RESUMO

The presence of arsenic (As) in irrigation water is a threat to agricultural crops as well as human health. The presence of arsenic and phosphorous in irrigation water influences the behavior of bioaccumulation, biotransfer, and total bioactive compounds in the distinct parts of the onion structure. The present work evaluates the behavior of the bioaccumulation and biotransfer of As in the structures of onion (Allium cepa) through a composite central design and response surface method. The factors employed include the concentration of arsenic (V) and phosphate (V) in the nutritive solution. Additionally, this study analyzes the behavior of the effect that the induced stress has on the total bioactive compounds (phenols and flavonoids) and antioxidant capacity (ABTS and DPPH) in the onion roots. The results showed that the physiological properties, bioaccumulation factors, As transference, and the total bioactive compounds in the onion structure are affected by the competition of As and phosphates (P(V)) in the irrigation water. For concentrations of As and phosphorous of 450 µg L-1 and 0.30 mg L-1 respectively in irrigation water, there are negative effects on the equatorial diameter of the bulb (DE), length, weight of the leaf, and weight of the bulb. Besides, the transference and bioaccumulation factors range from 0.02 to 0.22 and from 2.15 to 7.81, respectively, suggesting that the plant has the ability to accumulate As but exhibits a low translocation ability of As from the root to aerial organs. Besides, it is found for central concentrations of As and phosphorous (450 µg L-1 and 0.30 mg L-1, respectively) in irrigation water, a greater production occurs in total phenolic compounds and antioxidant capacity (ABTS and DPPH) as a response to the stress generated by As.

The purpose of this research was the genotypic identification of lactic acid bacteria (LAB), isolated from the gastrointestinal tract (GIT) of healthy adult birds, and the study of their safety regarding antibiotic resistance, physiological and functional properties involved in the colonization of the GIT of poultry, and Salmonella exclusion, as members of a potential mixed probiotic supplement for poultry. The nucleotidic sequence from Lactobacillus crispatus P1, L. animalis L3, and Enterococcus faecium CRL 1385 (ex-J96) showed 100, 99.8, and 99.3% identity with L. crispatus DSM 20584 T, Ligilactobacillus salivarius ATCC 11741 T, and E. faecium ATCC 19434 T, respectively. These strains showed no resistance to relevant antibiotics usually administered to animals proposed by the European Food Safety Authority. They could endure the detrimental conditions of the gastrointestinal tract (pH 2.6 and oxgall 0.1 and 0.4% w/v). In an ex vivo assay, the LAB showed high adherence to the three sections of the GIT, reaching values higher than 70%. The adhesion to mucus was strain-dependent: L. crispatus CRL 1453 evidenced the highest adhesion (> 19%) while Lig. salivarius subsp. salivarius CRL 1417 and E. faecium CRL 1385 adhered to a lower extent (> 9 and 2%, respectively). Moreover, the LAB elicited remarkable anti-Salmonella activity, taking into account that they could inhibit elevated counts of different Salmonella serovars, especially the host-specific serovars S. Gallinarum and S. Pullorum (up to 8 log CFU/mL decrease in Salmonella counts).

The avocado fruit is an agro-industrial product with high export demand in Peru due to its sensory and nutritional qualities, which can be affected during storage. The study aimed to evaluate the effect of the application of a coating formulated with potato starch (Solanum tuberosum ssp andigena), nopal mucilage (Opuntia ficus indica), and pectin on the physicochemical and physiological properties during the storage of Fuerte and Hass avocados. Samples were taken in their harvest state from the plantation in "Occobamba", which is cultivated by the Avocado Producers Association in Chincheros, Apurímac, Peru. Physicochemical properties (titratable acidity, pH, total soluble solids) and physiological properties (weight loss, firmness, and color L* a* b*) were determined during 20 days of storage at 20 °C. The elaborated films present high transparency and low aw values. In the coated avocado of the Hass and Fuerte varieties, acidity and total soluble solids decreased significantly (p-value < 0.05) during the storage time. Weight loss and firmness of coated fruits decrease to a lesser extent. Luminosity L*, color index, and color variation showed better attributes for the coated samples. The use of coatings made with potato starch, nopal mucilage, and pectin allows the physicochemical and physiological properties of avocado fruits to be maintained for a longer time during storage.

The ability of probiotics to exert benefits on host has been associated with different physiological functionalities in these microorganisms, namely cell surface hydrophobicity, autoaggregation, coaggregation with pathogens, antagonistic activity against pathogens and ability to survive the exposure to gastrointestinal conditions. This study assessed the effects of different concentrations of quercetin (QUE) and resveratrol (RES) on the ability of six potentially probiotic Lactobacillus strains to tolerate different pH values and bile salt concentrations, to autoaggregate, coaggregate with and antagonize pathogens and survive the exposure to simulated gastrointestinal conditions. QUE and RES presented low inhibitory effects on all tested Lactobacillus strains, with minimum inhibitory concentration (MIC) ranging from 512 to >1024 µg/mL. In most cases, QUE and RES at all tested concentrations (i.e., MIC, 1/2 MIC, and 1/4 MIC) did not affect the tolerance of the Lactobacillus strains to acidic pH and bile salts. QUE increased cell surface hydrophobicity of most of the tested Lactobacillus strains and increases or decreases in cell surface hydrophobicity varied in the presence of different RES concentrations among some strains. QUE and RES increased the ability of tested Lactobacillus strains to autoaggregate and coaggregate with pathogens. QUE and RES did not negatively affect the antagonistic activity of the tested Lactobacillus strains against pathogens and did not decrease their survival rates when exposed to in vitro gastrointestinal conditions. In a few cases, the ability of some tested Lactobacillus strains to antagonize pathogens, as well as to survive specific steps of the in vitro digestion was increased by QUE and RES. QUE exerted overall better protective effects on the measured in vitro properties of tested Lactobacillus strains than RES, and L. fermentum and L. plantarum strains presented better responses when treated with QUE or RES. These results showed that probiotic Lactobacillus strains could present low susceptibility to QUE and RES. Combined use of QUE and RES with probiotic Lactobacillus could improve their functionalities on the host; however, the concentration of these polyphenols should be carefully selected to achieve the desirable effects and vary according to the selected probiotic strain.
