The objective of this study was to evaluate the effect of the transport distance and lairage time on behavioral indicators of zebu beef cattle in the resting pen of a slaughterhouse using the focal animal technique. Eight lots of male zebu cattle, Nelore, aged approximately 4 years old, weighing on average 500 ± 28.5 kg-1, from different municipalities, transported by land, were evaluated. The lots were grouped into two categories: short distance (> 500 km) and long distance (> 500 km). Five focal animals per evaluated lot were used in each cycle of behavior observation, randomly chosen, and visually identified. The animal focal sampling method was used, with instantaneous recording, every 5 min per animal/h. A video camera was used and placed at a fixed point in the corral. After slaughtering, bruises and carcass pH were evaluated. The respiratory rate (RR) was measured in two moments, 30 min after unloading (RR_I) and 1 h before slaughtering (RR_F); behavioral data were divided into four lairage periods (1st, 2nd, 3rd, and 4th) equally and evaluated as repeated measures over time. The lairage time lowered the behaviors of headbutting (NCHBs), pushing (PsH), mounting (MT), and chasing away (CA), (p = 0.0001), and these behaviors were more evident in animals transported for short distances in the initial resting times, decreasing as they remained in the resting pen. There was effect of distance on the initial and final pH of the carcass, being greater in the short distance (p = 0.047). There was no effect of distance or lairage time on initial or final RR (p > 0.05). In addition, animals transported over long distances showed less carcass injuries, which were observed during post mortem inspection. It is concluded that animals transported over short distances present a greater number of agonistic behaviors, such as NCHBs, MT, PsH, and CA, predisposing to higher rates of bruising during lairage and more accentuated changes in the final pH of the meat.

This study evaluated factors associated with the pre-slaughter handling of pigs in a commercial slaughterhouse located in Minas Gerais and evaluated the influence of these factors on the initial pH and temperature of the carcasses. In all, 4449 carcasses were evaluated. The factors evaluated were transport distance, transport duration, loading density, fasting duration, resting duration, average weight of the animals, average temperature in the resting area, and maximum temperature in the resting area. The effects of these factors on the initial (i.e., at 45 minutes after slaughter) temperature and pH (pH45) were measured. The pH45 values were used to determine the occurrence of PSE; the carcasses were classified as PSE when they presented a pH45 < 5.90. Results showed that animals fasted for more than 24 hours were more likely to result in PSE meat (1.41 times more likely), as did animals that were exposed to an average temperature above 24 °C (1.52 times more likely). Except for the average weight of the animals, which did not affect the initial temperature values, all other pre-slaughter factors have influenced both pH45 and the initial temperature values, and the difference of fasting duration and the temperature in the resting area increase the incidence of PSE meat.


O estudo foi realizado com o objetivo de avaliar fatores associados ao manejo pré-abate de suínos em um abatedouro comercial localizado em Minas Gerais e sua influência sobre o pH inicial e temperatura das carcaças. Ao todo, foram avaliadas 4449 carcaças. Os fatores considerados na avaliação foram: distância de transporte, tempo de transporte, densidade da carga, tempo de jejum, tempo de descanso, peso médio dos animais, temperatura média na área de descanso e temperatura máxima na área de descanso. Para avaliar os efeitos desses fatores foram mensurados a temperatura e o pH inicial aos 45 minutos (pH45). Os valores de pH45 foram considerados para determinar o índice de predisposição para ocorrência de PSE já que as carcaças foram classificadas como PSE quando apresentaram valor de pH45 < 5,90. Os resultados encontrados mostraram que os animais com tempo de jejum acima de 24 horas, apresentaram maior probabilidade para ocorrência de carne PSE (1,41 vezes), assim como, aqueles que foram expostos a temperatura média acima de 24 °C na área de descanso com probabilidade de 1,52 vezes. Em relação a temperatura inicial e pH45, com exceção do peso médio dos animais, os demais fatores pré-abate analisados influenciaram os valores destes parâmetros, sendo que o tempo de jejum dos animais e a temperatura média da área de descanso promoveram aumento na incidência de carne PSE.

This study was conducted to evaluate the effects of slaughtering feedlot Texel lambs during different climatic conditions on carcass and meat quality traits. Twenty castrated male Texel lambs (21.8 ± 0.62 kg) were distributed to two treatments according to the climatic conditions during the finishing period and at pre-slaughter: warm season (WS; mean temperature of 23.4 °C and 77.5% relative humidity) and cool season (CS; mean temperature of 14.9 °C and 79.5% relative humidity). During the pre-slaughter, thermal comfort was evaluated through the variables: respiratory frequency, rectal temperature, temperature of the ocular region, and temperature-humidity index (THI). After the finishing period, lambs were slaughtered, and carcass and meat quality traits were assessed. The THI values indicate that animals harvested in the WS spent 13 h of the day under potential thermal discomfort conditions in the week before slaughter and in the pre-slaughter period, whereas lambs harvested in the CS did not experience any thermal discomfort. Slaughter weight, carcass weight, carcass dressing, and backfat thickness were greater (P ≤ 0.03), whereas cooling losses were lower (P < 0.01) for lambs slaughtered in the CS. Moreover, thawing losses were lower (P < 0.01), whereas cooking losses were greater (P < 0.01) for lambs harvested in the CS. Lambs slaughtered in the CS also showed greater meat redness, yellowness, and chroma values (P < 0.05). Although carcass traits were affected by the greater thermal discomfort exposure, meat quality of lambs was less impacted by the climatic conditions at slaughter.

Effective planning animal transport is essential to safeguard animal welfare and reduce production losses. Environmental conditions, specifically extreme temperatures in combination with ranges of relative humidity are highlighted as one of the main risk factors for production losses during transport (e.g., fatalities). The majority of research evaluating both welfare and production impacts of pig transport have been primarily undertaken in Europe and North America, which cover a relatively limited range of distinct climates (e.g., temperate, sub-arctic, etc.). As a result, research on pig transport in semi-arid conditions is lacking. In this study, we evaluated the effects of both distance (short, 30 km; and long, 170 km) and transport daily periods (morning, (05:00-11:00); afternoon (12:00-17:00); and night, (23:00-04:00)) on the preslaughter losses and heat stress of pigs in commercial transport in a semiarid region. Across 19 journeys of standard slaughter-weight pig loads (124.0 ± 2.8 kg), 684 focal animals (36 per journey) were evaluated. For each journey, the load's thermal profile (THIadj and enthalpy) and physiological responses of individual pigs were recorded. On arrival at designated slaughterhouses, the percentage pig of non-ambulatory non-injured (NANI), non-ambulatory injured (NAI), death on arrival (DOA), and total losses were recorded. Short journeys in the afternoon were shown to be more detrimental to the thermal comfort of pigs, with higher rectal temperatures recorded. The highest percentage of total losses and DOA occurred in afternoon journeys, irrespective of distance, followed by the morning, with the lowest losses observed in pigs transported at night. Additionally, total losses and DOA were further exacerbated by journey distance, with higher rates observed in short journeys. Higher percentage averages of NANI and NAI were observed in shorter journeys, but daily periods effects were only observed for NANI. These results further demonstrate the welfare and production loss risks associated with journey distance and time of day (representing varying environmental conditions) during road transport of pigs, whilst providing novel data in semiarid conditions. Careful and effective planning for pig transportation is essential to minimize heat stress and production losses. Consideration of the thermal environment on the day of travel, as well as providing flexibility to adjust travel times (e.g., early morning or evening), should help to mitigate risks of heat stress and production losses during pig transport.

Transport by land is an essential component for the commercialization of fattening pigs and can have a negative impact on animal welfare. In slaughterhouses, the presence of dead and non-ambulatory animals is an indicator of poor welfare during transport. The objective of the study was to identify risk factors associated with the frequency of dead and non-ambulatory pigs during transport. A survey was conducted in three Colombian slaughterhouses. Data were collected from 372 batches (n = 18,437 gilts barrows) and transported directly from the farms to the slaughterhouses. Each truck was individually evaluated; a structured survey was administered to drivers, non-ambulatory and dead pigs on arrival were identified and blood samples were obtained from non-ambulatory pigs to assess physiological indicators of stress. Mortality rates per batch at arrival ranged from 0.08 to 0.17% and prevalence of non-ambulatory pigs per batch ranged from 0.84 to 1.37%.The results of the multilevel mixed effects linear regression model identified the following as risk factors associated with the frequency of total transport losses: truck speed (P = 0.04), distance (P < 0.01), transport time (P < 0.01), load size (P < 0.01) and the driver (P < 0.01) including the farm as a fixed effect. This study identified risk factors that increased the probability of total transport losses during land transport under Colombian commercial conditions. But more research that involves commercial drivers is needed to develop effective strategies to improve Colombian pig's transportation chain.

- This study compared the social and feeding behaviour of immunocastrated female pigs using different immunocastration protocols. We used seventy-two gilts from industrial crossbreeding (Agroceres × Topigs) at 15 weeks of age. The pigs were distributed in a randomised design with three treatments. The second dose of the immunocastration vaccine was applied in two groups, six weeks before slaughter (I6) and four weeks before slaughter (I4). A non-immunised group (NI) was used for comparison. Due to the divergence in the time of immunisation between the two groups, an individual comparison of each immunocastrated group with the control group (NI vs. I6 and NI vs. I4) was performed. Social behaviour was analysed through the collection of images by a monitoring camera, and the analysis period was from 6:00 to 18:00 h, with behaviour observed every ten minutes. Feeding behaviour data were collected by the automated FIRE® system. Anti-GnRH immunisation and the different protocols of application did not influence most social and feeding behaviours.(AU)

The objective of this study was evaluate whether pretransport feed withdrawal affects welfare, carcass, and meat characteristics of European quails. A total of 120 European quails were used, with an initial age of 15 days. Bird feed was removed before transport to the slaughterhouse at the following times, which characterised the different treatments: zero hours, three hours, six hours, nine hours and twelve hours. The transport took 54 minutes to cover 27 kilometres to a commercial slaughterhouse. The birds were slaughtered at 41 days of age. During bleeding, blood samples were collected. Blood glucose, total protein, albumin, uric acid, and corticosterone concentrations were measured. The carcasses and meat characteristics were measured. Poultry body weight decreased and blood glucose concentrations increased with the increase in feed withdrawal time. The treatments did not affect carcass weights. Carcass yields after three hours fasting were similar to those in the six hours and nine hours groups, indicating that gastrointestinal tracts were empty after the third hour. Meat quality was negatively affected (pH, lightness, water holding capacity, cooking loss) by the increase in feed withdrawal time; integrated parameters that characterise dark, firm, dry meat. Pre transport feed withdrawal time should be three hours to empty the gastrointestinal tract and minimise losses in meat quality of European quails. It is necessary to adjust feed withdrawal so that it does not exceed this time, since there is no technical justification for supporting it.(AU)

In aquaculture, to ensure animal welfare in pre-slaughter and slaughter stages, it is fundamental that fish are insensible. A method for evaluating fish insensibility is based on visual sensibility indicators (VSI) assessment (i.e., self-initiated behavior, responses to stimuli and reflexes). However, many stimuli used to assess fish responses are painful. Therefore, this study verifies whether the presence/absence of a dorsal fin erection (DFE) response can be used as a painless VSI in Nile tilapia (Oreochromis niloticus). Three stunning protocols were applied to fish: benzocaine anesthesia (40 mg/L and 80 mg/L), ice water immersion (0-1, 2-3 and 5-6 °C) and CO2 stunning. After these stunning methods were applied in fish, the time of loss and return of DFE was observed, along with the vestibulo-ocular reflex (VOR). All fish stunned using benzocaine and ice water immersion lose both VSIs, while 95% of fish stunned using CO2 lose these VSIs. In all treatments, DFEs return quicker than VOR. Therefore, DFE can be used as a VSI in Nile tilapia, which is simple for producers to assess and does not require a painful stimulus. However, the DFE alone does not totally ensure fish insensibility and must be used together with other well-established VSIs at fish farms.

Detection of on farm and transport animal welfare problems at slaughterhouse level is a key issue for the meat industry; however, usually, the assessments do not include basic aspects of animal health. For that reason, it is necessary to develop an assessment method that has an integrative scope and identifies the risk profiles in animals. Therefore, the aim of the present study was to detect cattle welfare indicators that can be implemented at the slaughterhouse level and to develop integrated risk profiles based on the animal's origin, pre-slaughter logistics, and animal-based indicators. We recorded the origin, commercial category, transportation details, and horn size of 1040 cattle upon arrival at the slaughterhouse. Cattle welfare was measured based on individual scores for vocalizations, stunning shots, carcass bruises, meat pH, severe hoof injuries, and organ condemnations. To characterize operational and logistic practices from the farm to the slaughterhouse, a two-step cluster analysis was applied to the aforementioned variables (production system, cattle type, horn size, journey distance, vehicle type), which identified four clusters: small feedlot and free-range profile (C1, n = 216, 20.8 %), feedlot profile (C2, n = 193, 18.6 %), culled dairy cows profile (C3, n = 262, 25.2 %), and free-range profile (C4, n = 369, 35.5 %). The animal's diet and environmental conditions might have influenced the development of hoof disorders in C1 animals (P = 0.023), the proportion of animals that were re-shot was highest in C2 animals (P = 0.033), and C3 and C4 animals were most likely to suffer injuries such as severe bruising (P = 0.001). In addition, the number of stunning shots, meat pH, carcass bruises, severe hoof injuries, and liver condemnations, explained a significant variation in the incidence of various health and welfare consequences based on an animal's origin, which confirmed their importance as 'welfare iceberg' indicators. The study provided detailed data that can be included into assessment methods for the welfare of slaughter cattle, which can be tailored to specific production systems.

For reactivity evaluation, vocalization, slips, falls, use of shockers and presence of lying animal were observed for handling in the corridor, bathing station and at the end of raceway in front of the stunning box. For stunning evaluation, shots applied to each animal to complete stunning and the distance between the shot site and the correct position for stunning were measured. Through mapping the main deficiencies and failures in each handling region, a training was elaborated focused on adoption of correct handling practices. After the informational lecture, data was collected again using the same procedures and in the same handling regions. After training, the quantification of all handling variables was considerably lower in the three regions of the pre-slaughter course, and there was a significant reduction in the bathing station and at the end of raceway in front of the stunning box (P<0.05). In addition, there was a significant increase in stunning performed at the correct shooting position and within 2 cm of the target (P<0.001), as well as reduction of shots applied outside of 3 cm (P<0.001). The number of shots required for complete stunning also decreased (P<0.05). Staff training was extremely efficient in reducing harmful variables to animal welfare and in increasing good practices in pre-slaughter handling.(AU)


O trabalho teve por objetivo avaliar a reatividade e aferir a eficiência de insensibilização em bovinos antes e após o treinamento de funcionários em abatedouro frigorífico. Foi observado o manejo no corredor, chuveiro e brete, sendo analisado: vocalização, escorregão, queda, uso de choque e presença de animal deitado. Foram quantificados os disparos necessários para que houvesse o atordoamento de cada animal e mensuração da distância compreendida entre o ponto do disparo efetuado e o local ideal para insensibilização. Através do mapeamento das principais deficiências e falhas de manejo em cada região, foi elaborada uma palestra com foco na adoção de manejos e práticas ideais no pré-abate. Após a palestra informativa, efetuou-se novamente a coleta de dados. Após o treinamento a quantificação de todas as variáveis de manejo foi consideravelmente inferior nas três regiões do percurso pré-abate, e houve redução nas regiões chuveiro e brete (P<0,05). Além disso, houve aumento na insensibilização efetuada no ponto ideal à até 2 cm da mesma (P<0,001), bem como redução de disparos efetuados acima de 3 cm de distância (P<0,001). A quantidade de disparos necessários para completo atordoamento também apresentou redução (P<0,005). O treinamento aos funcionários foi extremamente eficiente na redução de variáveis prejudicais ao bem-estar animal e no incremento de boas práticas no manejo pré-abate.(AU)

Pre-slaughter fasting duration affect blood parameters related to stress and metabolism, decrease live and carcass weights and impact beef quality of cattle. In three experiments, 1100 steers and heifers, finished on feedlot or on pasture, were evaluated to assess the influence of the site and duration of fasting before slaughter on physiological, carcass and meat quality traits. Cattle were allocated to one of two fasting duration - long (23-29 h) or short (2-6 h) - and to one of two sites of fasting- farm or abattoir. All animals had access to water ad libitum until slaughter, except during transportation. Cattle were assigned to two (long fasting on abattoir/normal lairage time, short fasting on farm/minimal lairage time) or three (long fasting on abattoir/normal lairage time, short fasting on farm/minimal lairage time, long fasting on farm/minimal lairage time) treatments. Seventeen slaughters were considered in a randomized complete block design. There was no effect of the site of fasting on any variable. Cattle with short fasting duration had higher carcass weights and water consumption than those under long fasting duration. Haematocrit, globulin, total protein, and lactate dehydrogenase at the time of slaughter increased with fasting duration. There was no effect of the duration of fasting on blood ions, meat quality traits, urine pH, liver weight and volume, and skin dry matter. A reduction in the fasting duration returned to farmers and abattoirs 1.2% additional kilograms of carcass, suggesting an improvement in animal welfare according to a better hydration level of cattle at the time of slaughter.

The study presents a novel veterinary forensic approach to analyse the bruising of horse carcasses, based on the nature of the bruises and how they are grouped in certain anatomical areas. Data on pre-slaughter logistics was obtained for 113 journeys with horses that travelled from Mexico and the USA to a Mexican abattoir. We found that carcass bruising was a highly prevalent problem (79% of carcasses had bruising) and was especially problematic in journeys lasting longer than 12 h, independently of the animal's country of origin, sex, age, lairage time or vehicle type. Multivariable logistic regression showed that the most severe bruises were not dispersed randomly on the carcass and that their distribution was associated with the presence of medium-sized bruises on the abdominal wall, front and rear limb. Cluster analysis suggested four damage patterns based on bruise location: severe and concentrated bruising, as well as non-severe bruises on the rear limb, thoracic-wall or more dispersed throughout the carcass.

Foram quantificados os disparos necessários para que houvesse o atordoamento de cada animal e mensuração da distância compreendida entre o ponto do disparo efetuado e o local ideal para insensibilização. Através do mapeamento das principais deficiências e falhas de manejo em cada região, foi elaborada uma palestra com foco na adoção de manejos e práticas ideais no pré-abate. Após a palestra informativa, efetuou-se novamente a coleta de dados. Após o treinamento a quantificação de todas as variáveis de manejo foi consideravelmente inferior nas três regiões do percurso pré-abate, e houve redução nas regiões chuveiro e brete (P<0,05). Inadequate pre-slaughter handling conditions can compromise animal welfare and productivity. This study aimed to evaluate the animal welfare (AW) indexes during pre-slaughter handling and quantify the carcass lesions of beef cattle submitted to different loading densities. A total of 270 Nellore cattle, at 30 months of age, from three farms were used in the study. Each farm presented a different loading density: higher density (500kg/m2), intermediate density (450kg/m2), and lower density (420kg/m2). Three shipments of cattle from each farm with 30 animals each were used in the AW analysis. Ten animals from each shipment were considered for quantification of carcass bruises. The AW indexes were classified according to the five-freedom criterion (physiological, environmental, sanitary, behavioral, and psychological). After slaughter, the carcasses were inspected in the routine line and evaluated for the presence of lesions. Statistically significant differences (p<0.001) were found for all variables studied as a function of AW and bruises. The best AW index and the lowest mean weight of lesions were found at the loading density of 450kg/m2. The highest carcass weight was observed at the loading density of 500kg/m2. Lesions were found in 100% of the animals at the loading densities of 500 and 420kg/m2. In conclusion, the best AW indexes and the smallest occurrence of bruises were verified at the loading density of 450kg/m2. This study confirmed the importance of adequate pre-slaughter handling to ensure cattle welfare and, consequently, greater profitability for producers and slaughterhouses.(AU)


Condições de manejo pré-abate inadequadas podem comprometer o bem-estar e a produtividade animal. O objetivo deste estudo foi avaliar os índices de bem-estar animal (BEA) durante o manejo pré-abate e quantificar as lesões em carcaça de bovinos submetidos às diferentes densidades de carregamento. Para isto, foram utilizados 270 bovinos Nelore, aos 30 meses de idade, provenientes de três fazendas. O melhor índice de bem-estar e o menor peso médio de lesão foi encontrado na densidade de carregamento de 450kg/m2. O maior peso da carcaça foi encontrado na densidade de carregamento de 500kg/m2. Em 100% dos animais nas densidades de carregamento de 500 e 420kg/m2 foram encontradas lesões. Pode-se concluir que a densidade de carregamento de bovino de 450kg/m2 obteve os melhores índices de bem-estar e menor ocorrência de lesões. Este estudo confirma a importância do manejo pré-abate adequado na garantia do bem-estar aos bovinos e, consequentemente, na maior rentabilidade ao produtor e ao frigorífico.(AU)

Os mercados importadores de carne de frango brasileira estão se tornando cada vez mais exigentes em relação aos princípios do bem-estar animal na criação e abate de frangos de corte. Desta forma, adaptar a cadeia avícola a tais exigências depende do controle de falhas no manejo pré-abate, que são os principais problemas relacionados ao bem-estar animal na cadeia de produção do frango de corte. Portanto, o objetivo deste estudo foi estabelecer e quantificar as principais causas de perdas relacionadas a falhas no manejo pré-abate em um abatedouro de frangos comerciais. Para tanto, foram implantados ábacos nas três linhas de abate ao lado do local da pendura das aves e registrado o número daquelas que foram eliminadas ou estavam mortas, durante 10 dias, em dois turnos de abate. Durante o estudo foram abatidos 4.563.293 frangos e o total de aves mortas no pré-abate foi de 14.039 aves (0,3%). A mortalidade no transporte e/ou galpão de espera foi a principal causa de descarte (80,56%), seguida por refugos (19,1%), injuriadas (0,18%) e fraturadas (0,11%). Conclui-se que para reduzir as perdas no pré-abate, os esforços devem ser direcionados principalmente na logística de transporte e em melhorias no galpão de espera, visando a diminuição de perdas por mortalidade nessa etapa.

The death on arrivals was the leading cause of elimination in emergency slaughter (80.56%), followed by small broilers (19.1%), injured broilers (0.18%) and fractured broilers (0.11%). It is concluded that to reduce preslaughter losses, efforts should be directed mainly to transport logistics andimprovements in the waiting shed, aiming to decrease mortality losses in this stage.

Conclui-se que para reduzir as perdas no pré-abate, os esforços devem ser direcionados principalmente na logística de transporte, visando assim à lucratividade do produto, pautado no contexto atual de bem-estar animal.

The aim of this study was to determinate the effects of on-farm fasting periods and lairage times on the physiological behavioral indicators, and on the killing-out and meat quality traits in commercial pigs. Two-hundred and forty pigs were submitted to a 2X4X3 experimental design, with two on-farm periods (0 or 8 h), four lairage times (1, 8, 12, 24 h) of fasting and three replicates. The blood values of cortisol, urea, and non-esterified fatty acids were above the baseline values for the species Fasting on the farm, lairage time, and total fasting (on farm plus lairage time) had a significant effect on carcass yield and on the hot and cold carcass yields (P < 0.01), but not on live weight losses (P > 0.01). The total fast had significant effects on the pH values, color L * and on water-holding capacity of the meat (P < 0.01). Therefore, in favor of animal welfare and better meat quality we suggest a total fast no >12 h.
