RESUMEN

Fu brick tea (FBT) is popular for its unique 'fungal flower' aroma, however, its key odor-active compounds are essentially unknown. In this study, the odor-active compounds of "stale-fungal" aroma (CJX), "fresh-fungal" aroma (QJX), and "fermentation-fungal" aroma (FJX) types FBT were extracted and examined by headspace solid phase microextraction (HS-SPME) combined with gas chromatography-mass spectrometry (GC-MS) and gas chromatographyolfactometry (GC-O). A total of 43 volatile and 38 odor-active compounds were identified by these methods. Among them, the content of dihydroactindiolide (4596-13189 µg/L), (E)-linalool oxide (2863-6627 µg/L), and benzyl alcohol (4992-6859 µg/L) were highest. Aroma recombination experiments further verified that these odor-active compounds could be simulated the overall aroma profile of FBT successfully. Furthermore, omission experiments confirmed that 15, 20, and 15 key odor-active compounds in CJX, QJX, and FJX FBT, respectively. This study will provide a theoretical basis for comprehensively understanding the formation of characteristic aromas in FBT.

Essential oils extracted by hydro-distillation form date palm spathe (byproduct from date palm plants) were tested for their antibacterial activity against some food-borne pathogens. Listeria monocytogenes ATCC 7644, Staphylococcus aureus ATCC 29243, Salmonella enterica subsp. enterica serovar Enteritidis ATCC 13076 and E. coli ATCC 25922 were inhibited (11-13 mm inhibition zones) by spathe essential oils (SEOs) using the agar well assay (in vitro test). Staphylococcus aureus ATCC 29243 and E. coli ATCC 25922 were not detected in chicken meat treated with 1% (v/w) SEOs and subjected to abusive storage conditions (20 °C for 18 h). When treated with 0.5% SEO, counts of S. aureus and E. coli increased by only 0.2 and 0.7 log10 cfu/g, respectively, compared to the initial inoculated level in meat samples stored at 20 °C for 18 h. SEOs possessed DPPH radical scavenging activity with IC50 of 0.61 µg/ml. Forty one compounds were major constituents detected by GC-MS analysis of SEOs. 3,4-Dimethoxytoluene (38.12%) and 5,9-Undecadien-2-one (12.45%) were major compounds in extracted oils. Density and refractive index of SEOs were 0.987 and 1.5905, respectively. SOEs are added-value products from date palm, which could be employed in food industry and pharmaceuticals. The study is the first report on antibacterial activity of SEOs against L. monocytogenes ATCC 7644 and other standard food-borne pathogens in agar diffusion assay and food model (chicken meat). DPPH radical scavenging activity of SEOs has not previously been documented.

Date palm, Phoenix dactylifera L. (Arecaceae), grows commonly in the Arabian Peninsula and is traditionally used to treat various diseases. The aim of the present study was to identify chemical composition of the essential oil and to investigate the repellent activity. The essential oil of P. dactylifera was obtained by hydrodistillation from the spathe, a specialized leaf structure that surrounds the pollinating organs of the palm. The oil was subsequently analyzed by GC-FID and GC-MS. The oil showed promising repellent activity against yellow fever mosquito - Aedes aegypti. Sixteen components were characterized, constituting 99% of the oil. The main components were 3,4-dimethoxytoluene (73.5%), 2,4-dimethoxytoluene (9.5%), ß-caryophyllene (5.5%), p-cresyl methyl ether (3.8%), and caryophyllene oxide (2.4%). The minimum effective dosage (MED) for repellency for the P. dactylifera oil was 0.051mg/cm(2), which had moderately lower potency compared to reference standard N,N-diethyl-3-methylbenzamide, DEET (0.018mg/cm(2)) in the "cloth patch assay". The five major compounds were individually assayed for repellency to determine to what extent each is responsible for repellency from the oil. 3,4-Dimethoxytoluene and 2,4-dimethoxytoluene showed the best repellent activity with the same MED value of 0.063mg/cm(2), respectively. The results indicate that these two constituents which comprise a large proportion of the P. dactylifera oil (83%) are likely responsible for the observed repellent activity. In this aspect, the P. dactylifera spathe oil is a sustainable, promising new source of natural repellents.
