RESUMO

Applying edible coatings added with plant essential oils is a strategy used to delay ripening processes in climacteric fruits such as papaya. Formulations comprising 3% or 4% cassava starch (w/v), added with clove or cinnamon essential oils (2 mL/L), were tested for microbial inhibition (in vitro) purposes. Moreover, these fruits' physicochemical and microbiological aspects were assessed at 25 °C, for 12 days. Slight variations in pH and Brix values were observed during storage. On the other hand, there were no significant variations in carotenoid contents over storage time. The papaya fruits' coating contributed to reducing their weight loss from 40.66% (uncoated sample) to 24.10% on the 12th storage day, as well as delayed changes often observed during the ripening process. The 4% cassava starch coatings added with essential oils were more efficient in reducing microbiological levels. The herein proposed treatments reduced aerobic mesophilic bacteria, as well as molds and yeast counts, by 1.48 and 1.95 log CFU/g, on average, respectively, in comparison to the control sample. The assessed microorganism counts were higher in the uncoated sample than in the coated papaya fruits, after 12 days of storage. Thus, the tested coatings can potentially delay the emergence of post-harvest changes; consequently, they can help improve the quality of papaya fruits and extend their shelf life.

ABSTRACT: This research carried out a bibliometric analysis and literature review on the production of gelatin-based films for application as food packaging, addressing the main advances and limitations. The search for articles was performed in the Scopus database, and bibliometric data were obtained using the Bibliometrix tool (RStudio software). It was observed that a wide variety of compounds can be incorporated into gelatin films to overcome the limitations related to their high solubility and low mechanical properties, as well as to obtain active or smart functions. Among the most reported compounds were essential oils, pigments extracted from vegetables, and other antimicrobial agents. The most reported foods as an application matrix were meat (fish, chicken, and shrimp), milk, cheese, and minimally processed fruits. Even with promising trends, the biggest challenge for large-scale applications is to obtain easily degradable biopolymers with structural and functional stability similar to synthetic polymers. Thus, a greater focus on this theme in research may favor significant advances in the use of these packages and positively impact several of the Sustainable Development Goals, as recommended by the United Nations.


RESUMO: Este estudo objetivou realizar uma análise bibliométrica e revisão de literatura acerca da produção de filmes à base de gelatina para aplicação como embalagens alimentícias, abordando os principais avanços e limitações. A busca de artigos foi realizada na base de dados da Scopus e os dados bibliométricos obtidos pela ferramenta Bibliometrix (RStudio software). Verificou-se uma grande variedade de compostos que podem ser incorporados nos filmes de gelatina, a fim de superar suas limitações relacionadas à alta solubilidade e baixas propriedades mecânicas, bem como para obtenção de funções ativas ou inteligentes. Dentre os compostos mais reportados, têm-se: óleos essenciais, pigmentos extraídos de vegetais e outros agentes antimicrobianos. Os alimentos mais reportados como matriz de aplicação foram: carnes (peixe, frango e camarão), leite, queijo e frutas, minimamente processadas. Mesmo com tendências promissoras, o maior desafio no âmbito das aplicações reais em larga escala é a obtenção de biopolímeros facilmente degradáveis, com estabilidade estrutural e funcional similar aos polímeros sintéticos. Dessa forma, o maior enfoque dessa temática em pesquisas poderá favorecer avanços significativos para o uso dessas embalagens, impactando positivamente diversos dos Objetivos para o Desenvolvimento Sustentável, preconizados pela Organização das Nações Unidas.

The development of compostable packages that maintain fresh meat quality, is an important achievement for the poultry industry. The objective of this study was to evaluate the feasibility of using a starch-based composite foam (SCF) in the packaging of fresh chicken meat during refrigerated storage. SCF was prepared using extrusion process. Nisin (2%) was added as antimicrobial agent (SCFN). Commercial expanded polystyrene (EPS) was used as control. Physical characterization, antimicrobial analysis and storage of fresh chicken meat were carried out. No differences were observed in SEM images between SFC and SCFN samples. Water uptake of SCF were higher than SCFN (p < 0.05). SCFN exhibited higher Young´s modulus and flexural strength (p < 0.05), and antimicrobial effect against foodborne pathogens. During the storage of chicken meat, the starch-based composite foam showed a higher capacity to retain liquid than EPS. The color of chicken meat had slight variations at day 4 compared with the raw meat. Nisin did not retard lipid oxidation of chicken meat, however, the aerobic plate count was lower. Therefore, the starch-based composite foam is suitable for fresh meat storage, being improved with the incorporation of nisin as antimicrobial agent. This article focuses on agar biopolymer films that offer promise for developing biodegradable packaging, an important solution for reducing plastics pollution. At present there is a lack of data on the mechanical performance of agar biopolymer films using a simple plasticizer. This study takes a Design of Experiments approach to analyze how agar-glycerin biopolymer films perform across a range of ingredients concentrations in terms of their strength, elasticity, and ductility. Our results demonstrate that by systematically varying the quantity of agar and glycerin, tensile properties can be achieved that are comparable to agar-based materials with more complex formulations. Not only does our study significantly broaden the amount of data available on the range of mechanical performance that can be achieved with simple agar biopolymer films, but the data can also be used to guide further optimization efforts that start with a basic formulation that performs well on certain property dimensions. We also find that select formulations have similar tensile properties to thermoplastic starch (TPS), acrylonitrile butadiene styrene (ABS), and polypropylene (PP), indicating potential suitability for select packaging applications. We use our experimental dataset to train a neural network regression model that predicts the Young's modulus, ultimate tensile strength, and elongation at break of agar biopolymer films given their composition. Our findings support the development of further data-driven design and fabrication workflows.

Biodegradable packaging prepared from starch is an alternative to fossil-based plastic packaging. However, the properties of starch packaging do not comply with the necessary physicochemical properties to preserve food. Hence, in a previous study, we reported the preparation of a composite polymer material based on starch-chitosan-pluronic F127 that was found to be an adequate alternative packaging material. In this study, we modified the physicochemical properties of this material by storing it for 16 months under ambient conditions. The results indicate that the incorporation of pluronic F127 in the blend polymer can help avoid the retrogradation of starch. Moreover, at higher concentrations of pluronic F127, wettability is reduced. Finally, after storage, the materials exhibited surface modification, which is related to a color change and an increase in solubility, as well as a slight increase in stiffness.

The present study evaluated the effect of the incorporation of copaiba oil, in direct and in microencapsulated form, into films based on Xanthosoma mafaffa Schott starch. Initially, the characterization of copaiba oil by gas chromatograph coupled with mass spectrometry (GC-MS) and its antimicrobial activity against gram-positive and gram-negative bacteria was performed. The films were produced by the casting technique and characterized in relation to physical, chemical, structural, and antimicrobial activity. Sesquiterpenes, mainly ß-caryophyllene, were the predominant compounds in copaiba oil, showing antimicrobial activity against B. subtilis and S. aureus. The films showed forming capacity, however, was observed a decrease in solubility and revealed an increase in hydrophobic characteristics. However, the oil reduced the tensile strength and elongation, while the microcapsules did not influence the mechanical properties in comparison to the control film. From microstructure analysis, changes in the films roughness and surface were observed after the addition of oil both directly and in microencapsulated form. Films incorporated with microparticles were able to inhibit the gram-positive bacteria tested, forming inhibition zones, indicating that the encapsulation of copaiba oil was more efficient for protecting bioactive compounds from the oil, suggesting the possible application of mangarito starch-based films incorporated with copaiba oil as biodegradable packaging.

Interest in nanocellulose obtained from natural resources has grown, mainly due to the characteristics that these materials provide when incorporated in biodegradable films as an alternative for the improvement of the properties of nanocomposites. The main purpose of this work was to investigate the effect of the incorporation of nanocellulose obtained from different fibers (corncob, corn husk, coconut shell, and wheat bran) into the chitosan/glycerol films. The nanocellulose were obtained through acid hydrolysis. The properties of the different nanobiocomposites were comparatively evaluated, including their barrier and mechanical properties. The nanocrystals obtained for coconut shell (CS), corn husk (CH), and corncob (CC) presented a length / diameter ratio of 40.18, 40.86, and 32.19, respectively. Wheat bran (WB) was not considered an interesting source of nanocrystals, which may be justified due to the low percentage of cellulose. Significant differences were observed in the properties of the films studied. The water activity varied from 0.601 (WB Film) to 0.658 (CH Film) and the moisture content from 15.13 (CS Film) to 20.86 (WB Film). The highest values for tensile strength were presented for CC (11.43 MPa) and CS (11.38 MPa) films, and this propriety was significantly increased by nanocellulose addition. The results showed that the source of the nanocrystal determined the properties of the chitosan/glycerol films.

Zein oleic acid films added with 1, 2 and 3 % (w/w) of nanocarbonate and 30 % glycerol as plasticizer, were produced and evaluated according to their structure and functional properties. Structural characteristics were analyzed by optical and scanning electron microscopy (SEM). Water solubility and mechanical properties were determined according to ASTM methods. The increase of nanocarbonate concentration increased water solubility and influenced the color and mechanical properties. Filmes a base de zeína e ácido oleico adicionados com 1, 2 e 3 % de nanocarbonato e 30 % de glicerol como plasticizante foram produzidos e avaliados quanto sua estrutura e propriedades funcionais. Caracteristicas estruturais foram analisadas por meio de microscopia ótica (MO) e eletrônica de varredura (MEV) e solubilidade em água e propriedades mecânicas segundo métodos da ASTM. O aumento na concentração de nanocarbonato, aumentou a solubilidade em água e influenciou na cor e propriedades mecânicas. As análises de MO e MEV do filme adicionado com nanocarbonato mostraram pouca presença de poros e glóbulos de gordura de maior tamanho quando comparado com o filme controle.(AU)

This work presents a bibliography review about biodegradable starch films characterization and potential of utilization. Discusses the starch films mechanical and barrier properties, the cristallinity and the effects of the use of plasticizers over these properties. The discussed informations indicate that exist great possibilities for these materials in food packaging, which depend on the production of more stable materials and the development of production technology in industrial scale.

Dentre os biopolímeros mais promissores para este fim estão os amidos de diversas fontes botânicas, que são biodegradáveis, têm custo baixo e estão disponíveis em todo o mundo. Diante disto, este trabalho apresenta uma revisão bibliográfica sobre a caracterização e o potencial de utilização de filmes biodegradáveis a base de amido. Discute as propriedades mecânicas, de barreira e a cristalinidade dos filmes de amido e o efeito do uso de plastificantes sobre estas propriedades. As informações disponibilizadas mostram que existem grandes possibilidades de utilização destes materiais como embalagens de alimentos que, no entanto, dependem da produção de materiais mais estáveis às condições de armazenamento e do desenvolvimento de tecnologia de produção em escala industrial.
