Type 2 diabetes (T2DM), hypertension, and obesity are major contributors to global mortality. This study aimed to evaluate eating behavior and dietary practices among individuals with T2DM and/or hypertension, examining their associations with sociodemographic and anthropometric characteristics. We hypothesized that these factors may contribute to body mass index (BMI) and body fat (BF) levels in these individuals. In a cross-sectional study, adults/older individuals diagnosed with T2DM and/or hypertension were included. Eating behavior was evaluated via Three-factor Eating Questionnaire-R21. Dietary practices were assessed using the Dietary Guidelines for the Brazilian Population (DGBP) questionnaire. Poisson regression examined associations between eating behaviors, dietary practices, and sociodemographic factors. Linear regressions were employed to analyze relationships between eating behavior, dietary practices, BMI, and BF. The study included 275 primarily female (70.5%) participants under 60 years old (54.2%). Male and older participants had a lower prevalence of high scores in the 'emotional eating' (EE; PR: 0.40 [0.25;0.63]) and 'uncontrolled eating' (UE; PR: 0.68 [0.50;0.92]) domains. In contrast, older patients had a higher prevalence of adherence to the DGBP recommendations (PR:1.53 [1.20;1.94]). A positive association was observed between high EE (ß:3.71 [1.98;5.44]) and UE (ß:2.85 [1.15;4.55]) scores and BMI, whereas higher dietary practice scores (ß:-2.19 [-3.88;-0.50]) were negatively associated with BMI. High EE (ß:2.20 [0.38;4.02]) and UE (ß:1.92 [0.17;3.67]) scores were positively associated with BF regardless of the confounding factors included. Higher scores on the dietary practices were inversely associated with BF (ß:-1.94 [-3.67;-0.21]). Understanding dietary behaviors and practices can facilitate a more comprehensive and effective treatment approach.

Reducing ultra-processed foods (UPF) improves diet quality and may curb energy consumption. This study aimed to compare an intervention based on the reduction of UPF, according to the Dietary Guideline for the Brazilian Population (DGBP), with and without advice on energy intake. A parallel and randomised controlled trial was carried out with children with obesity from 7 to 12 years old. Both control (CG) and intervention groups (IG) participated monthly in 6 standardised educational activities based on the 10 steps of the DGBP. An individualised food plan was also provided to the IG. The rate of change for body mass index (BMI), waist circumference, body weight, and UPF consumption were investigated based on mixed-effect models. At the end of the study, the BMI declined in the IG (Δ = -0.27 kg/m2) compared to the CG (Δ = + 0.53 kg/m2) (p = .0002). Both groups showed a decline in grams of UPF until the fourth month and a gradual increase in the following months. Combining the qualitative approach of the DGBP with counselling on energy restriction through the diet plan proved to be effective in reducing childhood obesity. Clinical Trial Registration: This trial is registered at the Brazilian Registry of Clinical Trials (REBEC), under the RBR-3st5sn registry, available at http://www.ensaiosclinicos.gov.br/rg/RBR-3st5sn/. The datasets generated by the current study are not publicly available but are available from the corresponding author on reasonable request.

The present study aimed to evaluate factors associated with adherence to the Food Guide for the Brazilian Population (GAPB) among food service workers. A cross-sectional study was conducted with 421 employees from 43 food service establishments located in a capital of Brazil. Health and lifestyle data were collected, including the continuous use of medication, smoking, physical activity, and alcohol consumption. An instrument based on the GAPB was utilized, covering the domains of planning, household organization, eating habits, and food choices, according to GAPB recommendations. The findings revealed a direct association between the quality of life scores and the total GAPB adherence score (ß = 1.17; p < 0.001), as well as the domains of planning (ß = 0.53; p < 0.001), household organization (ß = 0.22; p = 0.001), and eating habits (ß = 0.38; p < 0.001). Adherence to the GAPB among food service workers was strongly linked to their perception of quality of life, in addition to other factors such as gender, age, education, type of work activity, and variables of lifestyle. Therefore, the eating practices of these employees need to be assessed comprehensively, and enhancing their quality of life can encourage proper and healthy eating.

OBJECTIVE: The aim of this study was to investigate the involvement of Brazilian adolescents in home cooking, estimating its associations with sex and socioeconomic status. METHODS: This cross-sectional study involved a probabilistic sample of 14- to 19-y-olds enrolled in 29 public schools in the municipality of Juiz de Fora, MG, Southeast Brazil (n = 835). To assess involvement in home cooking, a 12-question questionnaire was used. The content was based on the Brazilian Food Guide, which encourages the acquisition, development, and sharing of culinary skills. Pearson's χ test and Poisson regression models were carried out, without and with adjustments. RESULTS: Most of the adolescents did not usually participate in meal planning (61%), and in the choice/purchase of food and culinary ingredients (67%). Boys were less likely to know how to cook "from scratch", positively self-evaluate their culinary skills, enjoy cooking, wish to learn more about cooking and meal preparation, and to participate frequently in the planning and preparation of meals. Belonging to a lower socioeconomic status represented a greater probability of preparing meals alone for the family. CONCLUSIONS: We verified an alarming prevalence of adolescents with behaviors unaligned with Brazilian Food Guide recommendations; that is, most of them, especially boys, were not involved in home cooking. Adolescence may present a window of opportunity for the development of culinary skills, resulting in long-term benefits for the population's diet quality. Furthermore, to change a historical pattern that overloads women's daily lives, it is necessary to encourage, from an early age, the presence of boys in the kitchen.

Background: Obesity is one of the major public health problems worldwide and contributes to the onset of many diseases, especially the ones related to the metabolic syndrome. The new Dietary Guidelines for the Brazilian population bring a new food classification based on food processing and prioritizes the consumption of fresh or minimally processed foods. Aim: This study analyzed the effects of an educational intervention on obese women, on their weight loss, quality of life, components of the metabolic syndrome and pain. Methods: Randomized controlled pilot study, including 40 obese women, randomized into 2 groups: control group and intervention group. An educational intervention with 5 biweekly meetings of 90 min based on the Dietary Guidelines for the Brazilian population (2014) was carried out involving the intervention group. Parameters related to weight loss, quality of life (SF-36), pain (McGill), bioelectrical impedance analysis, cardiorespiratory fitness, and serum and clinical components of metabolic syndrome, as well as serum concentrations of cytokines were assessed. Results: Significantly decrease of body mass, waist and hip circumferences, basal metabolic rate, extracellular water, body capacitance, and body cell mass were observed in the intervention group after 3 months. Reduction of pain and improvement in quality of life and cardiorespiratory fitness were also observed in the intervention group. There were reductions in waist circumference and glycemia, components of metabolic syndrome. Conclusions: This study showed that the educational intervention can be associated with weight loss, increase in quality of life, reduction of pain, and better metabolic syndrome parameters in obese women.

Introdução: No processo de educação em saúde para que o indivíduo mude seus hábitos de saúde, é necessário que tenha conhecimentos, apresente crenças de autoeficácia positivas e compartilhe a eficácia coletiva. Objetivo: Avaliar o conhecimento e a percepção de autoeficácia e eficácia coletiva de professores sobre o Guia Alimentar para a População Brasileira. Método: Realizou-se estudo transversal no período de dezembro de 2019 a dezembro de 2020. A população do estudo foi composta por 1.491 professores da Educação Básica da rede pública municipal de ensino de Montes Claros, Minas Gerais. Para a amostra, estimou-se o tamanho mínimo de 511 professores e foi utilizado um questionário on-line para coleta de dados. Quanto a avaliação do conhecimento, percepção de autoeficácia e eficácia coletivados professores sobre o Guia Alimentar, utilizaram-se escalas autoadministradas e previamente validadas. Os dados coletados foram categorizados e processados eletronicamente através do software Statistical Package for the Social Science (SPSS), versão 22.0. Resultados: Na análise do desempenho dos professores quanto ao Guia Alimentar, observou-se que 79,7% (474) dos profissionais apresentaram baixo conhecimento; 70,4% (419), baixa autoeficácia; e 69,1% (411), baixa eficácia coletiva. O alto conhecimento entre os docentes foi associado à maior renda percapita (p= 0,004). A alta autoeficácia foi associada ao maior grau de escolaridade (p= 0,031). A alta autoeficácia coletiva foi associada às variáveis renda (p=0,035) e escolaridade (p=0,004). Conclusão: Os professores do presente estudo demonstraram baixo conhecimento e baixa percepção de autoeficácia e eficácia coletiva sobre o Guia Alimentar.


Introduction: In the process of health education to change the individual's health habits, they need to have knowledge, present positive self-efficacy beliefs and share collective efficacy. Objective: To evaluate the knowledge and perception of self-efficacy and collective efficacy of teachers about the Food Guide for the Brazilian Population. Method: A cross-sectional study was conducted from December 2019 to December 2020. The study population consisted of 1,491 Basic Education teachers from the municipal public school system of Montes Claros, Minas Gerais. For the sample, the minimum size of 511 teachers was estimated and an online questionnaire was used to collect data. As for the evaluation of knowledge, perception of self-efficacy and collective efficacy of teachers about the Food Guide, self-administered and previously validated scales were used. The data collected were categorized and processed electronically through the Statistical Package for the Social Sciences (SPSS) software, version 22.0. Results: In the analysis of teachers' performance regarding the Food Guide, 79.7% (474) of the professionals had low knowledge; 70.4% (419), low self-efficacy; and 69.1% (411), low collective efficacy. High knowledge among teachers was associated with higher per capita income (p = 0.004). High self-efficacy was associated with higher educational level (p = 0.031). High collective self-efficacy was associated with the variables income (p=0.035) and schooling (p=0.004). Conclusion: The teachers of this study showed low knowledge and low perception of self-efficacy and collective efficacy about the Food Guide.

Resumo Introdução: O número de refeições/dia tem sido associado a uma alimentação saudável, mas há controvérsias sobre a direção dessa associação. A orientação nutricional, estratégia essencial para construção de estilos de vida saudáveis na população atendida pela Estratégia Saúde da Família, pode ser fundamental nessa relação. Objetivo: Verificar se o consumo regular de marcadores alimentares está associado ao número de refeições diárias e ao recebimento de orientação nutricional. Método: Estudo transversal realizado com usuários da Estratégia Saúde da Família de um município gaúcho. Consumo regular de marcadores alimentares e características nutricionais (número de refeições/dia e recebimento de orientação nutricional) foram avaliados por aplicação de questionário. A associação entre características nutricionais e consumo regular de marcadores alimentares foi analisada utilizando-se regressão de Poisson. Resultados: Dos 529 indivíduos analisados, 2/3 referiram realizar de três a quatro refeições/dia e 30% afirmaram ter recebido orientação nutricional. A frequência de consumo regular de marcadores alimentares variou de 1,7% para frituras a quase 60% para feijão. Indivíduos que receberam orientação nutricional apresentaram menor prevalência de consumo regular de doces e refrigerantes (RP=0,64; IC95% 0,43-0,97). Número de refeições/dia foi positivamente associado ao consumo de lácteos; frutas e hortaliças; frituras, embutidos e salgados. Para os dois últimos grupos, observou-se associação apenas para quem não recebeu orientação nutricional. Conclusões: Os resultados sugerem que consumo regular de marcadores alimentares se associa com recebimento de orientação nutricional e número de refeições.


Abstract Background: The number of meals/day has been associated with a healthy diet, but there are controversies about the direction of this association. Nutritional counseling, an essential strategy for building healthy lifestyles in the population served by the Family Health Strategy (FHS), can be fundamental in this relationship. Objective: To verify whether the regular consumption of food markers is associated with the number of daily meals eaten and receiving nutritional counseling. Method: Cross-sectional study carried out with users of the Family Health Strategy in a city in the state of Rio Grande do Sul, Brazil. Regular consumption of food markers and nutritional characteristics (number of meals/day and receiving nutritional counseling) were assessed by applying a questionnaire. The association between nutritional characteristics and regular consumption of food markers was analyzed using Poisson regression. Results: Of the 529 individuals analyzed, 2/3 reported having three to four meals/day and 30% stated they had received nutritional counseling. The frequency of regular consumption of food markers ranged from 1.7% for fried foods to almost 60% for beans. Individuals who received nutritional counseling had a lower prevalence of regular consumption of sweets and soft drinks (PR=0.64; 95%CI 0.43-0.97). Number of meals/day was positively associated with dairy consumption; fruits and vegetables; fried foods, sausages and pastries. For the last two groups, an association was observed only for those who did not receive nutritional counseling. Conclusions: The results suggest that regular consumption of food markers is associated with receiving nutritional counseling and number of meals.

Resumo O Guia Alimentar para a População Brasileira (GAPB) é um documento oficial que aborda princípios e recomendações de uma alimentação adequada e saudável e se configura como um instrumento de apoio às ações de educação alimentar e nutricional (EAN). O objetivo deste artigo é analisar o conteúdo do guia, que é um dos principais instrumentos das políticas públicas relacionadas à alimentação no Brasil, à luz de conceitos da teoria social, em especial teorias da modernidade, da identidade e dos riscos. Na análise minuciosa do conteúdo do guia, foi constatado que o texto considerou a diversidade alimentar cultural e biológica das regiões brasileiras. Teve base de referência os alimentos e não os nutrientes, tornando a compreensão das recomendações ilustrativas fáceis de serem assimiladas pelo público. Preocupou-se em evitar os riscos alimentares, levando em consideração a questão da aquisição de alimentos adequados e saudáveis. Entretanto, identificou-se dois riscos não abordados: o problema dos alimentos processados e ultraprocessados (UP); e a omissão de alerta referente aos alimentos transgênicos (OGMs). Embora construído de forma inovadora, estimulando tempo, atenção e companhia à mesa, o GAPB necessita uma revisão.


Abstract The Food Guide for the Brazilian Population (GAPB) is an official document that addresses principles and recommendations for an adequate and healthy diet, and it is configured as a support tool for food and nutrition education actions. This article aims to analyze the guide content, which is one of the main instruments of public policies related to food in Brazil, in the light of the concepts of social theory, especially theories of modernity, identity, and risks. In the detailed analysis of the guide content, we found that the document considered the cultural and biological food diversity of Brazilian regions. It is based on food not on nutrients, making illustrative recommendations easy to public understanding. It avoided food risks, considering the issue of acquiring adequate and healthy food. However, two risks were not addressed: the problem of processed and ultra-processed foods (PU); and the omission of warnings regarding transgenic foods (GMOs). Although the guide has been designed in an innovative way, stimulating time, attention, and companionship at the table, the GAPB needs revision.

Este estudo verificou os efeitos de uma ação educativa via rede social no consumo alimentar, conhecimento em alimentação e nutrição e nos fatores que facilitam e dificultam a adoção de uma alimentação saudável entre universitários de um Centro Universitário de São Paulo. Trata-se de estudo de intervenção, com aplicação de questionário antes e depois da ação educativa. Participaram 141 universitários entre 18 e 56 anos e classe socioeconômica B (46,81%). 39,72% estavam com excesso de peso, 76,60% foram classificados em "Atenção" referente ao consumo alimentar e mais de 50% tinham moderado conhecimento em nutrição. O principal dificultador para se ter uma alimentação saudável foi o custo elevado dos alimentos. Conclui-se que os efeitos da ação educativa foram positivos na redução do Índice de Massa Corporal, aumento na pontuação do consumo alimentar e do conhecimento em nutrição. Houve aumento de comportamento adequado para oito questões do consumo alimentar.


This study verified the effects of an educational action using social network on food consumption, knowledge of food and nutrition and factors that facilitate and hinder the adoption of healthy eating, among university students at a University Center in São Paulo. It is an intervention study, with the application of a questionnaire before and after the educational action. 141 university students between 18 and 56 years old and socioeconomic class B (46,81%) participated. 39.72% were overweight, 76.60% were classified as "Attention" regarding food consumption and more than 50% had moderate knowledge of nutrition. The main obstacle to healthy eating was the high cost of food. It is concluded that the effects of the educational action were positive in reducing the Body Mass Index, increasing the score of food consumption and knowledge in nutrition. There was an increase in appropriate behavior for eight issues of food consumption.

RESUMEN Chile es uno de los países de Latinoamérica que exhibe un mayor envejecimiento poblacional, por lo que es necesario visualizar distintas herramientas que direccionen estilos de vida saludables en esta etapa de la trayectoria vital. Las Guías Alimentarias Basadas en Alimentos (GABA) entregan recomendaciones que permiten mejorar la calidad de vida de personas mayores. Por lo anterior, el objetivo del estudio fue determinar el nivel de cumplimiento de recomendaciones de las GABA y su asociación con variables antropométricas, metabólicas y de estilos de vida en 1.789 personas mayores de 60 años que participaron en la Encuesta Nacional de Salud 2016-2017. Se realizó un estudio descriptivo de corte transversal, en donde los participantes se subdividieron en cuatro grupos según cumplimiento de las GABA: no cumple, cumple con 1, 2 o a lo menos 3 recomendaciones de consumo de legumbres, frutas y verduras, lácteos, agua y pescado. Como resultado, el 43,8% de las personas mayores que participaron no cumplieron ninguna de las recomendaciones GABA evaluadas; estos últimos, realizaban menos actividad física y presentaban, además, una mayor probabilidad de pasar más tiempo sentados (p-tendencia: <0,001). Como conclusión, se destaca que cerca del 50% de las personas mayores en Chile no adhieren a las recomendaciones de las GABA, lo que podría repercutir en implicaciones en la salud y bienestar de la población mayor.


ABSTRACT Chile is one of the Latin American countries that exhibits the greatest increase in the aging population, thus it is necessary to visualize different tools that guide healthy lifestyles at this stage of life. Food-Based Dietary Guidelines (abbreviated as GABA, for initials in Spanish) provide recommendations that allow improving the quality of life in older people. This study aimed to determine the level of compliance with GABA recommendations and their association with anthropometric, metabolic and lifestyles factors in 1,789 people over 60 years who participated in the 2016-2017 National Health Survey. A descriptive cross-sectional study was carried out, in which participants were subdivided into four groups according to compliance with GABA: does not comply, complies with 1, 2 or at least 3 recommendations for consumption of legumes, fruits, vegetables, dairy, water and fish. As a result, 43.8% of older participants did not meet any of the GABA recommendations evaluated. These participants also performed less physical activity and had a longer sitting time (P-trend: <0.001). In conclusion, we highlight that close to 50% of elderly Chileans do not adhere to GABA recommendations, which could have implications for the health and well-being.

RESUMO: Objetivo: Avaliar a validade convergente e a invariância de uma escala de adesão a práticas alimentares recomendadas pelo Guia Alimentar para a População Brasileira. Métodos: Uma subamostra (n=1.309) da coorte NutriNet-Brasil (estudo online autopreenchido) respondeu à escala baseada no guia (24 itens) e a questionários socioeconômicos e alimentares. O escore na escala (eGuia) foi comparado por meio de correlação de Spearman a escores de consumo de alimentos in natura e minimamente processados (eG1) e ultraprocessados (eG4), compostos do número médio de alimentos desses grupos consumidos em três dias aleatórios. Para inferência de validade convergente, observaram-se o sentido e a magnitude das correlações. Empregou-se análise fatorial confirmatória com múltiplos grupos para avaliar a invariância nos níveis configural, fatorial e escalar, entre subgrupos de sexo (homens/mulheres), idade (≤37/>37, sendo 37 a mediana) e anos de estudo (≤11/>11). Considerou-se o modelo invariante quando os índices de ajuste variaram nos limites aceitáveis ante o nível anterior. Resultados: Os participantes tinham em média 39 anos (desvio padrão — DP=13,7), 53% eram mulheres e 69% tinham mais de 11 anos de estudo. As correlações entre eGuia e eG1 e eGuia e eG4 foram 0,56 e -0,51 (p<0,001), respectivamente. Em todos os subgrupos, os índices de ajuste variaram nos limites aceitáveis. Conclusão: As correlações mostram que as práticas alimentares medidas pela escala estão associadas ao consumo alimentar saudável, demonstrando validade convergente. Nessa amostra, a escala mediu as mesmas dimensões, apresentou equivalência nas cargas fatoriais dos itens e gerou escores comparáveis entre diferentes subgrupos de sexo, idade e escolaridade.


ABSTRACT: Objective: To analyze the convergent validity and invariance of a scale to measure adherence to eating practices recommended by the Dietary Guidelines for the Brazilian Population. Methods: A subsample (n=1309) of the NutriNet-Brasil cohort (self-filled web-based study) answered the 24-items scale based on the Guide, as well as socioeconomic and dietary questionnaires. The score in the scale (eGuia) was compared by Spearman's correlation with scores of fresh and minimally processed foods (eG1) and ultra-processed foods (eG4) consumption, both composed of the average number of food items consumed in three random days. Correlations' direction and strength were observed to infer convergent validity. A multi-group confirmatory factor analysis was used to assess scale invariance at the configural, factorial and metric levels, between subgroups of sex (men/women), age (≤37/>37, being 37 the median) and years of schooling (≤11/>11). The model was invariant when the goodness-of-fit indices varied within acceptable ranges compared to the previous level. Results: Participants were on average 39 years old (sd=13.7), 53% were women and 69% had more than 11 years of education. Correlations between eGuia and eG1, and between eGuia and eG4 were 0.56 and -0.51 (p<0.001), respectively. In all sociodemographic groups, the goodness-of-fit indices varied within acceptable ranges. Conclusion: The correlations show that the eating practices measured by the scale are aligned with a healthy food consumption, showing its convergent validity. In this sample, the scale measured the same dimensions, showed equivalence of items' factor loadings, and generated comparable scores between subgroups of sex, age, and education.

ABSTRACT Objective To evaluate factors associated with dietary practices in students of a institution of higher education, included in the PADu study: "Anxiety and depression symptoms among university students in Minas Gerais: a longitudinal study". Methods Cross-sectional study of PADu project baseline with undergraduate first period students, who responded in person to a printed and self-administered questionnaire. Dietary practices were evaluated through a 24 items scale based on recommendations of Dietary Guidelines for the Brazilian Population. Answer choices are four-point Likert scale: "strongly agree", "agree", "disagree" and "strongly disagree". The sum of the items corresponded a score ranging (0-72 points), a high score indicating greater adequacy. The explanatory variables were: sociodemographics (gender, age, knowledge area, skin color, marital status, monthly household income), behaviors (excess alcohol consumption, physical exercise, screen exposure, internet use), health conditions (self-rated health, nutritional status, symptoms of depression, anxiety, stress). Adjusted multiple linear regression model was used to estimate the coefficients and their 95% CI. Results 356 students participated in the study. The average of dietary practices was 34.9±9.3 (0-63) points. Physical exercise practice (β: 3.75; CI: 1.83; 5.67) was associated with higher scores in the eating students score. We observed factors associated with the lowest score greater exposure to screens (β: -0.44; CI: -0.67; -0.13), excessive internet use (β: -3.05; CI: -5.22; -0.88), poor health self-assessment (β: -3.63; CI: -4.97; -1.21), excessive alcohol consumption (β: -2.09; CI: -3.92;-0.26) and stress symptoms (β: -2.81; CI: -4.72; -0.77). Conclusion Most students have inadequate dietary practices associated with internet use, alcohol consumption and stress.


RESUMO Objetivo Avaliar os fatores associados às práticas alimentares em estudantes de uma instituição de Ensino Superior incluídos no estudo PADu: "Sintomas de ansiedade e depressão em universitários de Minas Gerais: um estudo longitudinal". Métodos Estudo transversal da linha de base do projeto PADu com alunos do primeiro período da graduação, que responderam pessoalmente a um questionário impresso e autoaplicável. As práticas alimentares desses estudantes foram avaliadas por meio de uma escala de 24 itens baseada nas recomendações do Guia Alimentar para a População Brasileira. As opções de resposta foram coletadas em escala Likert de quatro pontos: "concordo totalmente", "concordo", "discordo" e "discordo totalmente". A soma dos itens correspondeu a uma pontuação (0-72 pontos), onde uma pontuação alta indicava maior adequação. As variáveis explicativas foram: características sociodemográficas (sexo, idade, área do conhecimento, cor da pele, estado civil, renda familiar total mensal), comportamentos (consumo excessivo de álcool, exercícios físicos, exposição a telas e uso de internet) e condições de saúde (autoavaliação saúde, estado nutricional, sintomas de depressão, ansiedade e stress). O modelo de regressão linear múltipla ajustado foi usado para estimar os coeficientes e seus IC 95%. Resultados 356 alunos participaram do estudo. A média das práticas alimentares foi de 34,9±9,3 (0-63) pontos. A prática de exercícios físicos (β: 3,75; IC: 1,83; 5,67) esteve associada a maiores escores no escore de hábitos alimentares dos escolares. Foram observados fatores associados ao menor escore maior exposição a telas (β: -0,44; IC: -0,67; -0,13), uso excessivo de internet (β: -3,05; IC: -5,22; -0,88), ruim autoavaliação de saúde (β: -3,63; IC: -4,97; -1,21), consumo excessivo de álcool (β: -2,09; IC: -3,92; -0,26) e sintomas de estresse (β: -2,81; IC: -4,72; -0,77). Conclusão A maioria dos estudantes apresenta práticas alimentares inadequadas associadas ao uso da internet, consumo de álcool e estresse.

O presente trabalho objetivou relatar um projeto de educação alimentar e nutricional desenvolvido com escolares em uma escola municipal da cidade de Juiz de Fora ­ MG, no período de maio a junho de 2018. Foram realizadas quatro intervenções através de atividades de até 60 minutos cada, com intervalo de uma semana. As ações contaram com: questionário (pré-intervenção); exposição verbal com incentivo ao diálogo; recursos lúdicos; e oficina culinária. Foi realizada antropometria, seguindo recomendações do Ministério da Saúde, e para classificação de estado nutricional, utilizou-se o programa WHO AntroPlus®. Participaram da intervenção 91 alunos, sendo 56% do sexo masculino e com mediana de idade de 8 anos (6-10). Os resultados reforçaram a necessidade de ações de educação alimentar e nutricional. Quanto às atividades, houve boa aceitação, bem como compreensão, avaliada pelos comentários que traduziam, em suas palavras e contexto, o que lhes era ensinado. Notou-se que sequenciar o conteúdo, fazer uso de analogias e de abordagens lúdicas e participativas foram escolhas que facilitaram o processo.


The present work aimed to report a food and nutritional education project developed with school children at a municipal school in the city of Juiz de Fora, MG, from May to June 2018. Four interventions were carried out through activities of up to 60 minutes each, with an interval of one week. The actions included: questionnaire (pre-intervention); oral presentation with encouragement of dialogue; recreational resources; and cooking workshop. Anthropometry was performed, following the recommendations of the Ministry of Health, and for the classification of nutritional status, the WHO program AntroPlus® was used. 91 students participated in the intervention, 56% of them male and with median age of 8 years (6-10). The results reinforced the need for food and nutrition education actions. As for the activities, there was good acceptance, as well as understanding, evaluated by the comments that translated, in their words and context, what they were taught. It was noted that sequencing content, making use of analogies and playful and participatory approaches, were choices that facilitated the process.

Determinar la asociación entre la percepción de los consejos prácticos y los mensajes educativos de las guías alimentarias en estudiantes de una universidad privada de Perú. Estudio transversal. La población correspondió a estudiantes que cursan el primero a décimo semestre de las carreras de una universidad privada de Lima-Perú. La muestra fue de 480 universitarios quienes aceptaron voluntariamente participar en el estudio. Los datos fueron recolectados en el periodo octubre a noviembre del año 2019. Se aplicó un cuestionario para recoger la percepción de estudiantes universitarios sobre los mensajes de las guías alimentarias y medios de difusión donde les gustaría conocer información sobre mensajes educativos. El 46,5% corresponde a estudiantes de las carreras de la Facultad de Ciencias de la Salud. Los mensajes 1, 3, 4, 6, 9 y 11 de las guías alimentarias peruanas mostraron asociación estadística evidente (p<0,05). Los medios de difusión con mayor proporción por los cuales les gustaría conocer mensajes educativos sobre alimentación saludable, fueron la Televisión (28,5%), Instagram (27,7%) y Facebook (19,0%). Se deberían diseñar e implementar publicidad diferenciada en televisión, Instagram y Facebook sobre alimentación saludable para contribuir a la mejora del estado de salud y nutrición de los universitarios peruanos(AU)


To determine the association between the perception of practical advice and the educational messages of the food guides in students of a private university in Peru. Cross-sectional study. The population corresponded to undergrads who are from the first to tenth semester of their degrees in a private university of Lima-Peru. The sample was 480 university students who voluntarily agreed to participate in the study. The data were collected in the period from october to november of the year 2019. A questionnaire was applied to collect the perception of university students about the messages of the dietary guidelines and the media where they would like to know information about educational messages. 46.5% correspond to undergrads of the Faculty of Health Sciences. Messages 1, 3, 4, 6, 9 and 11 of the Peruvian GABAS showed an evident statistical association (p <0.05). The media with the highest proportion by which they would like to know educational messages about healthy eating were Television (28.5%), Instagram (27.7%) and Facebook (19.0%). Differentiated advertising should be designed and implemented on television, Instagram and Facebook on healthy eating to contribute to the improvement of the health and nutrition status of Peruvian university students(AU)

ABSTRACT OBJECTIVE Assess two validity evidences of the diet quality scale (ESQUADA) for the selection of items with better discrimination of the Brazilians' diet quality and propose a description in score levels. METHODS Brazilian adolescents and adults residing in the country (n = 2,059) answered an online questionnaire with 52 items, shared on social networks and email lists between March and April 2018. Statistical tests were applied to analyze the validity and reliability of the instrument's evidence. Factor analysis was applied to study the dimensionality of the questionnaire items. Item response theory was applied to identify the discrimination and location of items on the continuum, construct the scale and assess the differential item functioning in terms of sex and age. RESULTS Among the 52 items of the questionnaire, 25 had greater measurement accuracy, with adequate adjustment and reliability. The item on the habit of eating ultra-processed foods at home showed the best discrimination of diet quality. No item showed differential functioning regarding sex and age. In the construction of the ESQUADA, five diet quality levels were identified: very poor, poor, good, very good and excellent. It was observed that while breakfast cereals and/or cereal bars are more frequently consumed by individuals with "very poor" diet quality; nuts and/or walnuts are most often consumed by those individuals with "excellent" diet quality. CONCLUSION The ESQUADA consists of 25 precise items with no differential functioning to assess the quality of Brazilians' diet. The construction of the ESQUADA made it possible to recognize food consumption and dietary practices characteristic of each level of diet quality.


RESUMO OBJETIVO Avaliar duas evidências de validade da escala de qualidade da dieta (ESQUADA) para seleção dos itens com melhor discriminação da qualidade da dieta dos brasileiros e propor uma descrição em níveis de escore. MÉTODOS Adolescentes e adultos brasileiros e residentes no país (n = 2.059), responderam a um questionário on-line com 52 itens, compartilhado em redes sociais e listas de correio eletrônico entre março e abril de 2018. Foram aplicados testes estatísticos para análise de evidências de validade e confiabilidade do instrumento. A análise fatorial foi aplicada para estudo da dimensionalidade dos itens do questionário. A teoria de resposta ao item foi aplicada para identificar a discriminação e localização dos itens no continuum , construir a escala e avaliar o comportamento diferencial dos itens quanto ao sexo e idade. RESULTADOS Dentre os 52 itens do questionário, 25 apresentaram maior precisão de medida, com ajuste e confiabilidade adequados. O item sobre o costume de comer alimentos ultraprocessados em casa apresentou a melhor discriminação da qualidade da dieta. Nenhum item apresentou comportamento diferencial quanto a sexo e idade. Na construção da ESQUADA foram identificados cinco níveis de qualidade da dieta: "muito ruim", "ruim", "boa", "muito boa" e "excelente". Observou-se que enquanto cereais matinais e/ou barrinhas de cereais são consumidos com maior frequência por indivíduos com qualidade da dieta "muito ruim"; castanhas e/ou nozes são consumidos mais frequentemente por aqueles indivíduos com qualidade da dieta "excelente". CONCLUSÕES A ESQUADA é composta por 25 itens precisos e sem comportamento diferencial para avaliar a qualidade da dieta dos brasileiros. A construção da ESQUADA possibilitou reconhecer consumo e práticas alimentares característicos de cada nível de qualidade da dieta.

ABSTRACT Objective Was analyzed the contents of the main messages of food-based dietary guidelines to promote healthy eating, identifying nutritional, symbolic, and sustainable recommendations. Methods Food-based dietary guidelines from 90 different countries were analyzed. These guidelines were selected from the United Nations Food and Agriculture Organization database. For data extraction, all messages were exported to the Nvivo software and, after repeated readings, were grouped into predefined categories and corresponding dimensions based on the literature. The categories were created according to the mixed model, that is, they were created before data analysis was performed, but modified if necessary. Results Was identified 1,982 messages grouped into the following dimensions: nutritional (n=73.9%); sustainable (3.2%); symbolic (3.3%), and others (19.7%). All food-based dietary guidelines addressed nutritional aspects, and the most frequent recommendation was regarding the consumption of fats, followed by the consumption of salt and vegetables and fruits, cited by at least 75 food-based dietary guidelines. Less than half (n=40) of the food-based dietary guidelines addressed sustainable or symbolic aspects of food and 13 of the food-based dietary guidelines addressed both aspects. However, these messages represented only 6.5% of the total messages in the documents. Conclusions The recommendations for healthy eating in the food-based dietary guidelines are incipient in terms of sustainable and symbolic issues. Recommendations for adopting healthy diets need to consider the completeness of the food and its various combinations, dietary patterns, and the factors associated with their consumption, as well as the individual's relations with food, environment, and society.


RESUMO Objetivo Analisar o conteúdo das principais mensagens de guias alimentares para promoção de alimentação saudável, identificando recomendações nutricionais, simbólicas e sustentáveis. Métodos Foram analisadas as mensagens de 90 guias alimentares selecionados a partir do banco de dados da Organização das Nações Unidas para Agricultura e Alimentação. Para a extração dos dados, todas as mensagens foram exportadas para o software Nvivo e categorizadas em categorias pré-definidas em revisão narrativa, conforme as dimensões correspondentes e outras categorias emergentes. Resultados Categorizou-se um total de 1.982 mensagens, agrupadas nas dimensões: nutricional (n=73,9%); sustentável (3,2%); simbólica (3,3%) e outras (19,7%). Todos os guias abordavam aspectos nutricionais, sendo que a recomendação mais frequente foi em relação ao consumo de gordura, seguida do consumo de sal e vegetais e frutas, citadas por pelo menos 75 guias. Menos da metade dos guias (n=40) abordaram aspectos sustentáveis ou simbólicos da alimentação e 13 abordaram ambos; contudo, essas mensagens representaram 6,5% do total presente nos documentos. Conclusão As recomendações para alimentação saudável presentes nos guias alimentares são incipientes no que se refere a questões sustentáveis e simbólicas. Recomendações para a adoção de dietas saudáveis precisam considerar a integralidade do alimento, as diversas combinações, os padrões alimentares e os fatores associados ao seu consumo, bem como as relações do indivíduo com o alimento, com o ambiente e com a sociedade.

ABSTRACT Objective To check the relationship of the degree of food processing with overweight and body adiposity in Brazilian adults. Methods Cross-sectional study with 670 adults (334 women and 336 men) aged 20-59 years in Viçosa, Minas Gerais, Brazil, based on population data collected using a questionnaire, 24-hour dietary recall interview, and anthropometric evaluation. Consumed foods were categorized into four groups: unprocessed or minimally processed foods, processed culinary ingredients, processed foods, and ultra-processed foods. Poisson regression models were used to assess the relationship between degree of food processing and overweight and body adiposity. Results The contribution of unprocessed or minimally processed foods to total energy intake was a protective factor for overweight in all quartiles. The contribution of ultra-processed foods to total energy intake was a risk factor for overweight in the highest quartile (prevalence ratio, 1.308; 95% confidence interval, 1.085-1.577). High energy intake from ultra-processed foods was a risk factor for excess adiposity in the highest quartiles. Conclusion Consumption of ultra-processed foods is associated with overweight and excess adiposity, whereas consumption of unprocessed and minimally processed foods is a protective factor for overweight.


RESUMO Objetivo O objetivo deste estudo foi verificar a relação entre o grau de processamento de alimentos e sobrepeso e adiposidade corporal em adultos brasileiros. Métodos Estudo transversal com 670 adultos (334 mulheres e 336 homens) com idades entre 20 e 59 anos, em Viçosa, Minas Gerais, Brasil, com base em dados populacionais coletados por meio de questionário estruturado, entrevista de recordatório alimentar de 24 horas e avaliação antropométrica. Os alimentos consumidos foram categorizados em quatro grupos: alimentos não processados ou minimamente processados, ingredientes culinários processados, alimentos processados e alimentos ultraprocessados. Modelos de regressão de Poisson foram utilizados para avaliar a relação entre o grau de processamento dos alimentos e excesso de peso e de adiposidade corporal. Resultados A contribuição de alimentos não processados ou minimamente processados para a ingestão total de energia foi um fator protetor para o excesso de peso em todos os quartis. Por outro lado, a contribuição dos alimentos ultraprocessados para a ingestão total de energia foi um fator de risco para o excesso de peso no quartil mais alto (razão de prevalência 1,308; intervalo de confiança de 95%, 1,085-1,577). O alto consumo de energia de alimentos ultraprocessados foi um fator de risco para o excesso de adiposidade nos quartis mais altos. Conclusão O consumo de alimentos ultraprocessados está associado ao excesso de peso e excesso de adiposidade, enquanto o consumo de alimentos não processados e minimamente processados é um fator protetor para o excesso de peso.

O Guia Alimentar para a População Brasileira é reconhecido como um potente indutor de políticas públicas de alimentação e nutrição. Nessa perspectiva, este artigo apresenta o percurso metodológico e as evidências que subsidiaram a elaboração dos novos parâmetros de aquisição de alimentos do Programa Nacional de Alimentação Escolar (PNAE). Tal elaboração envolveu as análises de: (1) participação dos recursos federais utilizados para compra de alimentos, agrupados segundo a classificação NOVA, empregada no Guia Alimentar para a População Brasileira, pelo conjunto de municípios brasileiros e segundo classificação da execução (positiva ou negativa); (2) cardápios mensais de referência que foram elaborados seguindo recomendações do Guia Alimentar para a População Brasileira; (3) aquisição de alimentos por amostra de 525 municípios, envolvendo a participação relativa dos grupos de alimentos (segundo a NOVA) no total de gastos e de energia e a qualidade nutricional dos alimentos adquiridos; e (4) alimentos ultraprocessados que não devem ser ofertados no ambiente escolar. Foi proposta a adoção dos seguintes parâmetros para participação dos grupos de alimentos em relação ao total de recursos federais empregados na compra de alimentos: ≥ 75% de recursos para alimentos in natura ou minimamente processados; < 20% para alimentos processados ou ultraprocessados e < 5% para ingredientes culinários processados e a ampliação da lista de alimentos cuja aquisição com recursos federais do PNAE é proibida. Esse processo subsidiou a elaboração da Resolução CD/FNDE nº 6, de 8 de maio de 2020, que dispõe sobre o atendimento da alimentação escolar aos alunos da educação básica no âmbito do PNAE.


La Guía Alimentaria para la Población Brasileña está reconocida como un potente inductor de políticas públicas de alimentación y nutrición. Desde esta perspectiva, este artículo presenta la trayectoria metodológica y evidencias que apoyaron la elaboración de los nuevos parámetros de adquisición de alimentos del Programa Nacional de Alimentación Escolar (PNAE). Tal elaboración implicó los análisis de: (1) participación de los recursos federales utilizados para la compra de alimentos, agrupados según la clasificación NOVA, empleada en el Guía Alimentaria para la Población Brasileña, por el conjunto de municipios brasileños, y según la clasificación de la ejecución (positiva o negativa); (2) menús mensuales de referencia que fueron elaborados siguiendo recomendaciones del Guía Alimentaria para la Población Brasileña; (3) adquisición de alimentos mediante una muestra de 525 municipios, implicando la participación relativa de los grupos de alimentos (según NOVA) en el total de gastos y de energía, así como la calidad nutricional de los alimentos adquiridos; y (4) alimentos ultraprocesados que no deben ser ofrecidos en el entorno escolar. Se propuso la adopción de los siguientes parámetros para la participación de los grupos de alimentos, en relación con el total de recursos federales empleados en la compra de alimentos: ≥ 75% de recursos para alimentos in natura o mínimamente procesados; < 20% para alimentos procesados o ultraprocesados, y < 5% para ingredientes culinarios procesados, así como la ampliación de la lista de alimentos, cuya adquisición con recursos federales del PNAE está prohibida. Este proceso apoyó la elaboración de la Resolución CD/FNDE nº 6, del 8 de mayo de 2020, que organiza la atención de la alimentación escolar a alumnos de educación básica en el ámbito del PNAE.


The Dietary Guidelines for the Brazilian Population is acknowledged as a powerful inducer of public food and nutrition policies. In this perspective, this article presents the methodological path and evidence that supported the elaboration of the new parameters of food acquisition of the Brazilian National School Feeding Program (PNAE). This elaboration involved the analyses of: (1) participation of federal resources used to purchase food, grouped according to the NOVA classification, used in Dietary Guidelines for the Brazilian Population, by the set of Brazilian municipalities and according to the classification of the execution (positive or negative); (2) monthly reference menus that were prepared following Dietary Guidelines for the Brazilian Population recommendations; (3) analysis of food acquisition by the sampling of 525 municipalities, involving the relative participation of food groups (according to NOVA) in total expenditures and energy and nutritional quality of purchased foods; and (4) analysis of ultra-processed foods that should not be offered in the school environment. We proposed the adoption of the following parameters for the participation of food groups in relation to the total federal resources used in the purchase of food: ≥ 75% of resources for fresh or minimally processed foods; < 20% for processed or ultra-processed foods and < 5% for processed culinary ingredients, as well as the expansion of the list of foods whose acquisition with federal resources from PNAE is prohibited. This process supported the elaboration of Resolution CD/FNDE n. 6 of May 8, 2020, which provides for the attendance of school feeding to primary education students within the PNAE.

ABSTRACT The NOVA classification categorizes foods according to the extent of industrial processing. NOVA has been used in dietary guidelines of some countries including Brazil and Uruguay. This article aimed to investigate knowledge and perceptions of a sample of Brazilian adults regarding NOVA. A qualitative study was conducted in Dourados city, Mato Grosso do Sul, Brazil. First, participants (N= 24) were asked to classify a series of 24 pictures of foods and beverages using NOVA, which define the four major food groups: unprocessed or minimally processed foods; processed culinary ingredients; processed foods; and ultra-processed foods. Next, participants were asked to explain their classification through semi-structured interviews. Data from the classification activity were analyzed using non-metric multidimensional scaling and interviews using exploratory content analysis and summative content analysis. Participants seemed to understand NOVA in terms of food processing, food production, and additives used. They easily identified unprocessed or minimally processed foods and ultra-processed foods; processed culinary ingredients and processed foods were harder to identify. Professionals, researchers and government organisations in Brazil or abroad could consider the results of this study in order to optimize this tool's potential for research and policy in nutrition and public health.


RESUMEN La clasificación NOVA ordena los alimentos según su grado de procesamiento industrial. NOVA ha sido utilizado en las guías alimentarias de algunos países incluyendo Brasil. Investigamos el conocimiento y las percepciones de un muestreo de adultos brasileños con respecto a NOVA. Se realizó una investigación cualitativa en la ciudad de Dourados, Mato Grosso do Sul, Brasil. Los participantes (N= 24) clasificaran 24 imágenes de alimentos y bebidas en los cuatro grupos de NOVA: alimentos sin procesar o mínimamente procesados; ingredientes culinarios procesados; alimentos procesados; y alimentos ultraprocesados. Luego, se les pidió que explicaran su clasificación a través de entrevistas semiestructuradas. Los datos de esa actividad se analizaron mediante escala multidimensional no métrica y las entrevistas mediante análisis de contenido exploratorio y análisis de contenido sumativo. Los participantes entienden la NOVA en términos de procesamiento y producción de alimentos, y uso de aditivos. Ellos identificaron fácilmente los alimentos sin procesar o mínimamente procesados y los alimentos ultraprocessados pero no los alimentos de los otros grupos. Investigadores y organizaciones gubernamentales en Brasil y en el extranjero podrían tener en cuenta estos resultados para optimizar el potencial de esta herramienta para la investigación y las políticas en nutrición y salud pública.

RESUMO

BACKGROUND: The Food Guide for the Brazilian Population relies on natural or minimally processed foods mainly of plant origin such as beans and rice with low oil, salt, and sugar content and limited consumption of ultraprocessed foods. Reduction of ultraprocessed foods improves diet quality and energy consumption. OBJECTIVE: The goal of this study is to evaluate the effectiveness of an intervention for the treatment of obesity in children, with counseling based on the Brazilian Food Guide plus control of total energy intake. METHODS: A parallel, randomized clinical trial will include children aged 7 to 12 years. Randomization will be performed in blocks of 10 individuals using computer-generated random sequence numbers. Both the control and intervention groups will participate in 6 standardized educational activities based on the 10 steps of the Brazilian Food Guide. These activities will be conducted at the University Hospital Toy Library, located in the pediatric outpatient clinic. For the intervention group, in addition to the educational activities, an individualized food plan based on the nutritional recommendations of the Brazilian Society of Pediatrics will be prescribed and discussed with the mothers and fathers. The primary outcome of the study will be variations in body mass index, and secondary outcomes will include analysis of insulin resistance, blood pressure, body fat percentage, and waist and neck circumference. RESULTS: This project was funded by the National Council for Scientific and Technological Development in December 2017 (grant no 408333/2017-0). Recruitment began in August 2018 and by September 2019, we had enrolled the 101 participants. In addition to the patients referred by the national system of regulation, recruitment was made by medical outpatient referral and external indication. This is an ongoing study. We expect the results to be published in November 2020. CONCLUSIONS: At the end of the project, in case of a positive result, a protocol for the treatment of obesity based on the Brazilian Food Guide will be proposed to the Unified Health System.
