Background: Biobanks process, store, and supply biological materials for research. Preanalytical factors, especially storage time and temperature, must be controlled and standardized at all stages when handling biospecimen samples, especially because the literature reports highly contradictory optimal parameters. As large-sample studies are required to better understand the influence of time and temperature on cryopreserved samples' quality for genomic research, this study evaluated the integrity and quality of cryopreserved samples stored for up to 9 years at the biobank of Barretos Cancer Hospital, one of the largest biobanks in Latin America. Methods: We randomly selected 447 samples with tumor tissue paired with buffy coat or peripheral blood mononuclear cells (PBMCs) that were stored from 2008 to 2016. The genetic material quality was evaluated based on RNA integrity (RIN) and DNA integrity (DIN) ≥7, which indicated undegraded samples, and compared with storage time, which means that for DNA storage time, samples <8.1 and ≥8.1 years and for RNA <4.5 and ≥4.5 were used. Results: A total of 190 tumor tissues were eligible for DNA and RNA extraction. Those stored for 8 years had lower DIN (68%) than those stored for a shorter period (92%). A similar pattern, based on storage time (<8.1 and ≥8.1 years), was observed in the buffy coat (74% and 95%, respectively) and PBMCs (54% and 96%, respectively). For RNA extracted from tumor tissues, we observed lower RIN in samples stored for 4.5 years (17%) than in samples stored for a shorter period (45%). Buffy coat and PBMC samples stored at -30°C exhibited greater degradation (26%) than those stored at -80°C (1%). The DIN (p = 0.15) and RNA (p = 0.18) were unrelated to topography type. Conclusion: The temperature, particularly cryopreservation methodology, and storage time were the main factors that affected nucleic acid integrity, especially RNA, during cryopreservation of biospecimens.

This study was conducted in order to determine the effects of different doses of resveratrol and curcumin added to the diet of broilers on the fatty acid profile of drumstick meat, and the microbial load and physicochemical criteria in drumstick and breast meat. In the study, a total of 200 male broiler chicks at the age of one days were equally distributed into five groups. The treatments consisted of a basal diet (Control) and the treatments, which added the following amounts of additives to the basal control diet: (R250) 250 mg kg-1 resveratrol, (R500) 500 mg kg-1 resveratrol, (C250) 250 mg kg-1 curcumin, and (C500) 500 mg kg-1 curcumin. It was found that resveratrol and curcumin significantly decreased the counts of total mesophilic aerobic bacteria (TMAB) (8th day), Lactobacillus spp. (6th day) and Lactococcus spp. (8th day) in drumstick meat. In breast meat, decreases were observed in the counts of Micrococcus/Staphylococcus (4th day) in the C500 group, and Enterobacteriaceae (8th day) in the R500 and C500 groups. The TBARS value in drumstick meat decreased significantly in the R250, R500 and C500 groups on the zeroth day. Myristic acid, myristoleic acid, γ-linolenic acid, unsaturated fatty acids (ΣUFA), and medium chain fatty acids (MCFA) percentages of total fatty acids in drumstick meat were found to increase in the R250 group according to other groups. In conclusion, it was observed that resveratrol and curcumin added to the diet at variable levels affected the meat in terms of microbial and fatty acid profiles, while the effect was limited effectiveness on physicochemical parameters.(AU)

Eggs are foods with almost perfect proteins, while also containing nutrients with high biological value. The purpose of this study was to evaluate the morphological structure, physical-chemical, nutritional, and microbiological parameters of commercial and free-range eggs sold in the municipality of Santarém, State of Pará, Brazil. The two types of eggs were also compared to check for any differences in quality. The evaluations were conducted on variables such as Haugh unit, weight loss, egg width and length, specific gravity, yolk and albumen dimensions, pH, among others. A total of 240 eggs were purchased in the Brazilian municipality of Santarém (2º45'06" S and 54º70'09" W). A statistical study was also performed using the BIOESTAT 5.0 statistical program. A comparison of the industrial and free-range eggs and their various parameters is given in the tables along with the coefficient of variation. The results obtained were satisfactory and showed that the quality of eggs is affected more by environmental factors than by the source from which they are obtained. The results were also compared to previously published literature, and it was determined that this study offers a better foundation for the nutritional examination of egg quality.(AU)

Coffee is one of the most consumed products worldwide. Among the varieties of this product, specialty coffee is a type of coffee that has been growing in the world market. This paper aims to assess the effects that the conditions derived from coffee roasting at different altitude levels have on the quality of the product. It was discovered that processing coffee at a higher altitude level yielded a smaller increase in bitterness. This led to a better Specialty Coffee Association (SCA) score in cupping and, consequently, to better preservation of the coffee quality. The storage time affected the aroma by associating roaster aromas with older coffees. Although the assessed origins had the same NIR spectra, differences in peak intensity lead to variations in the flavor and aroma of the coffee. Furthermore, although green beans prolong quality allowing a SCA score of 84.73 ± 2.81 after 4 months of storage, roasted coffee at higher altitudes could also maintain the quality between production and consumption (SCA score of 80.22 ± 0.91 after 2 months). Finally, this research found that the instrumental equipment helped to find minor changes in the sensorial profile, and with these changes correlated with the sensorial panel, the best conditions to preserve coffee quality were found.

This study investigated the effect of different storage temperatures (35-55 °C) on the bioactive substances and antioxidant properties of Hyeronima macrocarpa berries loaded on nanocellulose. NC was extracted from banana pseudo-stems and presented an interesting surface and porosity properties. The acidified ethanol extract showed better anthocyanin extraction (1317 mg C3G eq./100 g FW) and was used for the preparation of the powdered product, which presented an intense and uniform magenta color, with CIELAB parameters of L* = 59.16, a* = 35.61, and b* = 7.08. The powder exhibited significant stability at storage temperatures of 35 and 45 °C, in which there was no significant loss of anthocyanins or a decrease in antioxidant capacity. In addition, the color was stable for up to 4 months without adding any preservative agent. The anthocyanin-rich extract of H. macrocarpa reached an estimated shelf-life of 315 days (stored at 35 °C), as a result of the impregnation process between the extract and NC, with the ability to protect the bioactives from degradation, due to NC surface properties.

ABSTRACT: Cereal grains are usually ensiled to improve their nutritional value and are one of the main sources of feed for dairy cattle. However, during storage, grains can be contaminated with toxicogenic fungi. Sorghum is one of the most economically important cereals in the world. Therefore, the aim of this work was to evaluate the influence of storage duration and tannin and moisture content (MC) on toxicogenic fungal populations in sorghum grain storage. Samples that were prepared with varieties high in tannins (genotypes Morgan 108 and ACA 558, >5 g/kg dry matter) and with varieties low in tannin content (genotypes Flash 10 and ACA 546, <1 g/kg dry matter) were collected and manually compacted in experimental laboratory silos where they received different MC treatments: low (15 to 25%), medium (26 to 32%), and high (33 to 42%). Freshly harvested grains were analyzed at time 0, and stored grains were analyzed at 30, 90, and 180 days. Fungal isolation and identification were performed following conventional mycological methods. Penicillium citrinum (34%), Aspergillus flavus (60%), and Fusarium nygamai (68%) were the most abundant species. Rapid detection of aflatoxins and fumonisins in each sample was performed using enzyme-linked immunosorbent assay according to the AOAC method, and the quantification of aflatoxin B1 was performed using high-performance liquid chromatography. In four samples of pre- and poststorage grains, aflatoxins were detected with levels of 6.7 to 28.8 µg/kg and aflatoxin B1 with a level of 2 to 14 µg/kg. Fumonisins were only detected in two freshly harvested samples, with levels of 500 to 900 µg/kg. In general, storage time favored the increase of Penicillium populations and reduced Aspergillus and Fusarium. Conversely the abundance of the three populations was not affected by the MC. The results of this study show that fungal populations must be analyzed at different times.

This study aimed to evaluate the reproductive performance of sows submitted to single fixed-time insemination (SFTAI) using boars according to capacity for liquid in vitro semen preservation, type of extender, and storage time. Boars (n = 12) were classified into two groups based on progressive motility (PM) at 120 h of semen storage: low (PM - 64.5%) - and high-preservation (PM - 83.9%) capacity for semen storage. Weaned sows (n = 397, parity - 1 to 7) were inseminated (1.5×109 sperm cells) in a factorial design: two classes of boars (low- or high-preservation), two types of extenders (short- or long-term), and two semen storage times at insemination (24 or 72 h). An adapted triptorelin acetate protocol was used for SFTAI. Total sperm motility (TM) and PM at insemination were greater in high-preservation boars at 72 h compared with low-preservation boars at 24 or 72 h (P < 0.01). Short- or long-term extender did not affect (P ≥ 0.68) TM and PM in high-preservation boars; however, long-term extender improved these parameters in low-preservation boars (P < 0.01). Pregnancy and farrowing rates were not affected by groups (P > 0.05). Total piglets born (TPB) was reduced (P = 0.05) in low-preservation boars with 72 h of storage (13.6 ± 0.5) compared to high-preservation boars with semen stored for 24 or 72 h (15.2 ± 0.5 and 15.5 ± 0.5, respectively). The low-preservation boars reduced the TPB in sows submitted to SFTAI, and this reduction was greater using semen stored for 72 h.

Abstract Background: Brewer's grains, a by-product of the brewery industry, can be included in the diet of ruminants. However, its high humidity makes it difficult to store and preserve. Objective: To evaluate the efficiency of sun dehydration of wet brewer's grains (WBG) and the effect of storage period on its nutritional and microbiological quality. Methods: A completely randomized experimental design was used to evaluate WBG dehydration efficiency, with treatments corresponding to 0, 1, 2, 4, 6, 8, 10, 12, 14 and 16 hours of sun exposure. A second experiment was carried out using also a completely randomizeddesign to evaluated the effect of storage with the following treatments: 0, 10, 20, 30, 60, 90, 120, 150 and 180 days of storage of the dry by-product. Results: Dry matter (DM) content linearly increased with dehydration period. The chemical composition of the dried brewer's grains had no effect as a function of storage period. Indigestible protein (C fraction) increased linearly but did not compromise the cumulative gas production and the in vitro digestibility of DM and protein. Storage time had no effect on fungus population. The maximum aflatoxin value was 45.5 μg/kg, and remained within acceptable limits for bovine feed. Conclusion: Dehydration of WBG in the sun is efficient to guarantee conservation and makes it possible to store the by- product. The storage of the dry by-product for 180 days does not compromise its nutritional or microbiological quality.


Resumen Antecedentes: Los granos de cervecería son un subproducto de la industria cervecera que puede ser incluido en la dieta de rumiantes; sin embargo, su alta húmedad dificulta el almacenamiento y conservación de ese producto. Objetivo: Evaluar la eficiencia de la deshidratación al sol de los granos húmedos de cervecería (WBG) y el efecto del período de almacenamiento sobre su calidad nutricional y microbiológica. Métodos: Para evaluar la eficiencia de la deshidratación de los WBG se utilizó un diseño experimental completamente al azar, con tiempos de tratamiento de 0, 1, 2, 4, 6, 8, 10, 12, 14, y 16 horas de exposición al sol. En un segundo experimento, también con diseño experimental completamente al azar, se evaluó el efecto del almacenamiento comparando los siguientes tratamientos: 0, 10, 20, 30, 60, 90, 120, 150 y 180 días de almacenamiento del subproducto seco. Resultados: La materia seca (DM) del WBG presentó un efecto lineal creciente con el proceso de deshidratación. La composición química de los granos secos de cervecería no tuvo efecto en función de los tiempos de almacenamiento. La proteína no digestible (fracción C) aumentó linealmente; sin embargo, no comprometió la producción acumulativa de gas y la digestibilidad in vitro de la DM y de la proteína. El tiempo de almacenamiento no tuvo efecto sobre la población de hongos. El valor máximo de aflatoxina obtenido fue de 45,5 μg/kg y permaneció dentro de los limites aceptables para alimentación de bovinos. Conclusión: La deshidratación de WBG al sol es eficiente para garantizar la conservación del material y viabilizar su almacenamiento. El almacenamiento por 180 días de este subproducto seco no compromete su calidad nutricional y microbiológica.


Resumo Antecedentes: Os grãos de cervejaria são um subproduto que podem ser incluídos na dieta de ruminantes, no entanto sua forma úmida dificulta o armazenamento e a conservação desse produto. Objetivo: Avaliar a eficiência de desidratação ao sol dos grãos úmidos de cervejaria (WBG) e o efeito do período de armazenamento sobre a qualidade nutricional e microbiológica. Métodos: Para avaliar a desidratação do WBG, utilizou-se um delineamento experimental inteiramente casualizado, sendo os tratamentos os tempos de 0 e 1, 2, 4, 6, 8, 10, 12, 14 e 16 horas de exposição ao sol. Um segundo experimento foi realizado em delineamento inteiramente casualizado. Os tratamentos foram 0, 10, 20, 30, 60, 90, 120, 150 e 180 dias de armazenamento do subproduto seco. Resultados: A matéria seca (DM) do WBG apresentou efeito linear crescente com o processo de desidratação. A composição química dos grãos secos de cervejaria não apresentou efeito em função dos tempos de armazenagem. A proteína indigestível (Fração C) aumentou linearmente, no entanto não comprometeu a produção cumulativa de gás e a digestibilidade in vitro da DM e da proteína. A população de fungos não apresentou efeito com o tempo de armazenamento. O valor máximo de aflatoxina obtido foi de 45,5 μg/kg e permaneceu dentro dos limites aceitáveis para a alimentação de bovinos. Conclusão: A desidratação do WBG ao sol foi eficiente em garantir a conservação do material e viabilizar o seu armazenamento. A estocagem desse subproduto seco por 180 dias não comprometeu a sua qualidade nutricional e microbiológica.

BACKGROUND AND AIM: Broiler meat is susceptible to lipid oxidation due to its high content of unsaturated fatty acids, especially when stored for a long time. Concerning with that problem, we can add natural compounds to the animal feed, as the plant essential oils, which have antioxidant, antimicrobial, and antifungal activities. The objective of this study was to evaluate the antioxidant activity, fatty acid profile, and chemical composition of the meat of broilers fed with diets containing different essential oil, including lemongrass (Cymbopogon flexuosus) and pedestrian tea (Lippia aff. rotundifolia). MATERIALS AND METHODS: The experimental design used was a 4×4 factorial scheme (storage time×diets), and each treatment was repeated thrice. The treatments were applied as negative control (without antimicrobial); positive control (ration supplemented with 10 ppm of enramycin and 42 ppm of salinomycin), lemongrass (ration with 120 mg of essential oil of lemongrass for each kilogram of live weight of the animals), and pedestrian tea (ration with 120 mg of essential oil of pedestrian tea for each kilogram of live weight of the animals). Storage was performed after slaughter and evaluated monthly for 4 months. RESULTS: The inclusion of lemongrass oil and pedestrian tea in the broiler diet did not change the ether extract content of the meat sample obtained from thigh and drumstick. The storage time promotes an increase in the moisture loss of the meat from the 2nd month in all treatments. There was an interaction between the additive and storage time for moisture loss. In the 2nd month of storage, the meat from broilers fed the antibiotic-containing feed had a lower moisture loss than those from broilers in the other treatment groups. The fatty acid profile did not differ statistically between the different treatment groups. The inclusion of additives in the food dropped the lipid oxidation at the 2nd month of storage. From the 3rd month, however, only the essential oils showed antioxidant effect. CONCLUSION: Antioxidant activity was positive for treatments that included essential oils. The lemongrass oil and pedestrian tea can be used as antioxidant additives in broiler diets to improve the oxidative stability of thigh-drumstick meat during storage. The results of the study suggest a good prospective for further research with profitability of usage essentials oils examined, for their economical application as feed components in broiler nutrition.

The study aimed to evaluate the fertility of boars according to the resistance of their semen to storage using dilution in either Short- or Long-term extender for single fixed-time insemination. From a total of 32 boars, twelve boars were classified during three semen collection (one collection/boar/week) as Low- (64.5%) or High-preservation (83.9%) capacity for maintaining progressive motility (PM) at 120 h of storage using Short-term extender. After the selection period, six ejaculates (weekly collected) from the Low- and High-preservation boars were diluted in Short- or Long-term extender (2 × 2 factorial design) for insemination and evaluation of fertility. A total of 519 weaned sows were submitted to induction of ovulation with triptorelin (OvuGel®) at 96 h post-weaning. Twenty-four hours later, estrus sows were single fixed-time inseminated (FTAI) with semen doses from the different groups of evaluation. The SAS® software was used for statistical analysis considering the class of boar, type of extender, and interaction as fixed effects. The GLIMMIX procedure was used, considering a binomial distribution for total motility (TM) and PM, binary distribution for pregnancy (PR), and farrowing rate (FR), and the total born (TB) was analyzed assuming a normal distribution with the comparison of means by Tukey-Kramer test. An interaction of class of boars and type of extender was observed for TM and PM at insemination (P < 0.001). Long-term extender increased TM in Low-preservation boars, with no effect in High-preservation boars. The ejaculates from High-preservation boars diluted in Short- or Long-term extender showed higher PM at insemination (86.8 and 87.8%, respectively) compared to those from Low-preservation boars in Short- or Long-term extender (73.2% and 77.9%, respectively). There was no effect of the interaction of boar preservation class and type of extender (P ≥ 0.163) on PR, FR or TB. However, Low-preservation boars presented lower TB (14.1 ± 0.2) compared to High-preservation boars (15.0 ± 0.2; P < 0.01). The PR (93.3 vs. 90.1) and FR (88.8 vs. 88.2) were not affected by class of Low- or High-preservation boars, respectively (P ≥ 0.187). The type of extender did not affect PR, FR, or TB (P ≥ 0.440). In conclusion, Low-preservation boars impaired the reproductive performance of single-FTAI sows by reducing TB with no apparent effect on PR or FR.

The aim of this study was to determine the volatile profiles of new seedless table grape cultivars Timco™, Magenta™, Krissy™ and Arra15™ and compare them with the traditional table grape variety Crimson seedless. The volatile profiles were extracted employing solid-phase microextraction and analyzed with gas chromatography coupled with mass spectrometry. Terpenes were present in very different proportions, with the Magenta, Krissy, and Arra15 varieties showing much higher quantities than Crimson and Timco. ß-Ionone and octanal, important indicators in the aromatic flavor quality of table grapes, were present in higher levels in Crimson and Arra15, and this might be responsible for driving consumer preference. These compounds significantly increased during ripening, except in Crimson, and gradually decreased from harvest to the end of the storage in all the cultivars. Evolution during ripening was different depending on the variety but the general tendency terpenes was to increase from veraison to harvest. A postharvest study revealed that Crimson could have a better conservation of the volatile components during postharvest storage compared with Timco and Krissy. These results could help in plant breeding programs and to make decisions for new planting according to needs for storing fresh table grapes given distances to consumer markets.

The objective of this work was to evaluate the effect of storage time and temperature on the quality of quail eggs. The experimental design was completely randomized in split plots, with two storage temperatures in the plots and six storage periods in the subplots. The variables analyzed were: egg weight; albumen and yolk weight, height and pH; Haugh units (HU); and yolk index and diameter. ̈The interaction between storage time and temperature was not significant (P>0.05) for egg weight, yolk weight and pH, but was significant (P<0.05) for albumen height, weight and pH, HU, and yolk diameter, height and index. The storage period had a quadratic effect in the two storage conditions for HU, albumen pH, yolk height and index, while for eggs stored at room temperature there was a quadratic effect on egg and albumen weight, albumen height, yolk weight, diameter and pH. O objetivo do trabalho foi avaliar o efeito da temperatura e do tempo de estocagem na qualidade de ovos de codorna. O delineamento foi inteiramente casualizado em parcela subdividida, sendo duas temperaturas de armazenamento nas parcelas e seis períodos de estocagem nas subparcelas. As variáveis analisadas foram: peso do ovo, peso, altura, pH do albúmen e da gema, Unidades Haugh (UH), diâmetro e índice de gema. A interação entre período e temperatura de armazenamento não foi significativa (P>0,05) para o peso do ovo, pH e peso da gema. This study aimed to evaluate the potential of centrifugal block cryoconcentration (CBCC) at three cycles applied to fresh calafate juice. The fresh juice and cryoconcentrate at each cycle were stored for five weeks at 4 °C and quality attributes were analyzed every 7 days. CBCC had significant effects in the calafate juice, since in the last cycle, the cryoconcentrate reached a high value of total soluble solids (TSS, ≈42 °Brix), with final attractive color, and an increase of approximately 2.5, 5.2, 5.1, 4.0 and 5.3 times in relation to the fresh juice values, for total bioactive compounds (TBC), 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), ferric reducing antioxidant power (FRAP) and oxygen radical absorbance capacity (ORAC), respectively. However, at 35 days under storage, these values decreased by 5%, 13%, 15%, 19%, 24% and 27%, for TSS, TBC, DPPH, ABTS, FRAP and ORAC, respectively. Additionally, until the day 14, the panelists indicated a good acceptability of the reconstituted cryoconcentrate. Therefore, CBCC can be considered a novel and viable technology for the preservation of quality attributes from fresh calafate juice with interesting food applications of the cryoconcentrates due to their high stability during storage time in comparison to the fresh juice.

Parity one (PO1) to PO7 sows were randomly assigned to the following groups: AI1-3 (n=190), insemination with semen doses stored between one and three days; and AI5-7 (n=124), insemination with semen doses stored between five and seven days. Sows were submitted to estrus detection twice a day. Post-cervical insemination according to weaning-to-estrus interval was performed. The farrowing rate (FR) did not differ between the groups (AI1-3=83.2%; AI5-7=82.2%; p>0.05) nor did the total number of piglets born (TPB; AI1-3=14.2±0.3; AI5-7=14.5±0.3; p>0.05). Considering the semen dose most likely responsible for fertilization according to its storage time (1, 2-3, 5, and 6-7 days), the FR (72.7%, 87.8%, 85.7%, and 79%, respectively) and TPB (14.4, 14.0, 14.9, and 13.5, respectively) were similar among the groups (p>0.05). In conclusion, the use of semen doses extended with long-term extender stored for up to seven days did not impair the reproductive performance of sows. Therefore, it's using could optimize production efficiency and logistics of semen dose deliveries to sow farms.

Silage of high moisture sorghum grains is a highly relevant source of energy in cattle production systems in South America. There is little information related to the chemical characteristics, the kinetics of fermentation and the toxic fungal populations of these feedstuffs. The aim of this study was to evaluate the effect of storage time and condensed tannins content of the grain on chemical composition, in vitro fermentation parameters, and toxicogenic fungal populations of moist sorghum grain stored in silo-bags. Samples of 2 varieties of sorghum grains (high-tannin [HT] and low-tannin [LT]), were obtained during the grain harvest before silage making and after 30, 90, and 180 d of storage (n = 16). High-tannin grains had higher acid detergent fiber, tannins, gas production (P < 0.05) and lower starch and rate of gas production (P < 0.01). Interaction variety × storage time were observed for all chemical parameters (P < 0.01), except for neutral detergent fiber assayed with a heat stable amylase and expressed inclusive of residual ash (aNDF) and pH. Starch and protein content increased in both varieties, tannins decreased in HT and LT, and organic matter (OM) increased in HT and declined in LT (P < 0.05). The rate of gas production increased with the storage time for HT and LT (P < 0.01). A linear reduction in the Aspergillus number of colonies in the HT varieties was observed (P < 0.01), whereas a linear increase in Penicillium isolation was detected in the LT sorghums (P < 0.01). The storage time was beneficial in terms of decreasing the condensed tannins, increasing fractional rate of gas production and minimizing fungal contamination, particularly on HT grains.

The objective of this work was to evaluate the effect of storage time and temperature on the quality of quail eggs. The experimental design was completely randomized in split plots, with two storage temperatures in the plots and six storage periods in the subplots. The variables analyzed were: egg weight; albumen and yolk weight, height and pH; Haugh units (HU); and yolk index and diameter. ̈The interaction between storage time and temperature was not significant (P>0.05) for egg weight, yolk weight and pH, but was significant (P<0.05) for albumen height, weight and pH, HU, and yolk diameter, height and index. The storage period had a quadratic effect in the two storage conditions for HU, albumen pH, yolk height and index, while for eggs stored at room temperature there was a quadratic effect on egg and albumen weight, albumen height, yolk weight, diameter and pH. Although eggs are an excellent protein source, they are a perishable product. Many methods exist to extend shelf life of food and one of them is the use of protein coatings that may be combined with antimicrobial substances, as propolis. The effectiveness of rice protein coatings plus propolis on maintaining interior quality and eggshell breaking strength of fresh eggs was evaluated during storage at 20°C for 6 wk. Egg quality was assessed by weight loss, Haugh unit (HU), albumen pH, yolk index (YI), shell strength, and scanning electron microscopy in uncoated eggs (control treatment) and eggs coated with rice protein concentrate and propolis at 5 or 10%. The HU and YI were higher in coated eggs (P < 0.001). Weight loss increased (P < 0.001) during long-term storage. Uncoated eggs showed the highest weight loss (5.39%), whereas rice protein (4.27%) and rice protein plus propolis at 5% (4.11%) and 10% (4.40%) solutions were effective in preventing weight lost (P < 0.001). Uncoated eggs had the worst (P < 0.001) HU (58.47), albumen pH (9.48), and YI (0.33) after 6 wk of storage. The eggs coated with rice protein and rice protein plus propolis presented results with similar intern quality between them during all the storage period. Scanning electron microscopy demonstrated a lower surface porosity in coated eggshell, indicating that the use of the coating may provide a protective barrier against the transfer of gases and moisture. In conclusion rice protein and propolis treatments helped to maintain egg quality for a longer time compared to uncoated eggs. These could be a viable alternative for maintaining the internal quality of fresh eggs during long-term storage at room temperature.
