The aim of this study was to examine the effects of frozen storage for 12 mo on the concentrations of lipids and cholesterol and fatty acid profile of wooden chicken breast meat. A total of 120 samples of chicken breasts were selected, according to the degree of "wooden breast" myopathy ["severe," "moderate," and "normal" (absence of myopathy)], from male chickens slaughtered at 42 d of age, from Cobb 500 strain. Part of the samples (n = 20/grade of severity) were evaluated on the day of collection and the remainder were packaged, frozen and stored at -18°C for up to 12 mo. At the beginning (collection day) and at the end of the proposed freezing period (12 mo), analyses of lipid, cholesterol, and fatty acid profile were carried out. Percentage of saturated (SFA), monounsaturated (MUFA), and polyunsaturated (PUFA) fatty acids were evaluated. Meats affected by wooden breast myopathy had lower levels of PUFA that exert beneficial effects on health, such as DHA, EPA and ARA, and this profile is impaired by prolonged storage (12 mo), which results in important nutritional losses for the consumer.

The objective of the present study was to characterize possible variations in the quality of wooden chicken breast meat during freezing for 12 mo, in order to prove whether the shelf life recommended by the industry allows the storage of that type of meat without compromising its consumption. Three hundred samples of male Cobb 500 broilers slaughtered at 42 d of age were used. Part of the samples (n = 20 normal-control group; n = 20 moderate degree; n = 20 severe degree) were analyzed on the day of collection (beginning), previously kept under refrigeration (4°C). The other samples were stored (-18°C) for up to 12 mo. At the end of each proposed freezing period (3, 6, 9, and 12 mo), physical and chemical analyses were performed (per period: n = 20 normal-control group; n = 20 moderate degree; n = 20 severe degree). Color (L*, a*, and b*), pH, water-holding capacity, cooking losses, tenderness, lipid oxidation, chemical composition, cholesterol concentration, mineral profile, and collagen concentration were evaluated. The physicochemical quality of wooden chicken breast meat is significantly altered during frozen storage for 12 mo, being of inferior quality when compared to normal chicken breast meat, which can negatively affect consumer acceptance. However, it should be noted that even after 12 mo of freezing, the meats did not show oxidative rancidity.

Introduction: Introduction: an increase in the consumption of processed and ultra-processed foods may predispose to metabolic abnormalities. Objective: to verify the association of food consumption with metabolic phenotype in workers from a quaternary hospital in Rio de Janeiro, Brazil. Methods: workers of both sexes aged > 18 years were eligible. A food frequency questionnaire and the NOVA classification were used in the food consumption analysis. Metabolic phenotype considered the presence of at least one metabolic alteration (blood glucose, serum lipids, and blood pressure) combined with BMI (eutrophic or excess weight) as follows: 1) metabolically healthy eutrophic (MHE); 2) metabolically unhealthy eutrophic (MUE); 3) metabolically healthy excess weight (MHEW); 4) metabolically unhealthy excess weight (MUEW). Results: from the included 160 participants (mean age, 45.2 ± 1.1 years; 59.4 %, women), 21.9 % self-reported arterial hypertension and 4.4 % diabetes. Most presented excess weight (74.6 %), with approximately 40 % being obese. The MUEW phenotype had higher body fat percentage and central adiposity represented by higher WC and VFA in comparison to the other phenotypes. The lean body mass was similar between the groups. The median of ultra-processed foods was 32.4 % for eutrophic, 32.7 % for overweight, and 34.3 % for obese subjects. No significant associations were observed between ultra-processed food consumption and metabolically unhealthy eutrophic (OR: 1.01; 95 % CI: 0.96-1.06), metabolically healthy excess weight (OR: 1.03; 95 % CI: 0.98-1.08), and metabolically unhealthy excess weight (OR: 1.00; 95 % CI: 0.96-1.05) in comparison to metabolically healthy eutrophic. Conclusion: consumption of ultra-processed food was high. In this cross-sectional analysis, no association of metabolic phenotypes with consumption of food groups according to degree of food processing were observed.


Introducción: Introducción: el incremento del consumo de alimentos procesados y ultraprocesados puede predisponer a alteraciones metabólicas. Objetivo: verificar la asociación del consumo de alimentos con el fenotipo metabólico en trabajadores de un hospital cuaternario de Rio de Janeiro, Brasil. Métodos: fueron elegibles trabajadores de ambos sexos de edad > 18 años. El cuestionario de frecuencia de alimentos y la clasificación NOVA se utilizaron en el análisis del consumo de alimentos. El fenotipo metabólico consideró la presencia de al menos una alteración metabólica (glucemia, lípidos séricos y presión arterial) combinada con el IMC (eutrófico o exceso de peso) de la siguiente manera: 1) eutrófico metabólicamente saludable (EHM); 2) eutróficos metabólicamente no saludables (MUE); 3) exceso de peso metabólicamente saludable (MHEW); 4) exceso de peso metabólicamente no saludable (MUEW). Resultados: de los 160 participantes incluidos (edad media: 45,2 ± 1,1 años, 59,5 % de mujeres), el 21,9 % refirieron hipertensión arterial y el 4,4 % diabetes. La mayoría presentaron exceso de peso (74,6 %), siendo aproximadamente un 40 % obesos. El fenotipo MUEW presentó mayor porcentaje de grasa corporal y adiposidad central representada por mayor CC y VFA en comparación con los otros fenotipos. La masa corporal magra fue similar entre los grupos. La mediana de alimentos ultraprocesados fue de 32,4 % para los eutróficos, 32,7 % para el sobrepeso y 34,3 % para los obesos. No se observaron asociaciones significativas entre el consumo de ultraprocesados y el fenotipo eutrófico metabólicamente no saludable (OR: 1,01; IC 95 %: 0,96-1,06), exceso de peso metabólicamente saludable (OR: 1,03; IC 95 %: 0,98-1,08) y exceso de peso metabólicamente no saludable (OR: 1,00; IC 95 %: 0,96-1,05) en comparación con los eutróficos metabólicamente sanos. Conclusión: el consumo de alimentos ultraprocesados fue elevado. En este análisis transversal, no se observó asociación de fenotipos metabólicos y consumo de grupos de alimentos según el grado de procesamiento de los alimentos.

The aim of this study was to evaluate possible changes in the quality of chicken breast meat containing white stripes during freezing for 12 mo. Samples of Pectoralis major muscle from male Cobb 500 broilers containing white stripes in moderate and severe degrees were used, as well as samples from a control group (normal - absence of myopathies). Part of the samples (n = 60; n = 20 for each severity degree) were analyzed on the day of collection (beginning) and the rest (n = 240) was frozen (-20°C) for up to 12 mo. At the end of each proposed freezing period (3, 6, 9, and 12 mo), color, pH, water holding capacity, cooking loss, tenderness, lipid oxidation, chemical composition, cholesterol and collagen concentrations, myofibrillary fragmentation, and sarcomere length were analyzed. Microbiological analysis of samples was performed at the beginning and after 12 mo of freezing. Myopathy linked to freezing showed results of increased meat tenderness, with reduction of crude protein and mineral matter and increase of moisture, fat, and cholesterol, without affecting the meat's collagen percentages. However, these variations with the onset of myopathy do not compromise the consumption of broiled chicken breast meat, kept frozen for up to 12 mo.

Introdução: O transplante de fígado (TxF) é o procedimento padrão recomendado para pacientes com doença hepática terminal. Muitos, enquanto aguardam o TxF apresentam como deterioração funcional a diminuição da força muscular respiratória, força de preensão palmar e capacidade funcional. O objetivo deste estudo foi correlacionar a capacidade funcional, força muscular respiratória e força de preensão palmar em candidatos a transplante de fígado. Métodos: Trata-se de um estudo observacional, prospectivo, quantitativo. Participaram do estudo pacientes candidatos ao TxF que estavam em tratamento na unidade de transplante de fígado em um hospital de referência no noroeste paulista. Os pacientes foram avaliados por meio de: teste de caminhada de seis minutos, manovacuometria e dinamometria. Para análise dos dados foi utilizado o teste de correlação linear de Pearson. Valores de p ≤ 0,05 foram considerados significantes. Resultados: Foram avaliados 38 pacientes cirróticos no pré-operatório de TxF. A média de idade dos pacientes foi de 54,34 ± 8,18 anos, com predominância do gênero masculino (68%), a média do MELD e do IMC foram de 20,84 ± 6,26 pontos e 27,75 ± 5,0 kg/m2, respectivamente. Na força muscular respiratória verificou-se que os pacientes apresentaram média de pressão inspiratória máxima (PImáx) 75,89% e pressão expiratória máxima (PEmáx) 76,82% do predito. Nas análises de correlações entre as variáveis do estudo verificou-se correlação diretamente proporcional, significativa (p ≤ 0,0001) e forte entre preensão manual vs força muscular respiratória, moderada entre preensão manual vs capacidade funcional e moderada entre força muscular respiratória vs capacidade funcional. Conclusão: Os pacientes candidatos a TxF apresentaram correlação positiva entre capacidade funcional, força muscular respiratória e força de preensão palmar. Alterações na força muscular respiratória e de preensão palmar se correlacionaram a redução na capacidade funcional nestes pacientes.


Introduction: Liver transplantation (TxF) is the standard procedure recommended for patients with terminal liver disease. Many, while waiting for the TxF present as functional deterioration the decrease in respiratory muscle strength, hand grip strength, and functional capacity. The aim of this study was correlate functional capacity, respiratory muscle strength, and hand grip strength in liver transplant candidates. Methods: This is an observational, prospective, quantitative study. Candidates for TxF who were being treated at the liver transplant unit in a referral hospital in northwest São Paulo participated in the study. The patients were evaluated using: six- minute walk test, manovacuometry, and dynamometry. Pearson's linear correlation test was used for data analysis. Values of p ≤ 0.05 were considered significant. Results: A total of 38 cirrhotic patients were evaluated in the preoperative period of TxF. The mean age of the patients was 54.34 ± 8.18 years, with a predominance of males (68%), the mean MELD and BMI were 20.84 ± 6.26 points and 27.75 ± 5.0 kg/m2, respectively. Regarding respiratory muscle strength, it was found that patients had a mean maximum inspiratory pressure (PImax) 75.89% and maximum expiratory pressure (PEmax) 76.82% of the predicted. In the analysis of correlations between the study variables, there was a directly proportional, significant (p ≤ 0.0001) and strong correlation between hand grip vs respiratory muscle strength, moderate between hand grip vs functional capacity and moderate between respiratory muscle strength vs functional capacity. Conclusion: Candidate patients for TxF showed a positive correlation between functional capacity, respiratory muscle strength, and hand grip strength. Changes in respiratory muscle strength and hand grip was correlated with the reduction in functional capacity in these patients.

Our hypothesis is that crambe meal can totally substitute soybean meal and crude glycerin can partially replace the corn in the diet without leading to losses of nutrient intake and productive performance. Two assays were performed using heifers and steers. In the first assay, 24 Beefalo-Nellore heifers with 18 months old with 311.5 ± 5.5 kg, and in the second assay, 24 Beefalo-Nellore steers with 18 months old with 317.0 ± 6.4 kg were evaluated. The experiment was carried out in a randomized complete design, in a 2 × 2 factorial scheme, consisting of two energy sources (corn and crude glycerin) and two protein sources (soybean meal and crambe meal). Both assays had 104 experimental days of feedlot. There was no interaction between the variation sources. There was an effect of protein source on nutrient intake for heifers except to neutral detergent fiber intake, which presented effect of energy source. Heifers fed soybean meal showed higher results for total weight gain and daily weight gain. There was observed effect of energy source on rib eye area and subcutaneous fat thickness. Steers fed soybean meal showed higher neutral detergent fiber intake and non-fibrous carbohydrates. Steers fed corn + crude glycerin showed higher results for total weight gain and daily weight gain. The steers fed soybean meal showed higher averages for subcutaneous fat thickness. Crambe meal and crude glycerin can be used as alternative sources of energy and protein to replace 100% of soybean and 50% of corn, respectively, for finishing Beefalo-Nellore cattle in a feedlot.

INTRODUCTION: Crohn's disease (CD) is an inflammatory bowel disease (IBD) that affects the gastrointestinal tract and can have a major impact on the patient's quality of life and social/professional activities. Asymptomatic patients, or those with mild symptoms, experience the active disease with subclinical manifestation. Systematic review (SR) was performed to look for evidence for the role of chemokines and adipokines as markers for CD activity. METHODS: This SR was conducted by searching published studies in international and regional databases up till July, 2020. CD patients were adults with the disease in activity or remission. All adipokines and chemokines were considered for the analysis and the Rayyan QCRI system was used. RESULTS: In total, 20 studies were included. Six addressed chemokines and eight adipokines as potential biomarkers of CD activity. CXCL8 was the most studied chemokine (8 studies) and the results were controversial, with 62.5% showing a significant association with CD activity. CXCL10 was investigated by 4 studies and 50% identified it as a potential biomarker. CCL2, CCL11, CCL26 and CXCL1 were examined by 2 articles each. CXCL8 (P=0.002/P=0.001) and CXCL1 (P<0.001) presented the lowest? P value, which qualifies them as potential markers of disease activity. All the adipokines were tested in peripheral blood but 44.4% were also tested in intestinal mucosa, while the percentage in the chemokines' studies was 76.9% in peripheral blood, 46.1% in intestinal mucosa and 7.6% in urine sample respectively. CONCLUSION: The development of disease activity biomarkers for CD is becoming relevant for clinical practice. Chemokines and adipokines have the potential to signalize CD activity, but validation in larger cohorts of patients, preferable multicenter studies are still needed.

KEY MESSAGE: NADP-ME2 from Arabidopsis thaliana exhibits a distinctive and complex regulation by fumarate, acting as an activator or an inhibitor according to substrate and effector concentrations. In this work, we used molecular modeling approach and site-directed mutagenesis to characterized the NADP-ME2 structural determinants necessary for allosteric regulation providing new insights for enzyme optimization. Structure-function studies contribute to deciphering how small modifications in the primary structure could introduce desirable characteristics into enzymes without affecting its overall functioning. Malic enzymes (ME) are ubiquitous and responsible for a wide variety of functions. The availability of a high number of ME crystal structures from different species facilitates comparisons between sequence and structure. Specifically, the structural determinants necessary for fumarate allosteric regulation of ME has been of particular interest. NADP-ME2 from Arabidopsis thaliana exhibits a distinctive and complex regulation by fumarate, acting as an activator or an inhibitor according to substrate and effector concentrations. However, the 3D structure for this enzyme is not yet reported. In this work, we characterized the NADP-ME2 allosteric site by structural modeling, molecular docking, normal mode analysis and mutagenesis. The regulatory site model and its docking analysis suggested that other C4 acids including malate, NADP-ME2 substrate, could also fit into fumarate's pocket. Besides, a non-conserved cluster of hydrophobic residues in the second sphere of the allosteric site was identified. The substitution of one of those residues, L62, by a less flexible residue as tryptophan, resulted in a complete loss of fumarate activation and a reduction of substrate affinities for the active site. In addition, normal mode analysis indicated that conformational changes leading to the activation could originate in the region surrounding L62, extending through the allosteric site till the active site. Finally, the results in this work contribute to the understanding of structural determinants necessary for allosteric regulation providing new insights for enzyme optimization.

This study aimed to evaluate the effects of aging on the quality of breast meat from broilers affected of wooden breast. Samples that were classified as normal (control), moderate (hardness verified only in one region of breast fillet), and severe (hardness verified in all the extension of breast fillet) were evaluated fresh and after three and seven days of aging. Normal samples and samples with a moderate degree of myopathy showed greater water-holding capacity, which may benefit the processing industry of poultry meat. During the aging process, increase was observed in total collagen concentration (from 0.41% in normal samples to 0.56% in samples with severe degree). Samples of chicken breast affected by moderate degree showed higher myofibril fragmentation index (MFI = 115) than normal chicken samples (95.65). Although chicken samples affected with severe degree of wooden breast myopathy are more tender than normal chicken breasts, they produce more exudate, which can be detrimental to the processing of poultry meat. The aging process may improve the reduction of cooking weight loss and protein loss in exudation of broilers' breasts affected by wooden breast myopathy.

Deep pectoral myopathy (DPM) considerably affects the meat quality of commercial poultry, thus representing a challenge to the poultry industry. In this study, we examined the breast meat quality of turkey breeder hens at disposal age affected by different degrees of DPM. Samples were collected from Nicholas turkeys at disposal age (385 d), at an average weight of 12.5 kg, which were reared and slaughtered in the south region of Brazil. The breast was first classified according to the degree of DPM and then samples of the Pectoralis major were collected from birds affected (DPM degrees 2 and 3; n = 20 of each) and nonaffected (normal, absence of lesions; n = 20) by the myopathy. After the affected Pectoralis minor muscle was discarded, the carcasses were released for human consumption by the Federal Inspection Service. The meat affected by the myopathy exhibited color changes (L*, a* and b*) (P < 0.05), especially in the inner surface. Higher (P < 0.05) water-holding capacity, pH, sarcomere length and fat concentration and lower (P < 0.05) shear force and moisture percentage were observed when compared to the normal samples. From this study, can be concluded that the severe condition of deep pectoral myopathy which affects the Pectoralis minor muscle, causes variations in the quality of Pectoralis major muscle of turkey on disposal age. As a raw material, this type of meat has a higher fat content and greater capacity for retaining intracellular water, important attributes to the manufacture of processed products. In this way, the processing is an economically viable alternative to the commercialization of breast meat from birds affected by myopathy.

We hypothesized that by-products from biodiesel production like crambe meal (Crambe abyssinica) totally replace soybean meal (Glycine max) and crude glycerin could partially replace corn (Zea mays). Our aim was to evaluate different supplements with combinations of crambe meal and crude glycerin replacing soybean meal or corn on performance and carcass traits of finishing heifers. Sixty Nellore heifers 18 months old were used, and 298.96 ± 21.99 kg of body weight allotted in Brachiaria brizantha pastures. All heifers were distributed in a randomized complete block design, with four treatments being the following supplements: corn + soybean meal (CS), corn + crambe meal (CCr), corn + soybean meal + crude glycerin (CSG), corn + crambe meal + crude glycerin + (CCrG). The animals were distributed in four paddocks of 13 hectares each, in a continuous grazing system. We evaluated pasture characteristics, intake, performance, carcass traits, characteristics, and centesimal composition of Longissimus thoracis muscle. There was an effect (P < 0.05) of inclusion of crambe meal on the performance of the animals for slaughter weight and daily gain. The supplement containing corn + soybean meal (CS) presented better conversion rates and food efficiency. There was an effect of inclusion of crambe meal and crude glycerin on the centesimal composition of Longissimus thoracis muscle. The use of crambe meal and crude glycerin as alternative sources from the agro-industry of biodiesel in concentrate supplement for finishing heifers in pastures can promote positive effects related to productive performance and carcass characteristics.

The aim of this study was to characterize the breast meat of turkeys affected by different degrees of severity (normal [NORM], moderate [MOD], and severe [SEV]) of the white striping (WS) myopathy, as well as to evaluate the influence of this myopathy on meat quality. Twenty-nine samples of the pectoralis major muscles of each treatment were obtained from Nicholas breed male and female turkeys, reared and slaughtered in the center-west region of Brazil. The whole breasts of the turkeys were used for macroscopic classification, weight evaluation, and morphometric measurements. Then, the pectoralis major muscle was separated for histological evaluation and qualitative physicochemical analyses, namely ventral and dorsal color (L∗, a∗, and b∗), pH value, water holding capacity (WHC), cooking loss (CL), shear force (SF) (Meullenet-Owens Razor Shear [MORS] and Warner-Bratzler), sarcomere length, total, soluble, and insoluble collagen contents, proximate composition (protein, lipids, moisture, and ash), cholesterol content, and fatty acid profile. The results showed that muscles affected by myopathy, both MOD and SEV, exhibited larger weights (around 2.8 kg) compared to NORM muscles (1.3 kg) and a significant increase (P < 0.05) in the diameter of the fibers. The increase in the degree of severity of the myopathy increased (P < 0.05) the value of L∗ of the dorsal part and ventral part of the muscle. No differences (P > 0.05) were observed in the pH, CL, and WHC values of the muscles, whereas the MORS and Warner-Bratzler SF of the SEV fillets resulted in significantly lower shear values (P < 0.05) compared to the NORM fillets. In addition, the MOD and SEV fillets presented lower values of protein (P < 0.05) than NORM fillets. No significant differences (P > 0.05) were observed for moisture and lipid and cholesterol contents. Meat with MOD and SEV severity of WS myopathy had higher (P < 0.05) concentrations of total and insoluble collagen. Thus, the presence of WS myopathy in MOD and SEV degrees affected a large part of the histological and quality characteristics evaluated.

The aim of this study was to examine the effects of storage on the quality of sausages made with breast from chickens affected by wooden breast myopathy (WBM). Breast samples from male broilers slaughtered at 48 days old were used. Normal (absence of myopathy), moderate degree (hardness only in one region of the breast) and severe degree samples (hardness over the entire length of the breast) were processed into sausages and evaluated prior to storage and after being vacuum-packed and stored for 7, 14, 21 and 28 days at 4 °C. There was a decrease (p < 0.001) in pH and an increase (p < 0.001) in cooking weight loss in samples of sausages, regardless of the myopathy, after 28 days of storage. Sausages produced with chicken breast samples affected by wooden breast myopathy presented higher (p < 0.0001) moisture concentration (72% for the severe degree) and higher (p = 0.0224) protein concentration (17.27% and 17.36%, respectively, for the moderate and severe degrees) than sausages made of normal samples (70.72% and 14.32%, respectively). The results indicate that sausages produced with meat from birds moderately and severely affected by the myopathy show higher oxidative stability. Fresh sausages produced with breast meat from birds affected by wooden breast syndrome may be stored (4 °C) for up to 28 days without exhibiting the characteristic rancid taste and smell. In sensory analysis, no differences were observed between the formulations, which suggests that the consumers approved the samples regardless of the disease severity in the meat used for the making of the sausages. The current results show that chicken meat affected by wooden breast myopathy can be used for producing fresh sausages in the industry.

This study aimed to characterize the effects of wooden breast myopathy (WBM) on quality of broiler chicken breast meat. Normal samples (absence of myopathy), moderate-degree samples (hardness only in one area of the breast fillet) and severe-degree samples (hardness throughout the breast fillet) were classified. In macroscopic analysis, the pectoral muscle affected by the WBM showed, in general, pale color with stiff, irregular and reddish regions (suffusions and petechiae), with the presence of white striations. In microscopic analysis, the myopathy was characterized by loss of the polygonal aspect of the muscle fibers. Samples with moderate degree of the myopathy showed greater (p = 0.0266) water retention capacity. There was an increase (p = 0.004) in total collagen concentration in samples from the severe-degree group 0.29% in normal samples to 0.43 and 0.48% in samples from moderate- and severe-degree groups, respectively. Samples of chicken breast affected by the severe-degree WBM showed lower (p < 0.0001) myofibrillar fragmentation index (64.51) and lower (p = 0.0002) fat concentration (2.17%) than normal chicken samples (80.45 and 3.79%, respectively). Samples affected by WBM are larger and heavier and present poorer physical quality when compared to normal chicken meat. Histologically it is possible to observe loss of the polygonal aspect of muscle fibers.

The aim of this is study was to test the hypothesis that corn can be partially replaced by crude glycerin (at a level of 50%) without affecting performance, ingestive behavior, ruminal parameters, meat composition, and fatty acids profile on the meat of heifers. Sixty-four intact plus four rumen cannulated Angus × Nellore heifers (359.0 ± 12.15 kg BW) were used. The cannulated animals received the same diets as the intact ones to determine the ruminal N-NH3 concentration, pH, and chewing activity weekly. All heifers were maintained in Brachiaria brizantha pasture and supplemented with a concentrate containing corn, soybean meal, urea, premixed minerals, and glycerin partially replacing corn. A completely randomized experimental design was used, with two treatments (corn ground or glycerin + corn ground). The inclusion of crude glycerin (high fat) decreased nutrients intake and ruminal N-NH3 concentration in the rumen but increased lipid intake. Inclusion of glycerin had no effect (P > 0.05) on ruminal pH, daily gain, performance, time spent eating, rumination, idling, or water intake. The moisture, ash, and protein contents of meat were not affected (P > 0.05) by crude glycerin intake. Crude glycerin increased saturated fatty acids (C14:0, C16:0, and C18:0) and decreased unsaturated fatty acids (C18:2n6c and C20:1) in meat. Despite the reduction in nutrient intake, we recommend crude glycerin to replace corn in concentrate because glycerin did not impair the performance, meat composition, and ruminal pH. Therefore, crude glycerin is a by-product that can partially replace corn in diets efficiently.

BACKGROUND: Crohn's disease (CD) is an inflammatory bowel disease (IBD) that can affect the entire gastrointestinal tract and can have a major impact on the patient's quality of life. Asymptomatic patients, or those with mild symptoms, experience the active disease with subclinical manifestation. A systematic review (SR) was performed to look for evidence for the role of chemokines and adipokines as markers for CD activity. METHODS: This SR was conducted by searching published studies in international and regional databases up to July 2020. CD patients were adults with the disease in activity or remission. All adipokines and chemokines were considered for the analysis and the Rayyan QCRI system was used. The selection of articles published in the Rayyan system was carried out by two reviewers, autonomously and independently, and a third reviewer was responsible for analysing and deciding on the inclusion or exclusion of the article, especially in relation to those who presented a contradictory and conflicting decision. The search for articles was carried out in the databases PUBMED, PUBMED PM C, BVSBIREME, SCOPUS, WEB OF SCIENCE, EMBASE, COCHRANE, EBSCOHOST, PROQUEST and ENDNOTE WEB. The keywords "Crohn's disease", "chemokines", "adipokines", "biomarkers" and "inflammation" were chosen after reading material related to the researched topic. To expand and guide the search, an association of the descriptors was carried out by means of Boolean operators "OR" and "AND". The Boolean operators "OR" and "AND" were used to add or restrict the search, as follows: "Crohn Disease AND Biomarkers AND (Chemokines OR Adipokines) AND Inflammation". Only studies with human samples were considered. RESULTS: In total, 20 studies were included from 344 which were found in the databases. Six addressed chemokines and eight adipokines as potential biomarkers of CD activity. CXCL8 was the most studied chemokine (8 studies) and the results were controversial, with 62.5% showing a significant association with CD activity. CXCL10 was investigated by 4 studies and 50% identified it as a potential biomarker. CCL2, CCL11, CCL26 and CXCL1 were examined by 2 articles each. CXCL8 (P=0.002/P=0.001) and CXCL1 (P < 0.001) presented the lowest P value, which qualifies them as potential markers of disease activity. All the adipokines were tested in peripheral blood but 44.4% were also tested in intestinal mucosa, while the percentage in the chemokines' studies was 76.9% in peripheral blood, 46.1% in intestinal mucosa and 7.6% in urine sample respectively. CONCLUSION: Despite the limitations and the small number of studies found in the literature that followed the criteria of this SR, some chemokines (CCL2, CCL20, CXCL1, CXCL3, CXCL8, CXCL10 and CXCL1) and adipokines (leptin, IL-6 and TNF-α) have unveiled promising results that may enable us to distinguish active versus in remission forms of CD based on objective criteria of inflammation such as endoscopic, histologic or radiological criteria. The development of disease activity biomarkers for CD is becoming relevant for clinical practice, and chemokines and adipokines have the potential to signalize CD activity. However, validation in larger cohorts of patients, preferable multicenter studies are still needed.

Considering the increased incidence of wooden breast myopathy in broilers, the intake involves no threat to human health, indefinite etiology consumer rejection by appearance in such breasts, and the lack of studies on the industrial use of wooden breast. The objective of this study was evaluating the quality of hamburgers made with chicken meat affected by wooden breast. Breast samples from broilers slaughtered at 48-days-old were used. Normal (absence of myopathy), moderate degree (hardness only in one region of the breast) and severe degree (hardness over the entire length of the breast) samples were processed for the manufacture of hamburgers whose quality analyses (color, pH, cooking weight loss, shrinkage percentage, tenderness, storage weight loss, water activity, lipid oxidation, chemical composition and consumer test) were performed on non-stored samples (Day 0), and after storing at 30, 60, 90 and 120 days at -20 °C. There was a reduction (p < 0.05) in tenderness in samples of moderate-grade hamburgers (from 161.45 N to 289.40 N) after 120 days of storage. Hamburgers produced with chicken breast samples affected by wooden breast myopathy presented higher (p < 0.0001) fat concentration (5.32 g/100 g and 5.26 g/100 g, respectively, for the moderate and severe degree) than hamburgers made of normal samples (4.45 g/100 g). Lipid oxidation values increased, which exceeded the limit of rancidity detection, independent of myopathy. The consumers equally appreciated the aroma, flavor, and texture, and rated their overall acceptance as similar regardless of the quality of chicken meat. Chicken breast hamburgers with wooden breast myopathy is a viable alternative for the poultry industry.
