RESUMO

Food literacy has emerged as a key individual trait to promote the transformation of food systems toward healthy and sustainable diets. Childhood and adolescence are key periods for establishing the foundations of eating habits. Different food literacy competencies are acquired as children develop different cognitive abilities, skills, and experiences, contributing to the development of critical tools that allow them to navigate a complex food system. Thus, the design and implementation of programs to support the development of food literacy from early childhood can contribute to healthier and more sustainable eating habits. In this context, the aim of the present narrative review is to provide an in-depth description of how different food literacy competencies are developed in childhood and adolescence, integrating the extensive body of evidence on cognitive, social, and food-related development. Implications for the development of multisectoral strategies to target the multidimensional nature of food literacy and promote the development of the 3 types of competencies (relational, functional, and critical) are discussed.

ABSTRACT Objective This study aimed to evaluate the relationship between food literacy, adherence to the Mediterranean diet (MetDiet), and anthropometric measurements. Method In this study, 551 adults were evaluated. The defining features were questioned with the questionnaire form, Short Food Literacy Questionnaire (SFLQ), and Mediterranean Diet Adherence Screener (MEDAS). Neck circumference, waist circumference (WC) measurements, waist to height ratio (WHtR), waist to hip ratio (WHR), and body mass index (BMI) were evaluated. The effect of the SFLQ scores on the anthropometric measurements and MEDAS scores was evaluated with linear and binary logistic regression analysis. Results The food literacy scores were low in individuals with overweight and obesity and have risk according to the waist circumference and waist to height ratio. Individuals with high adherence to the MetDiet had high food literacy. The food literacy had the most effect on waist circumference. There was a positive relationship between the food literacy and MetDiet scores when the crude and adjusted models were compared according to age, gender, education level, marital status, and BMI. According to crude and adjusted models, food literacy was effective on strict adherence to the diet (Wald=13.446), and a 1-unit increase in the food literacy increased strict adherence to MetDiet by 1.05 times (95% CI=1.03-1.09). Conclusion The results showed positive effect of food literacy on obesity-related anthropometric measurements and MetDiet.


RESUMO Objetivo Este estudo teve como objetivo avaliar a relação entre alfabetização alimentar, adesão à dieta mediterrânea (MetDiet) e medidas antropométricas. Método Neste estudo foram avaliados 551 adultos. As características definidoras foram questionadas com o formulário do questionário Short Food Literacy Questionnaire (SFLQ) e Mediterranean Diet Adherence Screener (MEDAS). Medidas de circunferência do pescoço, circunferência da cintura (CC), relação cintura/altura (RCEst), relação cintura/quadril (RCQ) e índice de massa corporal (IMC) foram avaliados. O efeito dos escores SFLQ nas medidas antropométricas e escores MEDAS foi avaliado com análise de regressão logística linear e binária. Resultados Os escores de alfabetização alimentar foram baixos em pacientes com sobrepeso e obesidade e apresentam risco de acordo com a circunferência da cintura e relação cintura/altura. Indivíduos com alta adesão ao MetDiet tiveram alta alfabetização alimentar. A alfabetização alimentar teve o maior efeito sobre a circunferência da cintura. Houve uma relação positiva entre a alfabetização alimentar e os escores do MetDiet quando os modelos brutos e ajustados foram comparados de acordo com idade, sexo, escolaridade, estado civil e IMC. De acordo com modelos brutos e ajustados, a alfabetização alimentar foi eficaz na adesão estrita à dieta (Wald=13,446), e um aumento de 1 unidade na alfabetização alimentar aumentou a adesão estrita à MetDiet em 1,05 vezes (95% CI=1,03-1,09). Conclusão Os resultados mostraram efeito positivo da alfabetização alimentar sobre medidas antropométricas relacionadas à obesidade e MetDiet.

The impact of food literacy (FL) and nutrition literacy (NL) programs on lifestyles and health is recognized in the literature, yet few studies systematize it. This study aims to deepen the understanding of FL/NL from the characterization of programs in terms of (i) theoretical foundations, conceptualization and measuring instruments; (ii) characterization of the FL/NL programs and results and (iii) limitations and future directions declared. A scoping review of original articles addressing FL/NL programs from the Web of Science, Scopus and PubMed databases published between 2015 and 2023. There was a somewhat restricted view of the construct and the absence of a clear boundary between FL and NL. Half of the studies reported theoretical foundations. The most used model was Social Cognitive Learning Theory. More significant development of programs was observed in Australia, using quasi-experimental designs. Most of the studies informed positive results. Limitations of the studies related to the sampling process, absence of a control group and lack of follow-up. It is suggested that long-term interventions consider economic, social and cultural factors. Despite that theoretical and empirical aspects should be revised, FL/NL programs are a suitable strategy to mitigate the social and health effects of inadequate nutrition.

Purpose: The familial food environment is influenced by many factors, including food insecurity, food accessibility, and foods accepted by the family. These factors can facilitate or hinder caregivers' ability to support a healthy home food environment. The aim of this research was to explore the barriers to, perspectives on, and nutrition education needs identified by food-insecure parents which would then inform a community-based nutrition education program. Methods: A qualitative study used focus group data that were recorded, transcribed verbatim, and analyzed using a constant comparison approach to categorize the emerging themes. Results: Emergent themes: (1) Cooking confidence deficit; (2) Healthy meal preparation barriers; (3) Healthy meal acceptance barriers; (4) Meal planning, management, and adaptability. These themes suggest that supporting a healthy home food environment is connected to both food knowledge and competencies, known as food literacy. Conclusion: Food literacy competency should be assessed before nutrition education program implementation within community settings.

RESUMO

In this article, we explore women's everyday experiences with food insecurity. Women's narratives from a Hispanic community in New Mexico depict the poignant struggles women confront as they actively engage with buffering the experience of hunger to hide scarcity and mask and cope with emotional distress. These data give us a lens for understanding women's lives in the context of disparity as it relates to food insecurity as a public health issue and provide a way to conceptualize how social determinants operate and integrate with quotidian life activities and processes.
