This study aimed to evaluate the effect of applying oxidized cassava starch-based edible coatings with addition of lemongrass essential oil emulsion on 'Palmer' mangoes stored under refrigeration. A completely randomized design was used, arranged in a 5 × 3 factorial scheme, with five types of coatings and three evaluation times. The evaluated postharvest quality parameters consisted of weight loss, pulp and peel firmness, biochemical transformations related to pigments, and pulp and peel coloration of mango. The application of edible coatings with a 0.9 % EO concentration resulted in delayed fruit ripening, evidenced mainly by a 7.25 % reduction in weight loss, a 29.23 % increase in soluble solids content, and a 24.15 % decrease in total chlorophyll, when compared to uncoated fruits, which showed 19.8 %, 48.66 %, and 82.00 %, respectively, over the storage period. This effect was also evident in the angle Hue (°h) measurement, with uncoated fruits showing a decrease of 32.2 %. The antimicrobial effect and absence of anthracnose symptoms were observed in the fruits in which the coating with 0.9 % EO was applied. Therefore, biodegradable coating with the addition of 0.9 % emulsion EO, can be used as postharvest treatments for maintenance quality of 'Palmer' mangoes during refrigerated storage.

Kale is becoming an important vegetable worldwide, mainly due to its nutritional properties. Kale leaves can be marketed whole, although minimal processing is also in demand. In this article, it was analyzed the effect of packaging in a modified atmosphere of fresh-cut kale leaves stored at 20 °C and 4 °C. Kale leaves were cut into 4 × 4 cm strips and stored in low-density polyethylene bags. Samples processed in the same way but stored in PVC were used as controls. Leaves kept in a modified atmosphere showed a delay in color change with Hue values from about 130 to 120 under PMA against 130 to 100 in control group (CTR) leaves. Chlorophyll degradation was also delayed in both storage temperatures. Samples stored under PMA showed about two times the levels of total chlorophylls with respect to CTR samples at the end of the storage. No changes in total sugar content were detected during storage and no differences were detected between control and modified atmospheres stored samples. Samples maintained in a modified atmosphere showed a lower decrement in soluble proteins and a lower rate of RUBISCO degradation at both temperatures. The relation of RUBISCO content PMA/CTR ranged from 1 to about 3 toward the end of storage No changes in phenols content were found when comparing control and treated samples. However, flavonoid and the antioxidant contents increased in samples stored in modified atmospheres with respect to their controls. We demonstrated that storage in modified atmospheres could be an adequate and simple methodology to extend postharvest life of this minimally processed product at both ambient and refrigerated storage.

Fresh-cut produces are often consumed uncooked, thus proper sanitation is essential for preventing cross contamination. The reduction and subsequent growth of Salmonella enterica sv Thompson were studied in pre-cut iceberg lettuce washed with simulated wash water (SWW), sodium hypochlorite (SH, free chlorine 25 mg/L), and peroxyacetic acid (PAA, 80 mg/L) and stored for 9 days under modified atmosphere at 9, 13, and 18 °C. Differences in reduction between SH and PAA were non-existent. Overall, visual quality, dehydration, leaf edge and superficial browning and aroma during storage at 9 °C were similar among treatments, but negative effects increased with temperature. These results demonstrated that PAA can be used as an effective alternative to chlorine for the disinfection of Salmonella spp. in fresh-cut lettuce. The growth of Salmonella enterica sv Thompson was successfully described with the Baranyi and Roberts growth model in the studied storage temperature range, and after treatment with SWW, chlorine, and PAA. Subsequently, predictive secondary models were used to describe the relationship between growth rates and temperature based on the models' family described by Belehrádek. Interestingly, the exposure to disinfectants biased growth kinetics of Salmonella during storage. Below 12 °C, growth rates in lettuce treated with disinfectant (0.010-0.011 log CFU/h at 9 °C) were lower than those in lettuce washed with water (0.016 log CFU/h at 9 °C); whereas at higher temperatures, the effect was the opposite. Thus, in this case, the growth rate values registered at 18 °C for lettuce treated with disinfectant were 0.048-0.054 log CFU/h compared to a value of 0.038 log CFU/h for lettuce treated with only water. The data and models developed in this study will be crucial to describing the wash-related dynamics of Salmonella in a risk assessment framework applied to fresh-cut produce, providing more complete and accurate risk estimates.

Citrus fruit have a lengthy post-harvest lifetime, however owing to water loss, they lose firmness and luster on the skin after being picked. In light of the foregoing, this study aimed to assess the effects of coatings on the post-harvest conservation of 'Natal CNPMF 112' oranges under refrigerated settings using aqueous and alcoholic propolis extracts and carnauba wax. Fruit of 'Natal CNPMF 112' orange tree grafted on 'Rangpur' lime were treated with carnauba wax (100%) and alcoholic and aqueous propolis extracts (30%). The experimental design was totally randomized, with the plots consisting of the coatings plus the control (distilled water), and the subplots separated by the storage time (0, 10, 20, and 30 days) at 12 ºC ± 2, with the exception of weight loss, which was assessed at three-day intervals (0 to 30 days). Loss of fruit mass, average fruit mass, soluble solids, titratable acidity, ascorbic acid, maturity index, pH, and technical index were all examined. According to the findings, the alcoholic extract of propolis produced decreased fruit mass loss, a high maturity index, and balanced acidity. The coatings used in the postharvest conservation of refrigerated 'Natal CNPMF 112' oranges had no effect on the other parameters. As a result, propolis alcoholic extract is suggested for the preservation of 'Natal CNPMF 112' orange.


Os frutos cítricos apresentam prolongado período pós-colheita, no entanto, devido à perda de água, após colhidos, perdem a firmeza e ficam com pouco brilho na casca. Face ao exposto, objetivou-se neste trabalho determinar os efeitos dos revestimentos na conservação pós-colheita da laranja 'Natal CNPMF 112' com utilização de extratos de própolis aquoso e alcoólico e a cera de carnaúba em condição refrigerada. Frutos da laranjeira 'Natal CNPMF 112', enxertada em limoeiro 'Cravo', foram tratados com cera de carnaúba (100%) e extratos de própolis alcoólico e aquoso (30%). O delineamento experimental foi inteiramente casualizado, com arranjo em parcelas subdivididas, sendo as parcelas constituídas pelos revestimentos mais a testemunha (água destilada), e as subparcelas pelo período de armazenamento (0, 10, 20 e 30 dias) a 12 ºC ± 2, com exceção para perda de massa, a qual foi avaliada a intervalos de três dias (0 a 30 dias). Avaliaram-se: perda de massa dos frutos, massa média dos frutos, sólidos solúveis, acidez titulável, ácido ascórbico, índice de maturação, pH e índice tecnológico. Conforme os resultados, observou-se que o extrato alcoólico de própolis promoveu menor perda de massa do fruto, bom índice de maturação e acidez equilibrada. As demais características não foram afetadas pelos revestimentos utilizados na conservação pós-colheita da laranja 'Natal CNPMF 112' refrigerada. Portanto, recomenda-se o extrato alcoólico de própolis para a conservação da laranja 'Natal CNPMF 112'.

Fast perishability of dragon fruit requires that strategies be adopted to extend its post-harvest shelf life, in order to reduce losses,maintain quality and increase the financial return of economic activity. The objective of this work was to evaluate the effect of storage conditions in combination with the application of 1-methylcyclopropene (1-MCP) on the quality maintenance of red dragon fruit. The treatments evaluated were cold storage (CS; 21 kPa O2+ 0.03 kPa CO2), controlled atmosphere (CA; 2 kPa O2+ 5 kPa CO2) and modified atmosphere (MA; 40 µm thick low-density polyethylene bags) combined or not with the application of 1-MCP (300nL.L-1), with four replications per treatment. The fruits of all treatments were stored for 20 days at 13 ± 2°C and relative humidity (RH) of 90 ± 5%, followed by 3 days of exposure at ambient conditions (20 ± 3°C and RH of 70 ± 5%). After the shelf life,CA and MA maintained fruits with a higher hue angle. The treatment of 1-MPC added to CA and MA provided greater force for pulp penetration. CS, AC and MA, added to the treatment with 1-MCP, are promising technologies to be used in the storage of dragon fruit.(AU)


A rápida perecibilidade dos frutos de pitaia exige que sejam adotadas estratégias para prolongar sua vida útil em pós-colheita, a fim de reduzir perdas, manter a qualidadee aumentar o retorno financeiro da atividade econômica. O objetivo deste trabalho foi avaliar o efeito de condições de armazenamento em combinação com a aplicação de 1-metilciclopropeno (1-MCP) sobre a manutenção da qualidade de pitaia vermelha. Os tratamentos avaliados foram armazenamento refrigerado (AR; 21 kPa O2+ 0,03 kPa CO2), atmosfera controlada (AC; 2 kPa O2+ 5 kPa CO2) e atmosfera modificada (AM; bolsas de polietileno de baixa densidade de 40 µm de espessura) combinados ou não coma aplicação de1-MCP (300 nL.L-1), com quatro repetições por tratamento. Os frutos de todos os tratamentos foram armazenados durante 20 dias a 13 ± 2°C e umidade relativa (UR) de 90 ± 5% seguidos de 3 dias de exposição em condições ambiente (20 ± 3°C e URde 70 ± 5%). Após o período de prateleira, AC e AM mantiveram frutos com maior ângulo hue. O tratamento de 1-MPC somado a AC e AM proporcionou maior força para penetração da polpa. O AR, a AC e a AM, somadas ao tratamento com 1-MCP, são promissoras tecnologias a serem empregadas no armazenamento de pitaia.(AU)

<b>Background and Objective:</b> Control of the stored date insects by an eco-friendly method is essential to maintain the fruit for prolonged periods, especially that dates are eaten fresh. The search for a safe method, as an alternative to commonly used chemical pesticides, is needed. The objective is to investigate CO<sub>2</sub> enriched atmosphere on the Mortality Percentage (MP) of the Saw-toothed grain beetle, <i>O. surinamensis</i>, life stages with special emphasis on reducing damage to stored dates. <b>Materials and Methods:</b> The effect of high levels of CO<sub>2</sub> as an alternative control method against the Saw-toothed grain beetle, <i>Oryzaephilus surinamensis</i> L., at different life stages was studied on infested 'Saqie' dates. Four CO<sub>2</sub> pressures (25, 50, 75 and 90 kPa, balance is nitrogen) were tested for 6, 12, 18, 24, 48, 72 and 96 hrs intervals. The response of different life stages of <i>O. surinamensis</i> to the different treatments varied according to CO<sub>2</sub> level, developmental stage and exposure period. <b>Results:</b> Mortality (%) was higher during the larval stage, followed by adults, pupae and eggs, in descending order. The larvae and adult stages were more sensitive to CO<sub>2</sub> treatment than the pupal and egg. Exposure time was more effective on eggs, larval and adult MP than the CO<sub>2</sub> atmosphere level. Mortality% at 96 hrs exposure time was almost 100% with CO<sub>2</sub> atmospheres of 50, 75 and 90 kPa. Mathematical equations were developed to model the relationship between mortality% and CO<sub>2</sub> treatments using multiple regression analyses for each life stage. <b>Conclusion:</b> The results confirmed that CO<sub>2</sub> could be applied to final food products during packaging to control the residual occurrence of insect pests after storage and before the packaging process to prevent further infestation in the final packages.

Guava is a fruit rich in antioxidants and its value can be enhanced by fresh-cut processing, which increases convenience for consumption. The objective of this study was to evaluate the changes in bioactive compounds, total antioxidant activity (TAA) and microbial quality in slices of fresh-cut (FC) 'Paluma' guava coated with chitosan at 2% (Q), calcium chloride at 1% (CC), calcium chloride at 1% + sodium alginate at 1% (CC + A), calcium chloride at 1% + chitosan at 2% (CC + Q), and control (T - without coating). Coated slices were packed in trays, wrapped with PVC film and kept at 3 ± 1 °C and 75 ± 4% RH for 12 days and evaluated for ascorbic acid, lycopene, ß-carotene, total extractable polyphenols (TEP), and TAA by ABTS+- and DPPH . Ascorbic acid content of slices did not differ by coatings, but TEP was higher in slices coated with Q. The TAA by DPPH was higher in slices coated with Q, however, by ABTS+- it was higher in those coated with Q, CC and CC + Q. No thermotolerant coliforms or Salmonella were detected in FC guava from any treatment. However, slices coated with Q showed the lowest counts of total coliforms and molds and yeasts. Therefore, the application of Q coating provided microbiological safety to FC guava, still maintaining the levels of bioactive compounds and TAA superior to the control slices, which can characterize this as a healthy FC product, with superior functional potential.(AU)


Goiaba é um fruto rico em antioxidantes e pode ser potencializado pelo processamento mínimo, que aumenta a conveniência ao consumo. Assim, o objetivo deste trabalho foi avaliar as mudanças nos compostos bioativos, atividade antioxidante total (AAT) e qualidade microbiológica de goiaba 'Paluma' minimamente processada (MP) em fatias e recobertas com quitosana a 2% (Q), cloreto de cálcio a 1% (CC), cloreto de cálcio a 1% + alginato de sódio a 1% (CC + A), cloreto de cálcio a 1% + quitosana a 2% (CC+Q) e testemunha (T - sem recobrimento). Fatias recobertas foram embaladas em bandeja com filme de PVC de 12 µm e mantidas a 3±1 °C e 80±4% U.R durante 12 dias. As avaliações foram ácido ascórbico (AA), licopeno, ß-caroteno, polifenóis extraíveis totais (PET) e atividade antioxidante total (AAT) pelos métodos ABTS+- e DPPH. O conteúdo de AA das fatias não diferiu entre recobrimentos, mas o de PET foi superior nas recobertas com Q. A AAT pelo DPPH foi superior em fatias recobertas com Q, entretanto, pelo ABTS+- foi superior nas recobertas com Q, CC e CC + Q. Não foi detectado coliformes termotolerantes nem Salmonella em goiaba MP de nenhum tratamento. Fatias recobertas com Q apresentaram contagens mais baixas de coliformes e bolores e leveduras. Portanto, a aplicação dos recobrimentos Q conferiu segurança microbiológica à goiaba MP, ainda mantendo os teores de compostos bioativos e TAA superiores às fatias controle, o que pode caracterizar este como um produto MP saudável, com potencial funcional superior.(AU)

In this study cut, pineapple slices of 1 cm thick were packaged and stored at different temperatures and equilibrium modified atmosphere packages (EMAPs) to determine changes of color and firmness over time to represent physicochemical shelf life. From the experimental data, a variance analysis was performed to determine the effect of temperature and O2 level on the evolution of color (CIELAB coordinates) and firmness. It was observed that the evolution in L* , a* , and b* coordinates is independent on O2 concentration in the EMAP system. After that, suitable models were adjusted to represent the change of the quality properties as a function of temperature by using first-order models to represent color and a power model for firmness. Likewise, a modified normal distribution function was adjusted to represent the coefficient of firmness loss depending on the O2 level besides the temperature effect. The firmness model was used to obtain a suitable equation to predict shelf life of the pineapple slices for different EMAP systems. Finally, a validation experiment was performed at 8 °C obtaining a high capacity of prediction (R2 adj > 0.90) compared with the experimental data. The adjusted model can be used to configure a satisfactory EMAP system for the best preservation of minimally processed pineapple from the predicted evolution of color, firmness, and shelf life depending on temperature and O2 concentration. PRACTICAL APPLICATION: In this work, we built a mathematical model to simulate the shelf life of pineapple cut into slices based on changes in color and firmness and as a function of temperature and oxygen level. These properties are truly relevant because they are very clear evidence of the fruit deterioration, and for that reason, we chose them for the model. The model we developed can be applied in retail and supermarket systems to determine precisely how long the product on the shelf can last before being disposed of, reducing material losses.

Abstract: The aim of this study was to investigate the effects of different packaging systems on the shelf life of refrigerated ground beef. The ground beef samples were packaged as follows: AA (100% ambient air), 90O2:10CO2 (90% O2 and 10% CO2), 80O2:20CO2 (80% O2 and 20% CO2), 70O2:30CO2 (70% O2 and 30% CO2), 60O2:40CO2 (60% O2 and 40% CO2), 50O2:50CO2 (50% O2 and 50% CO2), 100O2 (100% O2), and VP (vacuum packaging). All treatments were analyzed daily for O2 and CO2 levels, pH, filtration time, total volatile basic nitrogen (TVB-N), aerobic mesophilic heterotrophic bacteria (AMHB), and aerobic psychrotrophic heterotrophic bacteria (APHB) over 20 days at 2 °C. All MAP systems had a decrease of O2 and an increase of CO2 levels during storage period (p < 0.05). Overall, the MAP systems were similarly able to decrease the pH and retard the increase of TVB-N and filtration time over the storage period (p > 0.05). Moreover, the MAP systems increased the lag phase and/or the generation time of both AMHB and APHB, extending the shelf life by 3 (90O2:10CO2), 4 (70O2:30CO2 and 100O2), and 5 days (80O2:20CO2, 60O2:40CO2, 50O2:50CO2, and VP). All MAP systems were equally effective in retarding physicochemical degradation; however, 80O2:20CO2, 60O2:40CO2, 50O2:50CO2, and VP were the most effective in impairing bacterial growth and extending the shelf life of ground beef stored under refrigeration.

Xyloglucan was extracted from Tamarindus indica (T. indica) seeds from industrial residue, presenting a glucose, xylose and galactose ratio of 1.41:1.31:1 respectively, with aim of elaborating a film. A Central Compound Rotatable Design (CCRD) with Xyloglucan variables from T. indica (XylTi) and Glycerol (Gly) was used to prepare the film. The films were analyzed for water vapor permeability, thickness, opacity, moisture, tensile strength, elongation at break, Scanning Electron Microscopy, thermogravimetric analysis and FT-IR. A significant (p < 0.05) influence of XylTi and Gly was observed, resulting in an increase in moisture (24.09%), tensile strength (20.70 MPa) and elongation at break (50.84%), with an increase in the independent variables. The best results for this work proposal were the film with 4.5% XylTi/1.5% Gly (T3). The T3 film was used in evaluating the efficiency of the optimized film for packaging cut-up 'Sunrise Solo' papaya, and the results showed a higher mass loss than the PVC film and statistically the same for ethylene and carbon dioxide production. It is concluded that films made with xyloglucan from T. indica seeds obtained from the residue of the fruit pulp industry presented good physical characteristics, highlighting the T3 elaboration, and are viable for manufacturing food packaging.

The effect of different modified atmosphere packaging regimes on the behavior of Salmonella spp. on minced meat was studied. Minced meat was experimentally contaminated with a Salmonella spp. cocktail (S. Enteritidis, S. Typhimurium, S. Infantis and S. Arizonae), packaged under vacuum or modified atmosphere with initial headspaces containing 20%O2/50%CO2/30%N2 and 20%O2/30%CO2/50%N2) and stored at 3 ± 1 °C for 12 days. Samples were analyzed for Salmonella spp., viable and lactic acid bacteria count every third day. Salmonella spp. counts decreased during storage in all packaging types, with reductions of about 1.5 log CFU/g. A significant difference (p < 0.01) was noted between Salmonella spp. counts in meat packaged in vacuum and modified atmospheres, although there was no significant difference in Salmonella spp. count between meat packaged in 50%CO2, and meat packaged in 30%CO2. At the end of the study, there were significant differences (p < 0.01; p < 0.05) in total viable and lactic acid bacterial counts between meat packaged in vacuum and modified atmosphere, and the lowest counts were noted in meat packaged in modified atmosphere with 50%CO2.(AU)

A fisiologia pós-colheita da carambola é marcada por uma série de transformações fisiológicas e bioquímicas que favorecem a perda de qualidade do frutoao longo doperíodo de armazenamento, podendo-se destacar a elevada perda de água, o amolecimento da polpa, a perda de coloração natural, dentre outros. Com o intuito de minimizar esses efeitos o presente trabalho teve por objetivo avaliar diferentes concentrações de quitosana como revestimento na preservação dos constituintes físico-químicos durante o armazenamento refrigerado de carambolas. O experimento foi conduzido em delineamento inteiramente casualizado sob arranjofatorial 4x5, isto é, quatro concentrações de quitosana (0, 1, 2 e 3%) e cinco tempos de armazenamento (0, 4, 8, 12 e 16 dias). Em intervalos de quatro dias determinou-se: perda de massa fresca, firmeza dos frutos, coloração da casca (H° e C), sólidos solúveis totais, acidez titulável, relação SS/AT, pH econteúdo de vitamina C total. O revestimento com 2 e 3% de quitosana resultaram em frutos mais firmes, com menor perda de massa, da coloração natural e do conteúdo de vitamina C total, além de não promover alterações quanto ao sabor através do conteúdo de sólidos solúveis, acidez titulável e pH.


The post-harvest physiology of the carambola is marked by a series of physiological and biochemical transformations that favor the loss of fruit quality during the storage period, being it possible to highlight the high loss of water, the softening of the pulp, the loss of natural coloration , among others. In order to minimize these effects, the present work aimed to evaluate different concentrations of chitosan as a coating in the preservation of physicochemical constituents during refrigerated storage of carambolas. The experiment was conducted in a completely randomized design under a 4x5 factorial arrangement, that is, four concentrations of chitosan (0, 1, 2 e 3%) and five storage times (0, 4, 8, 12 and 16 days). At four-day intervals, fresh weight loss, fruit firmness, peel color (H ° and C), total soluble solids, titratable acidity, SS / AT ratio, pH and total vitamin C content were determined. The 2 and 3% chitosan coating resulted in firmer fruits with lower mass loss, natural coloring and total vitamin C content, and did not promote flavor changes through the content of soluble solids, titratable acidity and pH.

Foram estudados diferentes diluentes no processo de refrigeração do sêmen da garoupa-verdadeira. Inicialmente, a taxa e a duração da motilidade e a concentração espermática foram avaliadas, caracterizando a qualidade do sêmen fresco. Para os testes de refrigeração a 4ºC, diferentes diluentes foram testados em atmosfera normal e modificada (100% oxigênio). O sêmen fresco apresentou concentração espermática de 3,1±0,2 x 109 células mL-1, motilidade média de 90%, permanecendo móvel, em média, por 3.060 segundos. No experimento de refrigeração, a taxa e a duração média da motilidade foram mantidas adequadas durante 144 horas para o diluente A (70%; 3100 segundos) em atmosfera normal. Na atmosfera modificada, a qualidade do sêmen caiu drasticamente durante as primeiras 24 horas, independentemente do diluente empregado, não propiciando vantagem em sua utilização. A refrigeração do sêmen da garoupa-verdadeira permite manter por até 144 horas uma apropriada qualidade espermática.(AU)

Initially, motility rate, motility time, and sperm density were analyzed to characterize the fresh sperm quality. Different diluents were used in the refrigerated storage sperm at 4ºC in normal atmosphere and modified atmosphere (100% oxygen). The high rate of fruit decay and berry drop reduces quality and increases postharvest losses in "Isabel" grapes, requiring pre-harvest and postharvest management practices available to the small-scale farmer, which maintain quality and extend postharvest life of the clusters. The objective of this study was to evaluate the effect of the pre-harvest application of CaCl2 and Citrus Biomass-based elicitor in "Isabel" grapes, in the maintenance of quality during storage at room conditions under ambient and modified atmospheres. The experiment was conducted in a randomized block design with 8 replicates, in the field located at the municipality of São Vicente Férrer-PE, Brazil. "Isabel" vines were treated 28 days before harvest with: Citrus Biomass-based elicitor (CB), Citrus Biomass-based elicitor + CaCl2 (CB + C), CaCl2 (C) and Control (T) - without application. Grapes harvested in the commercial maturity were stored in a 4 × 2 × 7 factorial arrangement, with 4 treatments (applied in the field), 2 storage conditions, ambient (AA) and modified (AM) atmospheres, under room conditions (25 ± 2 C and 75 ± 2% RH) and 7 evaluation periods in four replicates. The application of CaCl2 and CB-based elicitor reduced the berry drop index (55 and 75%, respectively), the decay and weight loss of "Isabel" grape clusters. These treatments, associated or not, increased MA efficiency in maintaining cluster quality. The ‘Isabel grape berry drop index was directly influenced by the SS/TA ratio, pH and fruit decay index.(AU)


O alto índice de degrana e podridão das bagas reduzem a qualidade e elevam as perdas pós-colheita em uvas Isabel, demandando técnicas de manejo na pré e pós-colheita acessíveis ao pequeno produtor, que mantenham a qualidade e ampliem a vida útil pós-colheita dos cachos. Videiras Isabel foram tratadas, 28 dias antes da colheita, com: elicitor de Biomassa Cítrica (BC), elicitor de Biomassa Cítrica + CaCl2 (BC+C), CaCl2 (C) e Testemunha (T) - sem aplicação.
