The food industry is challenged to develop nutritious and palatable foods that satisfy older people's needs. So, this work aimed to study the incorporation of nanoemulsions enriched with vitamin D3 and omega-3 fatty acids into two desserts (yogurt and fruit puree), characterizing their nutritional profile, viscosity, and color properties and evaluating their in vitro bioaccessibility and sensory response. The results showed that adding nanoemulsion modified the nutrition profile of desserts due to increasing lipids and calories. The desserts' physical properties were also affected, with a decrease in viscosity and a lightening of color. Regarding digestion, the enriched desserts presented a low release of free fatty acids (14.8 and 11.4%, respectively). However, fruit puree showed the highest vitamin D3 and omega-3 fatty acid in vitro bioaccessibility (48.9 and 70.9%, respectively). In addition, older consumers found this dessert more acceptable than yogurt due to the adequate intensity of its sensory attributes (aroma, flavor, sweetness, and consistency). Therefore, the fruit puree can be enriched with nanoemulsions loaded with vitamin D3 and omega-3 fatty acids to improve the bioaccessibility of lipid bioactive compounds and sensory performance, offering a health-enhancing option for older consumers.

The study developed traditional and light chocolate-flavor frozen dessert formulations, aimed at the general public, lactose intolerants, and vegans, and evaluated influences on quantitative sensory profiles and consumer acceptance with the replacement of sucrose by sweeteners in low-calorie versions. Twelve samples with different matrices were studied, sweetened with sucrose, sucralose, and stevia. The ideal concentration of sucrose (9%: dairy samples and 15%: vegan samples) was determined by the JAR scale. The sweetness equivalence was determined by the magnitude estimation method. The physical-chemical parameters were evaluated: pH, overrun, melting, and texture. The sensory profile evaluated through Quantitative Descriptive Analysis (QDA). The QDA data were correlated with acceptance data by partial least squares regression (PLS). The results showed that the substitution of traditional milk by lactose-free milk in the formulation did not change the characteristics of the chocolate ice cream. The use of sweeteners presented differences for milk flavor, bitter taste, bitter residual, and melting. The use of stevia extract was characterized by the presence of bitter taste, residual sweet and bitter that inhibited the perception of milk flavor, but not directly impacting the acceptance by consumers. The sucralose presented a profile closer to the sucrose, presenting lower intensity for the undesirable attributes such as bitter taste and residual bitter. There was no significant difference in the use of soy or rice protein in vegan versions, however, the use of sweeteners and body agents negatively impacted consumers' acceptance by attenuating the flavor of vegetable protein and raising gummy coating during the melting. PRACTICAL APPLICATION: This study shows the development and sensory profile of frozen chocolate desserts. Traditional and modified samples have also been produced for consumers with dietary restrictions such as vegans, vegetarians, lactose intolerants, and diabetics. Throughout the sensory and statistical analysis, it was identified how to replace sucrose by the natural glycoside sweetener of steviol, as well as the impact on the sensory profile and the acceptance of the different formulations. The results found may provide important information for researchers in food industries who need to produce frozen chocolate desserts for vegans, vegetarians, lactose intolerant, and diabetic consumers. Stevia and sucralose were good substitutes for sucrose in the formulation of frozen desserts without lactose, but not in vegan versions (with rice and soy protein).

RESUMO

The objective of the present chapter was to demonstrate the state of the art in the recent advances in nutritional and functional components of dairy products research. In this chapter, the main mechanisms responsible and essential for a better understanding of nutritional and functional values of the components of milk and dairy products are highlighted. It also includes a discussion about the positive impacts of fermented milk, cheese, butter, ice cream, and dairy desserts components on the consumer's health.

The development of strategies to reduce sugar intake of children and adolescents has been deemed necessary to cope with the global obesity epidemic. In this context, the aims of the present work were to study attitudes towards sugar reduction in three dairy products of children and adolescents of two income levels and to assess if these attitudes were modulated by the inclusion of the traffic light system on labels. A total of 646 children and adolescents from three primary/secondary schools in Montevideo (Uruguay) participated in the study. A total of twelve labels were designed following a full factorial design with three variables: dairy product (3 levels: yogurt, chocolate-flavoured milk and vanilla milk dessert), sugar reduction claim (2 levels: absent and present "20% less sugar") and traffic light system (2 levels: absent and present). Children had to evaluate their expected liking of the labels and to answer a check-all-that-apply question composed of terms related to tastiness, healthfulness and fun. Sugar claim significantly increased children and adolescents' expected liking scores (p=0.01), suggesting they had a positive attitude towards sugar reduction in the evaluated dairy products. However, the influence of sugar reduction claim on hedonic expectations and healthfulness perception was modulated by the inclusion of the traffic-light system on labels (p=0.01). This front-of-pack nutrition labelling scheme increased their unhealthfulness perception of products with high sugar content and could potentially discourage their consumption. Age and income modulated the influence of these strategies on hedonic and healthfulness perception (p<0.05).

Neste trabalho, verificou-se a viabilidade de Lactobacillus casei em flan de chocolate, além de sua sobrevivência em condições que simulam o trato gastrointestinal humano. Após 1 e 15 dias da produção, a população de L. casei presente na sobremesa foi avaliada, e o flan foi submetido, em seguida, a uma solução ácida, durante 30, 60, 90 e 120 minutos, e a uma solução de sais biliares, por um período de 150 minutos. Após cada um desses tempos, a população de L. casei foi observada. Os resultados foram avaliados por meio de análise de variância (ANOVA) e teste de Tukey. A população de L. casei no flan foi maior que 109 UFC/g durante a vida de prateleira do produto, valor este, maior que o estabelecido para um alimento probiótico pela legislação brasileira. L. casei mostrou-se relativamente resistente às condições simuladas do trato gastrointestinal avaliadas neste trabalho, uma vez que apesar de sua população ter sido reduzida durante os testes in vitro, esta manteve-se acima de 106 UFC/g. O flan de chocolate mostrou-se um excelente alimento para a introdução de microrganismos probióticos, especialmente L. casei, uma vez que observou-se altas populações no produto, mesmo após os testes de resistência in vitro simulando parte do processo digestivo humano.


The aim of this work was to verify the viability of Lactobacillus casei in chocolate flan as well as its survival under simulated human gastrointestinal conditions. After 1 and 15 days of manufacture, the dessert was evaluated for L. casei population and subsequently submitted to acidic solution for 30, 60, 90 and 120 min and to bile salts solution for 150 min. After each time, L. casei population was evaluated. The results were evaluated by variance analysis (ANOVA) and Tukeys test. The population of L. casei in the flan was above 109 CFU/g during the shelf life, whose value is above the limit established for a probiotic food by the Brazilian legislation. L. casei was relatively resistant to the simulated gastrointestinal conditions tested in this study, once the population reduced during the in vitro tests but remained above 106 CFU/g. Chocolate flan showed to be an excellent food for addition of probiotic microorganisms, especially L. casei, once it was observed high populations in the product even after in vitro resistance tests simulating the human digestive process.

El consumo de fibra dietaria se ha asociado con propiedades de alimentos funcionales porque provee condiciones que favorecen la salud intestinal, la prevención de cáncer de colon, las enfermedades cardiovasculares y ayuda en el mantenimiento del peso. En el presente estudio se busca elaborar y evaluar un postre lácteo adicionado con fibra de residuos resultantes de la separación de pulpa de naranja. Se selecciona la fibra de naranja como materia prima para la elaboración de postres, ya que se trata de una buena fuente de fibra dietaria tanto soluble como insoluble; además, en la caracterización sensorial, realizada por jueces entrenados, se encuentra que esta fibra presenta olor y aroma propios de la fruta y características texturales bucales agradables. El análisis proximal muestra que la fibra de naranja contiene un 59.1 % de fibra dietaria total FDT y la fracción soluble FDS es de 27.5 %, con buen contenido de hierro y fósforo y otros nutrientes a excepción de la grasa cruda. Desde el punto de vista tecnológico es factible incorporar hasta un 5.0 % de fibra de naranja en el postre lácteo, el cual presenta un 2.1 % de grasa láctea, 7.3 de sólidos lácteos y un 25.3 % de sólidos totales. El perfil del sabor muestra que el postre con fibra de naranja presenta una calidad sensorial media. Los descriptores de sabor que presenta este producto son: naranja, cítrico, ácido, dulce, cocido y con un sabor residual amargo. Los descriptores de textura percibidos son: húmedo, blando, masticable y fibroso. Este nuevo producto alimenticio aporta los nutrientes propios y una cantidad adicional de fibra, lo que lo convierte en alimento saludable y una alternativa agradable, sencilla y económica para que las personas incrementen el consumo diario de fibra dietaria. Además, mediante el aprovechamiento de los residuos de la transformación de naranja se contribuye a disminuir la contaminación ambiental.


The consumption of dietary fiber has been associated with functional food properties which improves people's intestinal health. It also contributes towards the prevention of colon cancer, cardiovascular diseases, and weight control. The purpose of this study is to prepare and evaluate a milk dessert added with fiber from residues resulting from orange pulp separation. Orange fiber is selected as a raw material to prepare desserts because orange is a good source of soluble and insoluble dietary fiber and besides in the sensorial characterization made by trained judges, it was found that this fiber has odor and aroma of the fruit -the orange- and pleasant textural mouth characteristics. Proximal analysis shows that orange fiber has 59.1 % of total dietary fiber, and the soluble fraction is 27.5 %, with a good content of iron, phosphorus, and other nutrients, except for raw grease. From the technological point of view, it is feasible to incorporate until 5.0 % of orange fiber in the milk dessert, which presents 2.1 % of milk fat, 7.3 of milk solids, and a 25.3 % of total solids. The taste profile shows that the dessert with orange fiber has a medium sensorial quality. Taste describers of this product are: orange, citric, sour, sweet, cooked, and with a residual bitter flavor. Texture describers perceived are: humid, soft, masticable, and fibrous. This new food contributes with its own nutrients and with an additional quantity of fibers which make it a healthy food and are a pleasant, simple, and economic alternative, so people can increase their daily intake of dietary fiber. Besides, through the use of residues in orange transformation, environmental pollution can be decreased.
