Listeria monocytogenes is a foodborne pathogen that causes listeriosis and can be a problem in areas where meat products are sold at unregulated storage temperatures. In this work, the prevalence of L. monocytogenes was determined in the five most widely traded meat products in the province of Quevedo (Ecuador): bacon, "chorizo paisa", grilled hamburger meat, mortadella, and salami. A total of 1000 samples of these products were analyzed in two seasons of the year (dry season/rainy season). All L. monocytogenes isolates were confirmed by PCR with primers designed for the iap gene. Furthermore, the positive samples were quantified for L. monocytogenes. Of the 1000 meat products analyzed, 163 were positive for L. monocytogenes (16.3%). The prevalence of L. monocytogenes in the two seasons in different meat products was as follows: 22.5% in mortadella, 19% in hamburger meat, 15% in bacon, 14.5% in chorizo paisa and 10.5% in salami. In addition, the concentration of L. monocytogenes in most of the positive samples was in the range of 4-6 log CFU/g or even higher. The results show the need for improvements in the hygienic measures and meat storage temperatures in Quevedo (Ecuador) to avoid risks of foodborne listeriosis.

Genetic profiles of Salmonella Minnesota isolates were analyzed using pulsed-field gel electrophoresis (PFGE). In total, 13 isolates obtained from the broiler industry collected in the states of Minas Gerais (11) and São Paulo (2), as well as five recovered from cases of foodborne infections in humans in the states of Minas Gerais (2), Santa Catarina (1), and Rio Grande do Sul (2), were submitted to PFGE. These 18 S. Minnesota isolates together with other 12 of poultry origin were also subjected to antimicrobial susceptibility testing. The PFGE analysis of 18 strains of S. Minnesota generated a dendrogram that grouped the isolates with 83-90% similarity into four main clusters. Among them, cluster "A" grouped the majority of isolates (13), including two of human origin that showed 90% similarity with a broiler isolate, both recovered in Minas Gerais. The S. Minnesota isolates showed resistance to tetracycline (80%), cefoxitin (80%), ceftazidime (46.7%), nalidixic acid (23.3%), ciprofloxacin (13.3%), and streptomycin (10%). No resistance to gentamicin, chloramphenicol, meropenem, nitrofurantoin, and sulfamethoxazole-trimethoprim was found. Moreover, 23.3% of the evaluated isolates presented multi-resistance profile, all from Minas Gerais. The results highlight the importance of further studies involving S. Minnesota, which is prevalent in the Brazilian broiler flocks and could provoke foodborne infection in humans.

Bovine leukaemia virus (BLV) is the causative agent of enzootic bovine leucosis, which has been reported worldwide. BLV has been found recently in human tissue and it could have a significant impact on human health. A possible hypothesis regarding viral entry to humans is through the consumption of infected foodstuffs. This study was aimed at detecting the presence of BLV DNA in raw beef and fresh milk for human consumption. Nested PCR directed at the BLV gag gene (272 bp) was used as a diagnostic test. PCR products were confirmed by Sanger sequencing. Forty-nine per cent of the samples proved positive for the presence of proviral DNA. This is the first study highlighting the presence of the BLV gag gene in meat products for human consumption and confirms the presence of the viral DNA in raw milk, as in previous reports. The presence of viral DNA in food products could suggest that viral particles may also be found. Further studies are needed to confirm the presence of infected viral particles, even though the present findings could represent a first approach to BLV transmission to humans through foodstuff consumption.

o ovo é o alimento mais envolvido em surtos de infecção alimentar em que o agente etiológico é Salmonella spp. Desta forma, considerando a possibilidade de ovos contaminados participarem da dieta alimentar humana e serem veiculadores deste patógeno colocando em risco a saúde pública, faz-se necessária a investigação da presença de salmonela nos mesmos. Assim, objetivou-se realizar pesquisa de Salmonella spp. em amostras de ovos, água e ração de uma granja de galinhas do Município Rio Pomba, MG, e avaliar os fatores relacionados a ocorrência desta bactéria. Foram coletados 120 ovos, os quais foram divididos em 12 amostras compostas contendo dez ovos cada. Além disso, foram coletadas duas amostras de água e duas de ração usadas na granja. As amostras foram submetidas à análise de Salmonella spp. de acordo com o preconizado pela Instrução Normativa n°. 62 do Ministério da Agricultura, Pecuária e Abastecimento. Foi detectado Salmonella spp. em três amostras, sendo uma proveniente da ração e duas dos ovos analisados. Vários fatores como: o organismo das aves, o manejo, a limpeza da granja e controle de animais do ambiente externo, ração e água devem ser considerados para explicar a contaminação dessas amostras, sendo assim de suma importância adotar medidas de prevenção e controle. Eggs are the food most frequently involved in outbreaks of foodborne diseases in which the etiologic agent is Salmonella spp. Therefore, considering the possibility of eggs contaminated with Salmonella spp. participate in the human diet and been vehicles of this pathogen, it can put in risk public health, been necessary to investigate the presence of Salmonella in this food. Thus, considering the lack of local data on this subject, this work aimed to evaluate the occurrence of Salmonella spp. in samples of chicken eggs produced in a farm of Rio Pomba, MG, Brazil, water, and feed, and evaluate factors related to the occurrence of this bacterium. To achieve this goal, were collected 120 eggs, which were divided into 12 samples containing ten eggs each. In addition, were collected two water samples and two feed, being these used to stock the farm. The samples were subjected to analysis of Salmonella spp. according to the criteria of the Brazilian official method. Salmonella spp. was found in three samples, been one from feed and two others of the eggs analyzed. Several factors such as: the organism of the chicken, the farm management (cleaning and control of animals from sternum environment feed and water should be considered to explain the contamination of samples, being of high importance 10 adopt measures of prevention and control.
