Processes of water retention and movement and the hydraulic conductivity are altered in the rhizosphere. The aim of this study was to investigate the physical-hydric properties of soil aggregates in the rhizosphere of annual ryegrass (Lolium multiflorum) cropped in a Kandiudalfic Eutrudox, taking into account aspects related to soil aggregate stability. Soil aggregates from rhizosphere soil (RZS) and soil between plant rows (SBP) were used to determine soil water retention curves (SWRCs) and saturated hydraulic conductivity (Ksat). In addition, properties related to soil aggregate stability, such as water-dispersible clay, soil organic carbon (SOC), and microbial activity, were also assessed. The higher microbial activity observed in the RZS was facilitated by increased SOC and microbial activity, resulting in improved soil aggregation (less water-dispersible clay). For nearly all measured matric potentials, RZS had a higher water content than SBP. This was attributed to the stability of aggregates, increase in SOC content, and the root exudates, which improved soil water retention. The increase in total porosity in RZS was associated with improved soil aggregation, which prevents deterioration of the soil pore space and results in higher Ksat and hydraulic conductivity as a function of the effective relative saturation in RZS compared to SBP.

Bacterial cellulose (BC) is an exopolysaccharide produced by bacteria that has unusual structural features and is more refined than plant cellulose. BC has recently gained more attention in a variety of fields including biological and biomedical applications due to its excellent physiochemical properties including easy biodegradability, better water holding capacity, high tensile strength, high thermal stability, and high degree of polymerization. However, application of BC at industrial scale is still limited due to its high production cost and lesser yielding strains. The present study is an attempt to isolate and characterize a novel BC-producing bacterial strain. The bacterial strain S5 has resulted into maximum cellulose production of 4.76 ± 0.49 gL-1 (30°C, pH 7.0). The strain has been further identified as Stenotrophomonas sp. Derivation of nutritional and cultural conditions has resulted into 2.34-fold enhanced BC production (banana peel powder, peptone, tartaric acid, pH 7, 30°C). FTIR spectrum of BC revealed characteristic absorption bands which could be attributed to the O-H band, C-H stretching, C-O-C stretching band, O-H bending, and >CH2 bending, indicative of the ß-1,4 glycosidic linkages of cellulose. Thermogravimetric analysis has also revealed stability of polysaccharide backbones and characteristic weight loss points. Employment of banana peel powder has appeared as a proficient low-cost source for large-scale economic production of BC for industrial applications.

Groundwater helps overcoming periods of drought buffering their effects on water supply to people, natural ecosystems and the economy. Following the latest Conference of the Parties (COP27), groundwater research gained renewed impulse because the Parties committed themselves to invest on environmental dimensions of water security related with aquifer characterization and protection. In that context, the purpose of this study was to help providing an integrated assessment to some fundamental issues about groundwater security, summarized as the three "how"s: how much, how ready and for how long can groundwater be delivered from watersheds? A complementary goal was to identify and quantify the role of watershed characteristics controlling these "how"s. The methodology combined hydrologic modeling and GIS and the results for the test site (Paraopeba River basin, Brazil) were: (1) the studied river tributaries mostly drain regolith aquifers with short hydrologic turnover times (1.3-23.7 yr) and small aquifer mobile storages (0.1-1.3 m), but high specific yields (0.2-8.2 m/yr), being generally prone to hydrologic droughts; (2) the specific discharge is primarily elevation controlled (via precipitation increases with altitude), but relates positively with drainage density as well; (3) the mobile storage in the Quadrilátero-Ferrífero mountain is larger than elsewhere, being influenced by a local geomorphologic setting (higher coverage with concave hillslopes); (4) the groundwater contribution to streamflow discharge is high (> 50 %, on average), being improved with the coverage of argisols; (5) vulnerability to droughts could be alleviated through expansion of water-retention infrastructure in specific regions, as well as through land use conversions targeting reduced evapotranspiration or sustainable land management of argisol and concave surface landscapes. Although applied to a specific catchment, our results stand on a site-independent methodological framework. Thus, the understanding about groundwater security gained with this study can be inspiring to other workers dealing with tropical climate landscapes.

Hydrogel-type absorbent materials are currently a technological alternative for improving water retention in the soil and reducing nutrient loss by leaching and evaporation. This study aimed to evaluate the application of a new hydrogel based on silk sericin (SS) as a water retention material in soil. The morphology of the hydrogel was characterized using Scanning Electron Microscopy (SEM), and its impact on moisture retention in sandy loam soil (SLS) under different levels of matric pressure (MP) was evaluated. Additionally, water content data were collected over time for both SLS and SLS with hydrogel (SLS + H), and the data were used to fit predictive models. The results indicate that the hydrogel had a porous morphology that promoted water retention and soil release. Under a MP of 0.3 bar, the use of the hydrogel increased water retention by 44.70% with respect to that of SLS. The predictive models developed were adequately adjusted to the behavior of the moisture data over time and evidenced the incidence of the absorbent material on the dynamics of the moisture content in the soil. Therefore, these models could be useful for facilitating subsequent simulations or for designing automatic soil moisture control systems oriented to smart farming.

This research was carried out with the objective of evaluating the effects of using a chilling water sprinkler system during the cooling process of swine carcasses on the quantitative and qualitative parameters of carcass and meat. A total of 220 swine carcasses were divided in a completely randomized experiment and two treatments: (1) CONTROL, no water spraying; (2) SPRAY, with water spraying during cooling. Surface and internal temperature of carcasses throughout the cooling process, initial and final pH, and microbiological analyses of carcass surface were evaluated. Samples of the Longissimus lumborum (LL) were collected for analysis of color, cooking loss (CL), shear force (SF), and drip loss (DL). Data were submitted to analysis of variance through the SAS MIXED procedure adopting the most adequate model with treatments as fixed effects and pertinent random effects for each data set. The use of spray-chilling in the initial cooling process accelerates the surface and internal temperature decrease of swine carcasses, which may be a viable technological resource in swine industry.

The characterization of substrate properties supports the correct choice of components and directs management decisions in container cultivation. There are several systems of analysis, however, the routine procedures to determine the water retention curve (WRC) are time consuming and inaccurate. This study proposed a reproducible, less time-consuming, and easy to perform method for physical characterization of substrates. We used Sphagnum peat, coconut powder, carbonized rice husk, expanded vermiculite, and expanded clay in isolation. The WRC was obtained at tensions 0, 10, 50, and 100 hPa using the method of Büchner funnel, the European standard (CEN-EN13041), and by the centrifugation method of samples. In centrifugation, tensions were simulated by combining the angular velocity, sample height, and radius measured from the sample outermost point to the central point of the centrifuge. Three rotations were applied (230; 520 and 730 rpm), testing the centrifugation time for each tension and then the volumetric water content was compared between the methods. The results showed a positive correlation (p < 0.001) between the centrifugation and standard methods, considering that the centrifugation time required for moisture stabilization varied according to the material analyzed and the tension applied. However, the time required to obtain a report was reduced by half. Sample centrifugation is a promising method, ensuring that the tensile force actually acts on the entire sample to determine the water retention curve of the substrate also reducing the duration of the analyses.

RESUMEN Obtener la envolvente de ruptura de suelos no saturados requiere de equipos especializados, de elevado costo y difícil acceso. Sin embargo, a través de ensayos de laboratorio simples combinados como corte directo, tracción indirecta y succión, es posible determinar la envolvente. La presente investigación busca, por tanto, validar dicha metodología, en un material limo de origen residual de la ciudad de Medellín-Antioquia, Colombia, compactado a la máxima densidad a través del ensayo Proctor normal. La validación se efectúa por medio de la repetitividad de una serie de ensayos de corte directo para diferentes valores de succión; comprobando que, es posible encontrar la envolvente de ruptura al corte de un suelo fino residual compactado, para distintas condiciones de succión, por medio de los ensayos de laboratorio de corte directo en condición consolidada y drenada, succión por el método del papel filtro y tracción indirecta, cuando no se cuenta con equipos de corte con succión controlada.


ABSTRACT Obtaining the failure envelope of unsaturated soils requires specialized equipment, which is expensive and difficult to access. Nevertheless, by combining simple laboratory tests like direct shear test on saturated samples, indirect tension test, and soil suction measurements by filter paper it is also possible to determine the envelope. This research aims to validate this latter methodology on a residual origin silt material from the city of Medellin, Colombia, which is compacted to the maximum dry density through the standard proctor test. The validation is carried out by repeating a series of direct shear tests for different suction values. It was verified that it is possible to find the shear failure envelope of a compacted fine-grained residual soil for different suction conditions, using the direct shear test under consolidated drained conditions, suction by the filter paper method, and the indirect tension test, when no suction controlled shear equipment is available.


RESUMO A obtenção da envoltória de ruptura de solos não saturados com controle de sucção requer equipamentos especiais, que são caros e de difícil acesso. No entanto, através de ensaios simples laboratoriais combinados, tais como os de cisalhamento direto, tração indireta e sucção, é possível determinar a envoltória de resistência. A presente investigação procura validar esta metodologia, usando um material siltoso de origem residual da cidade de Medellin-Antioquia, Colômbia, compactado na condição de densidade máxima obtida no ensaio de compactação Proctor normal. A validação é feita por meio da realização de uma série de ensaios de cisalhamento direto para diferentes valores de sucção; mostrando que é possível encontrar a envoltória de ruptura de um solo fino residual compactado, para diferentes condições de sucção, por meio de ensaios laboratoriais de cisalhamento direto consolidados drenados, sucção determinada pelo método do papel de filtro e ensaio de tração indireta, quando não se dispõe de equipamento de cisalhamento direto à sucção controlada.

The reuse of food industry by-products constitutes one of the essential pillars of the change from a linear to a circular economic model. Drying is one of the most affordable techniques with which to stabilize by-products, making their subsequent processing possible. However, it can affect material properties. The objective of this study was to assess the effect of the drying temperature on the drying kinetics and final quality of the main artichoke processing by-products, bracts and stems, which have never been studied as independent materials. For this purpose, air drying experiments at different temperatures (40, 60, 80, 100 and 120 °C) were carried out. The alcohol insoluble residue (AIR) and the total phenolic content (TPC), antioxidant capacity (AC) and vitamin C (VC) of the fresh and dried samples were determined. The bracts dried faster than the stems, increasing drying rate with temperature. The two by-products presented relatively large amounts of AIR, the content being higher in bracts, but better functional properties in stems. The TPC, AC and VC values of the dried samples decreased in relation to the fresh samples, with the temperatures of 40 °C (bracts) and 120 °C (stems) being the most adequate for the purposes of preserving these characteristics.

Current available soil information allows building baselines to improve research, such as sustainable resource management; however, its use requires analysis of accuracy and precision that describes specific variables on local and global scales. Therefore, this study evaluated differences in the spatial distribution of water retention capacity (WRC) of the soil at a depth of 0.3 m, calculated from local general soil surveys and the global gridded soil information system (SoilGrids), using detailed or semi-detailed soil surveys as a reference, in two regions of Colombia (A and B). The qualitative and statistical analyses evaluated differences in WRC surfaces generated by the information sources. Neither information sources described WRC accurately, achieving correlations between −0.15 and 0.49 and average absolute errors between 9.65 and 19.52 mm for zones A and B, respectively. However, studies on the local scale remain within the ranges observed in the most detailed local studies. The use of products on the global scale is subject to regional analyses; nevertheless, they can be included as a covariate in digital soil mapping studies on more detailed scales.(AU)

RESEARCH BACKGROUND: Retort processing is one of the most widely used methods of thermal inactivation that provides convenient, ready-to-eat foods. Although this technology remains widespread, it can be revamped through processing of novel ingredients such as gums. This article aims to investigate the effect of the hydrocolloids collagen, soy protein isolate, carrageenan and modified starch with different salt mass fractions on the retorted meat products. EXPERIMENTAL APPROACH: Firstly, solutions of the added hydrocolloids of different salt mass fractions in order to stimulate the salting-in effect were studied. Lipid oxidation, syneresis and water activity were analysed during shelf life to find the best overall treatments. Lastly, sensory and texture analyses were then performed to assess the impact of the added hydrocolloids. RESULTS AND CONCLUSIONS: Yield, cooking loss and water-holding capacity had better results when higher salt mass fractions with hydrocolloids were used. The physicochemical results distinguished collagen from the other tested hydrocolloids. Syneresis remained in similar ranges regardless of the treatment. No difference was observed in water activity either. However, sterilization, vacuum sealing and the addition of a hydrocolloid contributed to low oxidation levels in all treatments. Lastly, sensory, texture and shear force analyses confirmed that the products with collagen were harder and firmer than the control samples, which explains the preference of control samples by the panellists. Nevertheless, assessors did not perceive the presence of collagen. NOVELTY AND SCIENTIFIC CONTRIBUTION: Physicochemical and sensory characteristics of the retorted meat can be considerably improvedwhen brine and hydrocolloids are combined with the retort technology.

ABSTRACT: Artichoke (AF), eggplant (EF) and tomato (TF) flour were used as nutritional ingredients for wheat dough. A replacement of wheat flour with 5 or 10% of these vegetable flour was performed. Hydration properties (equilibrium adsorption isotherms, solvent retention capacity), capacity of blends for dough development (farinographic assay) and the proximal composition of flours were evaluated. Samples with high content of soluble sugar and low of insoluble fiber (EF and TF) presented higher equilibrium water sorption at 20 °C and 40 °C, at aw > 0.5. The solvent retention capacity of wheat-vegetable flour blends increased mainly at higher levels of replacement (10%) and with samples of artichoke and eggplant. The highest and the lowest stable dough with 10% of replacement was obtained with AF and EF, respectively. Water sorption and absorption parameters should be previously determined so as to obtain the optimum dough structure that lead to a high technological quality bread.

The incorporation of the hydrogel into the substrate used in the forest nursery promotes improvements in its physical-chemical attributes. However, several factors influence the hydrogel efficiency, such as the increase of salts, promoted by fertilizer of the substrate. Therefore, this study aimed to evaluate the effects of the incorporation of fertilizer levels and hydrogel doses on the physical-chemical attributes of a substrate to produce forest seedlings. Different levels of basic fertilizer commonly used in the nursery (100%, 50% and 0%) and different doses of the hydrogel (0, 1, 2 and 3 g L-1) were incorporated into the substrate Tropstrato Florestal®, consisting of 12 treatments in a 3 x 4 factorial scheme. A sample of the substrate in each treatment was sent for analysis of its physical and chemical attributes. To evaluate the effect of the treatments on the physical-chemical attributes of the substrate, was used the multivariate principal components analyses. The levels of fertilizer and hydrogel doses were correlated with the attributes of the substrates obtained in each treatment. The incorporation of different fertilizer levels and hydrogel doses to the substrate modified their chemical and physical attributes. Fertilizers have influenced mainly the chemical attributes of the substrate, whereas hydrogels have influenced the physical attributes, mainly those related to water retention capacity and availability.


A incorporação do hidrogel ao substrato utilizado no viveiro florestal promove melhorias em seus atributos físico-químicos. Porém vários fatores influenciam na eficiência do hidrogel, como o aumento de sais, promovido pela adubação do substrato. Portanto, este estudo teve como objetivo avaliar os efeitos da incorporação de níveis de adubação e doses de hidrogel sobre os atributos físico-químicos de um substrato para a produção de mudas florestais. Foram incorporados ao substrato Tropstrato Florestal® diferentes níveis da adubação de base comumente utilizada no viveiro (100%, 50% e 0%) e diferentes doses do hidrogel (0, 1, 2 e 3 g L-1), consistindo em 12 tratamentos em esquema fatorial 3 x 4. Uma amostra do substrato em cada tratamento foi encaminhada para análise de seus atributos físicos e químicos. Para avaliar o efeito dos tratamentos sobre os atributos físico-químicos do substrato foi utilizada a análise multivariada de componentes principais. Os níveis de adubação e doses de hidrogel foram correlacionados com os atributos dos substratos obtidos em cada tratamento. A incorporação de diferentes níveis de adubação e doses de hidrogel ao substrato modificaram seus atributos químicos e físicos. A adubação influenciou principalmente os atributos químicos do substrato, enquanto que o hidrogel os atributos físicos, principalmente os relacionados à capacidade de retenção e disponibilidade de água.

Considering the importance of soil water retention for agricultural and environmental purposes, the objective of this study was to assess three pedotransfer functions (PTFs) used to estimate the soil moisture at field capacity (FC) based on soil attributes easily determined. A collection of 17 soils from the Cerrado and Pantanal biomes, including surface and subsurface horizons, was used. PTF-1 considers clay, organic matter, coarse sand, and microporosity; PTF-2 clay, total sand, and organic matter; and PTF-3 only microporosity. The estimated FC values were correlated to soil moisture values measured at different soil water potentials (0, 6, 10, 33, 100, 300, and 1500 kPa) to verify which potential corresponded to estimated FC. The data were subjected to regression analysis and Mann-Whitney rank-sum test to compare predicted and measured values and to principal component analysis (PCA). The analysis of the full dataset indicated that there was a strong correlation (R 0.84­0.91; R2 0.71­0.82; RMSE 0.07­0.09) between estimated FC and soil water retention measured at potentials of 10 kPa and 33 kPa. FC estimated by PTF-3 correlated better with water holding capacity at 6 kPa. When the PTFs were reapplied to homogeneous soil groups (identified by PCA analysis), the correlation between predicted and measured FC was decreased.


Considerando a importância da retenção de água no solo para fins agronômicos e ambientais, objetivou-se com este trabalho avaliar três funções de pedotransferência (FP) para estimativa da capacidade de campo (CC) com base em atributos de solo facilmente determinados. Uma coleção de 17 solos dos biomas Cerrado e Pantanal, incluindo amostras superficiais e subsuperficiais, foram utilizadas. FP 1 considera o conteúdo de argila, matéria orgânica, areia grossa e microporosidade. FP 2 considera argila, areia total e matéria orgânica. A FP 3 leva em consideração apenas microporosidade. Os valores estimados de CC foram correlacionados aos valores de umidade obtidos em diferentes potenciais (0, 6, 10, 33, 100, 300, and 1500 kPa) com o intuito de verificar qual potencial corresponde à CC estimada. Os dados foram submetidos à análise de regressão, ao teste Mann-Whitney rank-sum para comparar valores medidos e estimados e realizada análise de componentes principais (PCA). Considerando todo o conjunto de dados, foi obtida uma forte correlação (R 0.84­0.91; R2 0.71­0.82; RMSE 0.07­0.09) entre CC estimada e a umidade do solo obtida nos potenciais de 10 kPa e 33 kPa. A CC estimada pela FP 3 correlacionou melhor com a retenção de água no potencial de 6 kPa. Quando as FP's foram reaplicadas em grupos de solos homogêneos (identificados pela PCA), a correlação entre valores estimados e medidos diminuiu.

Diaspore structure has been hypothesised to play a role in seed viability and/or germination of recalcitrant seeds, especially for Swartzia langsdorffii. Thus, this work aims to (i) investigate the in situ contribution of pericarp and aril on seed viability and germination, and (ii) identify morphoanatomical traits of S. langsdorffii diaspores that allow its desiccation-sensitive seeds to remain viable. The role of the pericarp and aril in seed survival and germination was investigated by placing the whole fruit, whole seeds (arillate seed) and bare seeds (without aril) in soil in the forest understorey, assessing germination, emergence, dead, firm and predated seeds, and water content of pericarps, arils and seeds. Correlation analysis was performed between environmental variables and physiological parameters. Histochemical features of diaspores were also investigated. Pericarp water content fell after several months, while the aril maintained its water content. Seeds did not lose water even without the presence of the pericarp and aril. However, presence of the pericarp promoted seed water content, viability and germination long after dispersal. The embryo had a thickened outer periclinal cell wall. Pericarp and aril are not essential to prevent water loss in seeds, but do help to retain seed moisture, favouring viability maintenance and promoting germination during the rainy season. Morphoanatomical features of seeds are suggested as main factors that reduce water loss. Survival of these desiccation-sensitive seeds upon dispersal during the dry season appears to be facilitated by multiple diaspore features that prevent viability loss.

O objetivo deste trabalho foi monitorar alterações no teor de matéria orgânica e nas propriedades físicas de um Argissolo após a fertirrigação com vinhaça e diferentes sistemas de colheita da cana de açúcar, no oeste paulista. A coleta de dados ocorreu em uma empresa de bioenergia de Presidente Prudente, SP, seguindo o delineamento inteiramente casualizado, em esquema fatorial 5x5, caracterizado pelos manejos sem aplicação de vinhaça e colheita de cana sem queima; com aplicação de vinhaça e colheita de cana sem queima; com aplicação de vinhaça e colheita de cana queimada; sem aplicação de vinhaça e colheita de cana queimada; mata nativa, e pelas profundidades de amostragem de solo (0-10, 10-20, 20-30, 30-40, 40-50 cm), em quatro repetições. A área mata nativa (MN) foi utilizada como referência para demonstração das alterações nas propriedades químicas e físicas do solo pela aplicação dos manejos. Nas amostras coletadas foram determinados os parâmetros matéria orgânica, densidade do solo, densidade de partículas, porosidade total e umidade de saturação. Os dados foram submetidos à análise de variância e as médias foram comparadas pelo teste de Tukey, ao nível de 5 % de probabilidade. O teor de matéria orgânica e a densidade do solo não foram influenciados pela aplicação de vinhaça, formas de colheita de cana crua ou queimada. A densidade do solo foi significativamente menor na camada de 0-10 cm, independente do manejo. A porosidade total e a umidade de saturação do solo foram reduzidas a partir de 20 cm de profundidade, independente do manejo. A fertilidade e a física de solo devem ser monitoradas por um período maior tempo.


The aim of this work was to evaluate the changes in the organic matter content and physical properties of an Argisol after fertigation with vinasse and the different hasvesting systems of sugar cane, in the west of Sao Paulo state. Data collection was carried out in a bioenergy company in Presidente Prudente, SP, following the completely randomized design, in a 5x5 factorial scheme, characterized by the management without vinasse application and harvest of sugar cane without burning; with vinasse application and harvest of sugar cane without burning; with vinasse application and harvest of sugar cane burned; without vinasse application and harvest of sugar cane burned; plus native forest and soil sampling depths (0-10 10-20, 20-30, 30-40, 40-50 cm), with four replications. The MN area was used as a control to demonstrate the changes in the chemical and physical properties of the soil by applying the treatments. The organic matter soil density, particle density, total porosity and saturation moisture were determined in the collected samples. Data were submitted to analysis of variance and the means were compared by the Tukey test, at a 5% probability level. The organic matter content and soil density were not influenced by the managements studied. Soil density was significantly lower in the 0-10 cm layer, regardless of the management. The total porosity and soil saturation moisture were reduced from 20 cm depth, regardless of the management. The change in soil use from the native to the agricultural area condition negatively influenced all evaluated parameters. The evaluation of fertility and soil physics should be considered in long-term studies.

Jumbo squid (Dosidicus gigas) muscle proteins show low functionality with limited use in gel products. This work aims to assess the influence of adding the natural and commercially available fibre, amidated low-methoxyl pectin (at 0.5, 1.0, 1.5, 2.0 and 3.0%), on the physicochemical and functional characteristics of jumbo squid (Dosidicus gigas) mantle muscle gels. The addition of 0.5% fibre showed an immediate effect on the gel texture profile analysis, improving hardness (p<0.05) from (3.4±0.7) N of the control (no added fibre) to (5.2±0.9) N, and increasing elasticity (p≥0.05). Shear force was significant only at 3.0% fibre addition. Water holding capacity also improved (p<0.05) with fibre addition (from 75% in the control to 90-95% after the treatments). Whiteness was affected (p<0.05) when 3.0% fibre was added. Differential scanning calorimetry showed two endothermic transition peaks in the gels. The second peak (actin) increased (p<0.05) by 1-2 °C with fibre addition. Therefore, the present study demonstrates that amidated low-methoxyl pectin (0.5-3.0%) is an excellent ingredient to improve jumbo squid mantle muscle protein functionality, increasing the gel texture and water retention characteristics.

BACKGROUND AND AIMS: Leaf wetness is an important characteristic linked to a plant's strategies for water acquisition, use and redistribution. A trade-off between leaf water retention (LWR) and hydrophobicity (LWH) may be expected, since a higher LWH/lower LWR may enhance photosynthesis, while the opposite combination may increase the leaf water uptake (LWU). However, the validation of the ecological meaning of both traits and the influence of droplet volume when measuring them have been largely neglected. METHODS: To address these questions, LWR and LWH of 14 species were measured using droplets of between 5 and 50 µL. Furthermore, the ability of those species to perform LWU was evaluated through leaf submergence in water. The droplet-volume effect on absolute values and on species ranking for LWR and LWH was tested, as well as the influence of water droplet volume on the relationship between leaf wetness traits and LWU. KEY RESULTS: Variations in droplet volume significantly affected the absolute values and the species ranking for both LWR and LWH. The expected negative correlation between leaf wetness traits was not observed, and they were not validated as a proxy for LWU. CONCLUSIONS: The water droplet volume does matter when measuring leaf wetness traits. Therefore, it is necessary to standardize the methodological approach used to measure them. The use of a standard 5 µL droplet for LWH and a 50 µL droplet for LWR is proposed. It is cautioned that the validation of both traits is also needed before using them as proxies to describe responses and effects in functional approaches.

A ocorrência de fraudes por excesso de absorção de água em aves tem sido alvo de programas especiais de coibição do Ministério da Agricultora, Pecuária e Abastecimento (MAPA), desde 2000. Em 2010, o MAPA regulamentou a Instrução Normativa n° 32 (IN32), que estabelece os parâmetros para avaliação do teor total de água contida nos cortes de frango resfriados e congelados. O objetivo desta pesquisa foi avaliar os níveis de umidade e proteína e a relação umidade/proteína em filés de peito, coxas com e sem pele de frango comercializados congelados nos municípios de Rio de Janeiro e de Niterói. Trabalhou-se com cinco marcas de filés de peito, quatro marcas de coxas com pele e quatro marcas de coxas sem pele. Foram efetuadas determinações de umidade, proteína e relação umidade/ proteína, comparando os teores encontrados com a IN32. A marca de peito de frango4 apresentou o teor de umidade (77,41%) superior ao preconizado pela legislação e as marcas 2 (20,45%) e 4 (19,26%) teores inferiores aos estabelecidos para proteína. Todas as marcas de coxa com e sem pele possuíam teor de umidade acima do preconizado e, com relação a proteína (matéria integral), a marca 2 com pele possuía teor (14,24%) abaixo do estabelecido e a marca 2 sem pele apresentou teor acima (19,37%). Os resultados sinalizam possível fraude por absorção de água, aumentando o lucro dos produtores em detrimento dos consumidores, que se veem lesados em seu direito, ao pagarem por um produto de qualidade inferior à pretendida.
