physical activity level in supermarket cashiers. METHODS: This is a cross-sectional study which included 200 supermarket cashiers aged 20 to 41 years from São Paulo, Brazil. The following cardiovascular risk factors were evaluated: overweight, obesity, hypertension, diabetes mellitus, and tobacco smoking. Physical activity level and quality of life were assessed with the short-form of the International Physical Activity Questionnaire (IPAq) and World Health Organization Quality of Life (WHOQOL), respectively. Student t test and Chi-square were carried out to evaluate mean gender comparations and frequency, respectively. Logistic regression models were applied to determine the association between cardiovascular risk factors and physical activity level. RESULTS: The prevalence for all cardiovascular risk factors was significantly high in the cashiers with a low physical activity level. However, there was a significant reduction in several risk factors in the groups with moderate and high physical activity levels. The odds ratio values were significantly reduced for the association between the cardiovascular risk factors and the moderate and high physical activity levels. The cashiers with moderate and high physical activity levels showed significantly higher quality of life scores for the social and environmental domain. CONCLUSIONS: A high physical activity level is positively related to quality of life in supermarket cashiers.

The health and wellness food sector grew 98% from 2009 to 2014 in Brazil, the world's fourth-biggest market. The trend has reached supermarket circulars, which recently started to feature whole sections advertising health and wellness-enhancing foods. This study identified food items advertised in circulars' specific sections of two Brazilian supermarket chains (one regional, one national) during a 10-week period. Foods were classified according to degree of food processing and presence/type of claims on their front-of-pack (FoP) labels. Comparison between groups of Unprocessed/Minimally Processed foods vs. Ultra-processed foods and presence/type of claims employed Pearson chi-square test. From the 434 alleged health and wellness-enhancing foods advertised, around half (51.4%) were classified as Ultra-processed. Presence of reduced and increased nutrient-content claims was significantly higher in labels of Ultra-processed foods. Most frequent claims addressed sugar and fibre content. Brazilian supermarket circulars were found to be promoting the sale of Ultra-processed foods in their health and wellness sections, leading to a situation that can mislead the consumer and bring negative health outcomes.

The objective of the present study was to evaluate the influence of the socioeconomic profile of 338 people who answered questions about knowledge, consumption, determining factors in the acquisition, frequency of consumption, place of purchase, evaluation of general aspects by the consumer and repetition of the purchase of beef packed with modified atmosphere packaging (MAP). The generalized linear model methodology, GENMOD, was used with a probit link function to test the interaction of the questions with the socioeconomic profile and for all significant variables. The risk was calculated using the odd ratios (OR) with a confidence interval of 95%. Only age and education influenced consumers' disposition regarding the questions raised in the questionnaire. Most of the people who answered the questionnaire had never consumed any product packaged with MAP, but they are very interested in trying it out. Among consumers who had already consumed some product packaged with MAP, the vast majority consumed beef. Consumers over the age of 50 showed a greater tendency to consume beef with MAP more than once a week. Appearance was the main factor for decision making during the purchase and the supermarket is the main place of purchase of the product. The vast majority of consumers liked and would buy beef packed with MAP again.(AU)


Objetivou-se avaliar a influência do perfil socioeconômico de 338 pessoas que responderam questões sobre o conhecimento, consumo, fatores determinantes na aquisição, frequência de consumo, local de aquisição, avaliação dos aspectos gerais pelo consumidor e repetição de aquisição da carne bovina embalada com embalagem com atmosfera modificada (EAM). Foi utilizada a metodologia de modelos lineares generalizados, GENMOD, com função de ligação probit para testar a interação das questões com o perfil socioeconômico e para todas as variáveis significativas foi calculado o risco por meio da odd ratios(OR) em um intervalo de confiança de 95%. Apenas a idade e a escolaridade influenciaram na disposição dos consumidores quanto às questões levantadas no questionário. A maioria das pessoas que respondeu o questionário nunca havia consumido nenhum produto embalado com EAM, porém possuem grande interesse em experimentá-lo. Dentre os consumidores que já haviam consumido algum produto embalado com EAM, a grande maioria consumiu carne bovina. Os consumidores com idades acima de 50 anos mostraram uma maior tendência a consumir carne bovina com EAM por mais de uma vez por semana. A aparência foi o principal fator para a tomada de decisão durante a compra e o supermercado é o principal local de aquisição do produto. A grande maioria dos consumidores gostou e compraria novamente a carne bovina embalada com EAM.(AU)

OBJECTIVE: To investigate relationships among food shopping venues, food environment, and body mass index (BMI). DESIGN: Cross-sectional survey data and directly assessed food environment data were linked at the neighborhood level. SETTING: Schenectady, NY. PARTICIPANTS: A sample of Guyanese, black, and white adults (n = 226, 485, and 908, respectively). MAIN OUTCOME MEASURES: BMI. ANALYSIS: Linear regression models were constructed with 10 food shopping venues and neighborhood food environment as explanatory variables, controlling for sociodemographics, dietary behavior, physical activity, and perception of healthy food access. RESULTS: On average, respondents used 3.5 different food shopping venues. Supermarkets and ethnic markets were associated with a lower BMI in Guyanese adults. Among black adults, farmers' markets were associated with a lower BMI, whereas supermarkets, wholesale clubs, and food pantries were associated with a higher BMI. Among white adults, food coops and supermarkets were associated with a lower BMI and wholesale clubs were associated with a higher BMI. Neighborhoods with less a favorable food environment (longer travel distance to a supermarket) were associated with a lower BMI in Guyanese adults. CONCLUSIONS AND IMPLICATIONS: Both primary (ie, supermarkets) and secondary food shopping venues could be independent determinants of BMI. The observed variations by race and ethnicity provided insights into a culturally tailored approach to address obesity.

As condições higienicossanitárias na comercialização de carnes nem sempre estão inseridas dentro dos padrões adequados exigidos pela legislação vigente para garantir a qualidade dos produtos e a saúde dos consumidores. Embora os supermercados sejam o principal local de comercialização deste tipo de produto no Brasil, necessita-se de mais pesquisas em relação aos aspectos sanitários. As carnes são importantes veículos de micro-organismos como Staphylococcus aureus, Salmonella spp. e Escherichia coli, de relevância como causadores de doenças alimentares. Estas enfermidades são responsáveis por uma parcela significativa da morbidade e mortalidade que acomete indivíduos. Portanto, deve haver umafiscalização intensa sobre estes produtos desde a produção até a sua distribuição ao consumidor, garantindo o fornecimento de alimento seguro e saudável à população. Devem-se levar em consideração aspectos abordados deste estudo, como a higiene do manipulador, dos equipamentos, do local de manipulação e armazenamento, pois são importantes fontes de contaminação da matéria prima que fornece aminoácidos essenciais para o ser humano. O presente artigo teve o objetivo de demonstrar como alguns desses estabelecimentos do município de Niterói/RJ vêm comercializando suas carnes, no que tange à manipulação e conservação dos alimentos, a fim de identificar possíveis riscos à saúde coletiva. The hygienic-sanitary conditions of meat marketed are not always included within the appropriate standard required by law (BRASIL, 2004) to ensure product quality and consumer health. Although supermarkets are the primary place of marketing of this type of animal products in Brazil, should be studied about the health aspects. The meats are important vehicles of Staphylococcus aureus, Salmonella spp. and Escherichia coli, of relevance to cause foodborne disease. These diseases are responsible for a significant portion of morbidity and mortality of individuals. So there must be an intense scrutiny onthese products from production to final distribution to the consumer, ensuring safe and health food of thepopulation. It should be taken into account points raised in this study, as the handler hygiene, equipment, site handling and storage because they are important sources of contamination of raw material that provides essential amino acids for the human being. This article aims to show how some of these establishments in the city of Niterói/RJ are selling their meat, when it comes to handling and storage of food stuffs in order to identify possible risks to public health. Changes in the food system are associated with the increase in consumption of foods with low nutritional value in recent decades. Data on food purchasing for household consumption, collected from the Instituto Brasileiro de Geografia e Estatística (IBGE--Brazilian Institute of Geography and Statistics) Household Budget Survey (HBS) in 2002-3, were used to describe the contribution of food purchasing sites (FPS) to the diet of Brazilian families. All the 241 distinct FPS mentioned in the HBS were grouped into ten categories, according to the nature of the products available. Food acquisitions were organized into seven groups. Supermarkets and hypermarkets accounted for 49% of the acquisitions and were the main source of six out of the seven food groups. Street markets and greengroceries stood out in the acquisitions of fruits and vegetables, accounting for 39% of this market. The large contribution of supermarkets and hypermarkets to the diet shows the need for healthy eating promotion policies aiming at these locations. Street markets and greengroceries represent important allies for healthy eating.

RESUMO

La presente investigación de tipo no experimental-correlacional, busca conocer la relación existente entre Calidad de Vida - Satisfacción y niveles de Síndrome de Burn Out en cajeros de supermercados de la ciudad de Asunción. La muestra está compuesta por cajeros de supermercado de la ciudad de Asunción, seleccionados a través de una técnica no probabilística de muestreo intencional y de participación voluntaria. Los instrumentos aplicados son el Cuestionario de Calidad de vida y Satisfacción de Endicott y el Inventario Maslach de Burn Out. El análisis y procesamiento de los datos aplicó técnicas de estadística descriptiva e inferencial. Los objetivos propuestos se alcanzaron y se sugiere el estudio de otras muestras de trabajadores tanto de ámbitos públicos como privados, sus condiciones de trabajo o variables psicológicas relacionadas a los mismos y aportar resultados importantes para desarrollar políticas de salud laboral.


This non-experimental research and correlational study, seeks to understand the relationship between quality of life - satisfaction and levels of Burn Out Syndrome in supermarket cashiers in the city of Asuncion. The sample consists of supermarket cashiers in Asuncion, selected through a probability, not intentional sampling technique, and considering voluntary participation. The applied instruments were the Quality of Life Questionnaire and Satisfaction of Endicott and the Inventory Maslach Burn Out. The analysis and data processing techniques used descriptive and inferential statistics.

OBJECTIVES: This study analyzed the effect of a standard and a modified checkout workstation during a simulated task on trunk postures of a supermarket checkout operator. METHODS: Eight participants performed a task involving grasping, scanning and depositing products, while 3D images of the trunk were collected. RESULTS: A number of kinematic changes were observed in trunk posture. A greater anterior flexion (3.0±1.2º) and lateral bending during grasping (7.1±1.4º) were found in the standard checkout workstation when compared to the modified model (p<0.05). Other variables did not show significant differences (p>0.05). DISCUSSION: The modified checkout workstation provided less lateral bending of the trunk to grasp products (8.1º ± 2.8; p<0.05), which was considered an advantage with respect to the standard model. Changes in the sagittal and transversal planes were not observed (p>0.05), irrespective of the checkout workstations (p>0.05). The modified checkout workstation successfully reduced risk of injury in some aspects, particularly the problems associated with lateral bending of the trunk. Other studies are required to test whether such potential benefits are obtained on a daily basis. CONCLUSIONS: Supermarket checkout operators may be at high risk of occupational injury due to different workstation demands. Modifications to checkout workstation design are an attractive possibility to reduce postural stress and fatigue in checkout operators. Longitudinal studies are required to test whether changes observed in the present study are sustained in the long term.


OBJETIVOS: Analisar o efeito de um modelo padrão e de um modificado de checkout durante uma tarefa simulada de um operador de caixa de supermercado. MÉTODOS: Oito participantes desempenharam uma tarefa envolvendo apanhar, ler e depositar produtos, enquanto imagens 3D do tronco foram coletadas. RESULTADOS: Um número de mudanças cinemáticas foram observadas na postura do tronco. Uma maior flexão anterior (3.0±1.2º) e uma inclinação lateral durante o apanhar (7.1±1.4º) foram encontradas no checkout padrão quando comparadas ao modelo modificado (p<0.05). Outras variáveis não apresentaram mudanças significativas (p>0.05). DISCUSSÃO: O checkout modificado causou menor inclinação lateral do tronco para apanhar produtos (8.1º ± 2.8; p<0.05), o que foi considerado como uma vantagem em relação ao modelo padrão. Mudanças nos planos sagital transverso não foram observadas (p>0.05), independente do modelo do checkout (p>0.05). O modelo modificado se mostrou eficaz paras prover reduções de risco de lesão em alguns aspectos. Especificamente, problemas associados com as inclinações laterais do tronco podem ser reduzidos quando o checkout modificado é empregado. Outros estudos são necessários para testar se tais benefícios potenciais são obtidos em uso de base diária. CONCLUSÕES: Operadores de supermercado podem ter elevado risco de lesões ocupacionais devido a diferenças nas demandas de suas estações de trabalho. Modificações no design do checkout são uma possibilidade atrativa para reduzir o estresse postural ocupacional e a fadiga em operadores de checkout. Requerem-se estudos longitudinais para testar se as mudanças encontradas no presente estudo são sustentadas em longos períodos de uso.

O consumo de alimentos de origem orgânica vem aumentando em todo o mundo. Tendo em vista alguns trabalhos terem sido realizados sobre consumidores de alimentos orgânicos em cidades do sul e sudeste do Brasil. O presente trabalho teve o objetivo conhecer o perfil do consumidor de alimentos orgânicos na cidade de Natal/RN. Para tanto, foi realizada uma pesquisa com consumidores em supermercados nas zonas Norte, Sul, Leste e Oeste da cidade, a fim de identificar o perfil e a opinião destes com relação aos alimentos orgânicos. Considerando as informações coletadas, a maioria dos entrevistados define os alimentos em questão como “sem agrotóxicos”, sendo a preocupação com a saúde a principal razão para o consumo. O desconhecimento do termo orgânico é o principal fator para a não aquisição destes alimentos.(AU)


The food consumption of organic origin is increasing all over the world. Some researches focusing it were alreadydone with. Brazilian consumers from the South and Southeast regions and the current research has got thegoal of knowing the organic consumers' profile in Natal City. So far, a research with consumers in supermarketswas made in the sections (North, South, East and West) of the city, in order to identify the organic consumers'profile and their opinion with regard to organic foods. Considering the collected information; most of theinterviewed ones defined organic foods as "without agrotoxics ", and the concern about the health is the main reason for the consumption. However, the unfamiliarity of the term "organic" is the main factor for not acquiring thiskind of food. (AU)

Embora os supermercados sejam um alvo constante de interesse de muitos consumidores, são poucos os estudos em relação aos aspectos higiênico-sanitário e físico-estrutural. O objetivo deste trabalho foi avaliar esses aspectos em dois supermercados na cidade de Sobral/CE, utilizando uma ficha de verificação, elaborada e adaptada de acordo com as RDC n.216 15/09/2004 e 275 de 21/10/2002, dividida em doze blocos. Esta foi aplicada no primeiro e último mês da pesquisa em cada um dos supermercados, sendo classificados como A e B respectivamente, para identificar os pontos críticos e eficácia do trabalho implantado.(...) Mediante os resultados, o trabalho realizado dentro dos supermercados A e B após a implantação de rotinas em todos os setores mostrou-se eficaz. As recomendações deste estudo baseiam-se em medidas a serem tomadas para assegurar a garantia da qualidade dos produtos oferecidos aos consumidores.(AU)


Although supermarkets are a constant target of interest of many consumers, there are few studies in relation to the hygienical-sanitary aspects and physicist- structural: The objective of this work was in accordance with to evaluate these aspects in two supermarkets in the town of Sobral/CE, using a fiche of verification elaborated and adapted according to the RDC nº. 216 15/09/2004 and 275 of 21/10/2002, that had been divided in twelve blocks. This one was applied in the first and last month of the research in each supermarket, being classified as B and C respectively, so it could identify to the critical points and effectiveness of the implanted work.(...) RESUMO

Este trabalho teve como objetivo avaliar a estabilidade do abacaxi pérola minimamente processado e embalado a vácuo, nas condições operacionais de uma empresa supermercadista. Os frutos passaram pelas etapas de lavagem, desinfecção (200 ppm de hipoclorito de sódio por 5 minutos) e armazenamento em câmara fria por 12 horas. Sob uma temperatura de 18°C, os frutos sofreram dois tipos de processamento após serem descascados, imersos em solução de 20 ppm de hipoclorito de sódio e serem drenados por 3 minutos: o primeiro, embalado inteiro a vácuo e o segundo, cortado em rodelas e embalado em bandejas de isopor envolvidas por filme de PVC. A intervalos de 2 dias, durante um período de 10 dias foram coletadas amostras e submetidas às análises físicas, físico-químicas, microbiológicas e teste de aceitação. Ao final do experimento, conclui-se que os abacaxis embalados a vácuo apresentaram melhor padrão de qualidade e maior vida de prateleira que os abacaxis embalados em bandejas.(AU)


This work had as objective to evaluate the stability of "pérola" pineapple with minimum process in the operationalconditions of a supermarket. The fruit had passed for the stages of laudering, sanitizing with 200 ppm sodiumhipochloride solution and stored in cold chamber for 12 hours. Under temperature of 18°C the fruits was peeled, immersed in 20 ppm sodium hipocloride solution and drained for 3 minutes, after this they were separated in two groups. The first group was vacuum-packed. The second group was sliced with sanitizeds knives before packaging in polystyrene trays and rooled with a polyvinyl chloride (PVC) film. With 2 days intervals for a period of10 days samples were collected to carrying physical, physicistchemistries, microbiological analyses and acceptation tests. The results found showed that the vacuum-packaged pineapples had best standard quality and greater shelflife that than pineapples packaged in trays. (AU)
