The objective of this exploratory study was to assess if microencapsulated arginine influences the physicochemical quality of beef. The study included three genetic groups: Angus, Hereford, and Angus × Hereford crossbreed. Two encapsulation systems were used with carnauba wax, at ratios of 3:1 and 2:1, carnauba wax:core (arginine), respectively. A control treatment was also included with no arginine addition. Encapsulated arginine with a 3:1 ratio increased redness by 19.66 at 28 d aged beef compared to the control and 2:1 ratio with values of 18.55 and 16.77, respectively (p = 0.01). Encapsulated arginine at a 3:1 ratio showed the lowest meat shear force values with 24.32 N at 28 d of ageing (p < 0.001). The Angus breed also had a low value of 24.02 N (p < 0.001). Finally, the highest values of intramuscular fat were observed with the inclusion of arginine in a 3:1 ratio. The fat value reached 2.12% with a 3:1 ratio (p = 0.002), while in the Angus breed it was 1.59%. The addition of carnauba wax-encapsulated arginine can improve meat quality. It enhances red color, tenderness, and marbling in bovine meat.

This study aimed to evaluate for the first time the temporal dynamic changes in early postmortem proteome of normal and high ultimate pH (pHu) beef samples from the same cattle using a shotgun proteomics approach. Ten selected carcasses classified as normal (pHu < 5.8; n = 5) or high (pHu ≥ 6.2; n = 5) pHu beef from pasture-finished Nellore (Bos taurus indicus) bulls were sampled from Longissimus thoracis muscle at 30 min, 9 h and 44 h postmortem for proteome comparison. The temporal proteomics profiling quantified 863 proteins, from which 251 were differentially abundant (DAPs) between high and normal pHu at 30 min (n = 33), 9 h (n = 181) and 44 h (n = 37). Among the myriad interconnected pathways regulating pH decline during postmortem metabolism, this study revealed the pivotal role of energy metabolism, cellular response to stress, oxidoreductase activity and muscle system process pathways throughout the early postmortem. Twenty-three proteins overlap among postmortem times and may be suggested as candidate biomarkers to the dark-cutting condition development. The study further evidenced for the first time the central role of ribosomal proteins and histones in the first minutes after animal bleeding. Moreover, this study revealed the disparity in the mechanisms underpinning the development of dark-cutting beef condition among postmortem times, emphasizing multiple dynamic changes in the muscle proteome. Therefore, this study revealed important insights regarding the temporal dynamic changes that occur in early postmortem of high and normal muscle pHu beef, proposing specific pathways to determine the biological mechanisms behind dark-cutting determination.

Proteomics has been widely used to study muscle biology and meat quality traits from different species including beef. Beef proteomics studies allow a better understanding of the biological processes related to meat quality trait determination. This study aimed to decipher by means of two-dimensional electrophoresis (2D-PAGE), mass spectrometry and bioinformatics the changes in post-mortem muscle with a focus on proteins differentially expressed in the Longissimus thoracis (LT) muscle of immunocastrated young heifers and steers. Carcass traits, chemical composition, pH, instrumental color (L*, a*, b*), cooking loss and Warner-Bratzler shear force (WBSF) of meat from F1 Montana-Nellore cattle were also evaluated. Backfat thickness (BFT) and intramuscular fat content (IMF) were 46.8% and 63.6% higher in heifers (p < 0.05), respectively, while evaporation losses (EL) were 10.22% lower compared to steers. No differences (p > 0.05) were observed for tenderness evaluated by WBSF (3, 10, and 17 days post-mortem), pH, and color traits (L*, a* and b*) between the experimental groups. The study revealed several proteins to be differentially expressed proteins in heifers compared steers (p < 0.05). In heifers, proteins involved in nutrient transport (TF, ALB, and MB), energy metabolism (ALDOA, GAPDH, and PKM), and oxidative stress and response to stress (HSPA8 and CA3) were associated with a greater BFT and IMF deposition. The higher expression of these proteins indicated greater oxidative capacity and lower glycolytic activity in the LT muscle of heifers. In steers, there was greater abundance of protein expression related to muscle contraction and proteins of structure (ACTA1, TPM2 and TNNT3), energy metabolism (ENO1, ENO3, PYGM, PGM1 and TPI1) and ATP metabolism (ATP5F1B, PEBP1 and AK1), indicating greater glycogenolysis in LT muscle, suggesting a shift in the glycolytic/oxidative fibers of steers.

Wet distiller grains (WDG) are a corn by-product rich in protein and fiber that can be used in feedlot diets. This study evaluated F1 Angus-Nellore bulls fed on a control diet vs. WDG (n = 25/treatment). After a period of 129 days on these feeds, the animals were slaughtered and Longissimusthoracis samples were collected for both a meat quality evaluation and gel-based proteomic analyses. A greater ribeye area (99.47 cm²) and higher carcass weight (333.6 kg) (p < 0.05) were observed in the WDG-finished cattle compared to the control (80.7 cm²; 306.3 kg). Furthermore, there were differences (p < 0.05) in the intramuscular fat between the WDG and control animals (IMF = 2.77 vs. 4.19%), which led to a significant decrease (p < 0.05) in saturated fatty acids (FA). However, no differences (p > 0.10) were observed in terms of tenderness, evaluated using Warner-Bratzler shear force (WBSF). The proteomic and bioinformatic analyses revealed substantial changes in the biological processes, molecular functions, and cellular components of the WDG-finished cattle compared to the control. Proteins related to a myriad of interconnected pathways, such as contractile and structural pathways, energy metabolism, oxidative stress and cell redox homeostasis, and transport and signaling. In this experiment, the use of WDG supplementation influenced the protein expression of several proteins, some of which are known biomarkers of beef quality (tenderness and color), as well as the protein-protein interactions that can act as the origins of increases in muscle growth and reductions in IMF deposition. However, despite the effects on the proteome, the tenderness, evaluated by WBSF, and fatty acid profile were not compromised by WDG supplementation.

Abstract Background: pH, subcutaneous fat thickness (SFT), and color are fundamental variables to define the organoleptic characteristics of meat. However, multivariate relationships of those traits remain unexplored in bovine meat. Objective: To investigate the multivariate relationships among pH, subcutaneous fat thickness, and color parameters in bovine meat using canonical correlation analysis. Methods: A dataset containing 173 individual records of pH, SFT, and color parameters (a*: intensity of red color, b*: intensity of yellow color, and L*: lightness) from five Brazilian beef cut types (Breed: Nellore; cuts: acém, contrafilé, fraldinha, patinho and picanha) was constructed. Multivariate relationships between color variables (a*, b*, and L*) and chemical variables (pH and SFT) were explored using the CANCORR procedure of SAS. Results: Two canonical correlations between U (a*, b*, and L*; color variables) and V (pH and SFT; chemical variables) variates were significant (p<0.01). First and second canonical correlations were 0.463 and 0.282, respectively. Canonical weights for variates were for U1: a* = 0.707, b* = 0.406, and L* = -0.039; U2: a* = 0.364, b* = -0.898, and L* = 1.234; V1: pH = -0.376 and SFT = 0.935; V2: pH = 0.927 and STF = 0.356. Conclusion: Subcutaneous fat thickness significantly affected intensity of red and yellow colors, whereas pH significantly affected lightness. The results of this study may be useful for a better understanding of the role of muscle metabolism and its implications on the organoleptic characteristics of bovine meat.

Sin embargo, su relación multivariada en carne bovina permanece inexplorada hasta ahora. Objetivo: Investigar la relación multivariada entre el pH, SFT y parámetros de color en carne bovina mediante el análisis de correlación canónica. Métodos: Se construyó una base de datos con 173 registros individuales de pH, SFT y parámetros de color (a*: intensidad de color rojo, b*: intensidad de color amarillo y L*: luminosidad) de cinco tipos de cortes de carne bovina brasileña (Raza: Nellore; cortes: acém, contrafilé, fraldinha, patinho y picanha). La relación multivariada entre las variables de color (a*, b* y L*) y las variables químicas (pH y SFT) se exploró usando el procedimiento CANCORR de SAS. A relação multivariada entre variáveis de cor (a *, b * e L*) e variáveis químicas (pH e SFT) foi explorada usando o procedimento CANCORR do SAS. MicroRNAs (miRNAs) are key regulators of gene expression, potentially affecting several biological processes, whose function can be altered by sequence variation. Hence, the integration of single nucleotide polymorphisms (SNP) and miRNAs can explain individual differences in economic traits. To provide new insights into the effects of SNPs on miRNAs and their related target genes, we carried out a multi-omic analysis to identify SNPs in miRNA mature sequences (miR-SNPs) associated with fatty acid (FA) composition in the Nelore cattle. As a result, we identified 3 miR-SNPs in different miRNAs (bta-miR-2419-3p, bta-miR-193a-2, and bta-miR-1291) significantly associated with FA traits (p-value < 0.02, Bonferroni corrected). Among these, the rs110817643C>T, located in the seed sequence of the bta-miR-1291, was associated with different ω6 FAs, polyunsaturated FA, and polyunsaturated:saturated FA ratios. Concerning the other two miR-SNPs, the rs43400521T>C (located in the bta-miR-2419-3p) was associated with C12:0 and C18:1 cis-11 FA, whereas the rs516857374A>G (located in the bta-miR-193a-2) was associated with C18:3 ω6 and ratio of ω6/ω3 traits. Additionally, to identify potential biomarkers for FA composition, we described target genes affected by these miR-SNPs at the mRNA or protein level. Our multi-omics analysis outlines the effects of genetic polymorphism on miRNA, and it highlights miR-SNPs and target candidate genes that control beef fatty acid composition.

This study evaluated the effects of freezing, prior to and after dry aging, on the microbiological and physical-chemical quality of beef. Strip loins (n = 24) from 12 carcasses were assigned to four treatments: non-frozen dry aging (Dry); dry aging, steak fabrication, freezing and slow thawing (Dry + ST); freezing, fast thawing (FT; 20 °C/15 h) and dry aging (FT + Dry); freezing, slow thawing (ST; 4 °C/48 h) and dry aging (ST + Dry). Freezing conditions were - 20 °C/28 days and dry aging conditions were 2 °C/70% relative humidity, for 28 days. Freezing prior to dry aging did not affect the microbial counts compared to Dry. However, FT + Dry and ST + Dry increased (16%) total process loss (P < .05) compared to Dry and Dry+ST. Moreover, freezing changed volatile compounds profile. Thus, freezing prior to dry aging was not a feasible process due to increased process loss, while freezing after dry aging was considered a viable alternative to preserve the steaks without compromising beef physical-chemical traits.

The objectives of this study were to benchmark cow-calf producer perspectives on management strategies and challenges, and to determine if demographic differences and Beef Quality Assurance (BQA) certification status influenced the frequency of certain management strategies. A total of 1,414 responses from cow-calf producers in 44 states were collected through an online survey conducted in partnership with BEEF, a producer-focused magazine. Survey recipients were asked 30 questions to gather demographic information, respondents' current handling and health management practices, and how they prioritized industry challenges. The frequency of management methods and decisions such as preconditioning and identification methods were impacted by respondent age, operation size, location, and BQA certification (Ps ≤ 0.009). BQA-certified respondents more frequently used electronic ear tags and freeze branding (Ps = 0.009). Overall, 74.5% of respondents were preconditioning their calves. Respondents who were BQA certified more frequently preconditioned their calves (449; 81.5%) compared with those who were not BQA certified (582; 70.4%) (P < 0.001). BQA training seems to be having a positive impact on production practices. Respondents identified cow-calf health as the biggest beef industry challenge and identified land availability or price as the biggest challenge to producers' own operation. Respondents identified bovine respiratory disease, flies, pinkeye, and reproductive health as the most important animal health issues on producers' operations. Health challenge responses varied significantly by producer age, beef cow inventory, and region of the United States (Ps < 0.001). Calf or neonate health was most commonly identified as the biggest challenge for respondents under the age of 30 years. Producers between the ages of 55 and 70 years most commonly responded that the Veterinary Feed Directive or regulations were more of a challenge than other age groups. Respondents clearly identified managing herd health as a challenge throughout the survey. Respondents with similar herd health challenges were identified based on demographic categorization, such as age of respondent and region.

The objective of this study was to benchmark how cow-calf producers were marketing their calves, their priorities when selecting replacements, and if producers saw value in a quality assessment focusing on animal handling and care. A total of 1,414 responses from cow-calf producers in 44 states were collected through a survey conducted in partnership with BEEF. Thirty questions were asked of respondents to gather demographic information, establish at what age and through what avenue respondents were marketing their calves, and gauge respondent perspectives on selection decisions, pain management and a quality assessment outlining handling and care guidelines. The percentage of respondents who marketed their calves at certain ages varied by herd size (P < 0.001). Respondents with 50 head or less or more than 1,000 head most commonly retained their calves through finishing and respondents with 51 to 200 head and 201 head to 500 head more frequently backgrounded and then sold their calves. Respondents' top priorities when selecting bulls were calving ease, followed by growth and feed efficiency traits. When selecting females, top priorities were reproductive efficiency, followed by mothering ability. The percentage of respondents using pain management differed by whether a veterinarian had offered to administer a drug for pain management (P < 0.001). 13.5% of respondents answered yes, and a veterinarian had offered to administer a drug for pain management when castrating or dehorning. Of those 13.5% who responded yes pain management had been offered, and 54.55% of respondents chose to use a pain relief method. A higher percentage of respondents that precondition also more frequently indicated that they used a pain relief method when castrating or dehorning, though it was still a low percentage (P = 0.006). Overall, 46.3% of respondents saw value in handling and care guidelines and 54.9% of respondents saw value in a program including source and age verification, a vaccination plan, and handling and care guidelines. Respondents who were Beef Quality Assurance (BQA) certified had a beef cow inventory of 501 to 1,000 head, who preconditioned their calves and backgrounded them before selling, and who lived in the West most commonly saw value in a quality assessment outlining handling and care guidelines.

BACKGROUND: The objective of this study was to evaluate the impact of red wine-based marination on the oxidative stability and overall quality of roasted beef strip steaks. Four treatments were considered, according to the type of wine (300 mL dealcoholized wine/kilogram meat): 'Cabernet Sauvignon', 'Tempranillo', 'Isabel' (ISA), and a control. The formation of potentially harmful protein oxidation products during roasting, including protein carbonyls and dityrosines, was inhibited by bioactive components of the wine. RESULTS: ISA marinades were particularly resistant to protein oxidation, which could be due the particular composition of this wine in phenolic compounds. Wine-based marination was also effective in controlling the formation of lipid-derived volatile compounds, such as hexanal, octane-2,5-dione, and heptan-2-one, which led to a reduced perception of rancidity by panelists. Additionally, wines contributed to spicing roasted beef with wine-derived flavors from esters, alcohols, and lactones. CONCLUSIONS: Hence, marination may be a feasible means to alleviate the potential negative effects that oxidative reactions cause to meat proteins, improve beef quality, and diversify beef cuts into a variety of safer and more flavored meat products. Among wines, ISA appeared to be most promising in terms of antioxidant protection; however, the limited consumer acceptance of steaks treated with this wine may be regarded as a drawback to be sorted out in future studies. © 2018 Society of Chemical Industry.

Thirty Aberdeen Angus crossbred steers (281 ± 16 kg) were used to test the effect of finishing feeding system on growth performance, meat quality and fatty acid (FA) profile in intramuscular fat. Steers were fed in confinement (forage:concentrate ratio of 50 : 50; DM basis) or with different levels of energy supplementation (0, 0.4, 0.8 and 1.2% BW) at pasture (Avena strigosa Schreb and Lolium multiflorum L.). There were no differences between treatments for ADG (average=1.60 kg/day), hot carcass weight (HCW) (average=229 kg) and subcutaneous fat depth (average=3 mm). Dressing % (P=0.06; tendency) and carcass ADG (P=0.02) linearly increased with level of supplementation for pasture steers. No differences were observed between treatments for tenderness, marbling, pH, color b*, or cooking loss and drip loss in samples of Longissimus dorsi. However L* increased linearly (P=0.05) with level of supplementation. The concentrations of myristic, palmitic, estearic and linoleic FA did not differ among treatments. The concentration of n-3 FA increased (P<0.001) in steers at pasture compared with confinement, but n-6 FA concentrations did not differ between feeding system. Supplementation up to 0.4% BW increase (P<0.001) conjugated linoleic acid (CLA) and linolenic FA concentrations in intramuscular fat when compared with confinement. The level of supplementation on pasture linearly decreased (P<0.001) n-3 and CLA and linearly increased (P=0.001) the n-6 : n-3 ratio. Finishing of steers grazing winter pasture with energy supplementation or in confinement fed a medium-concentrate diet did not affect meat quality (tenderness, marbling, parameter b* on the CIE L*a*b* scale, cooking and drip losses) except for a* and L*. However, intramuscular fat of animals finished at pasture with moderate level of supplementation compared to animals fed in confinement had greater concentration of CLA, linolenic, and n-3, and lower n-6 : n-3 in intramuscular fat.

With a herd of 209 million cattle, Brazilian beef production estimate for 2023 is 10,935 million tons, representing an increase of 28.9% and accounting for 20% of the world trade. Beef cattle production is constantly evolving; however, there are extremes, ranging from simple existing farm ranges to intensive forage systems, strategic supplementation, updated health and genetic improvement programs for the production of quality beef. This modern production is based on scientific research carried out at universities and other research institutions. A new generation of professionals with multidisciplinary knowledge and a holistic vision of the productive chain-proposed management practices to reduce greenhouse gas emissions in the production of grass-fed beef cattle, whose meat has high omega-3 and CLA contents. Age at slaughter of steers and of heifers at first mating, significant increases in the ratio calves/100 cows, adequate traceability for pastoral systems with hundreds or thousands of animals per farm and a more intense transference of technology are required.

The livestock sector faces the challenge to respond to the growing demand for animal protein from an expanding population while reducing environmental impact through GHG emissions. Globally about 2.836 million tons of CO2-eq were emitted by the beef production sector equivalent to 46,2 kg CO2-eq per kg carcass weight (CW). From the 1.485 million cattle head spread out over the world, 82% are on extensive grazing systems while only 18% are on high productive intensive systems. Among the top ten beef exporter countries, five are located in Latin America accounting a quarter of the global stock and two of them, Argentina and Uruguay, produce on temperate pastures under grazing systems. In Argentina, the livestock area was reduced in favor of increasing the grain cropping area, which took place in the last two decades. Production systems were intensified to maintain cattle stock. Cattle programs changed from 100% pasture to pasture supplemented with cereal grains and conserved forages, and confinement on grain feeding for fattening was incorporated. Due to land sharing competition with cash crops, no increment of cattle stock is expected therefore improving production efficiency appears as the only way to increase beef production while reducing methane emissions intensity. Beef produced on intensive grazing systems on supplemented pastures maintained organoleptic, nutritional and lipid profile than that of beef produced on pure grazing systems.

Fueron obtenidas muestras de toros Charolais de registro (N=130) candidatos a sementales para hatospie de cría manejados en un centro de pruebas de comportamiento productivo, con la finalidad de estimarlas frecuencias genotípicas y alélicas de tres marcadores simples de un solo nucleótido que han sidoasociados con características de calidad de la carne en ganado bovino. Se analizaron dos polimorfismosen el gen Calpaína, CAPN316 y CAPN4751, y la mutación Q204X, privada de la raza Charolais, en el genMiostatina. Se encontró alta frecuencia del alelo normal en CAPN316 (f=0.85) y frecuencia similares delos alelos normal y mutado para el marcador CAPN4751 (f= 0.58 y 0.48, respectivamente). Se analizó lafrecuencia de la mutación Q204X del gen Miostatina, encontrándose baja frecuencia (f= 0.03) atribuiblea la selección negativa para la característica de doble musculatura en los últimos 30 años. Se discutenlas implicaciones del estudio y validación del efecto de estos marcadores en el sistema de productor decarne bovina. La implementación del uso de estos marcadores podría ayudar a incentivar el desarrollo delsistema, el fomento de nichos de mercado para la calidad de la carne y sobre aumentar la rentabilidad delos sistemas de producción de carne actuales.


Samples from registered Charolais sire candidate bulls for breeding herds and managed in aperformance test station (N=130) were analyzed in order to estimate genotypic and allelic frequencies ofthree single nucleotide polymorphisms associated to beef quality traits. Two Calpain gene SNP markers,CAPN316 and CAPN4751, and the Charolais private mutation Q204X associated to double-musclingphenotype, were assessed. High frequency of normal allele was observed in CAPN316 (f=0.85) and similarfrequencies for normal and favorable alleles in CAPN4751 (f=0.58 and 0.42, respectively). For Q204X,a low prevalence for the double muscling promoter allele was observed (f=0.03) attributable to negativeselection criterion over this trait in the last 30 years. Implication and validation effects of the marker effectson the beef production system are discussed. Implementation of marker assisted management could helpsystem development, support creation of quality meat niches and facilitate the increasing profitability forcurrent beef production industry.


Foram obtidas amostras de machos da raça Charolês registrado (N=130) candidatos a seremreprodutores para fazendas de cria, manejados em una central de teste de desempenho, com a finalidadede estimar as freqüências genotípicas e gênicas de três marcadores de um só nucleótido, associados comcaracterísticas de qualidade da carne bovina. Foram analisados os polimorfismos do gen da Calpaína,CAPN316 e CAPN4751, e a mutação Q204X, privada da raza charolês, no gen da Miostatina. Foramencontradas freqüências altas do alelo normal na CAPN316 (f= 0.85) e freqüências similares dos alelosnormal e mutado para o marcador CAPN4751 (f=0.58 e 0.48, respectivamente). Foi encontrada baixafreqüência da mutação Q204X do gen Miostatina (f=0.03) devido à seleção negativa para a característicade dupla musculatura nos últimos 30 anos. O uso destes marcadores poderia ajudar a incentivar odesenvolvimento e fomento de mercados específicos para qualidade de carne e aumentar a rentabilidadedos sistemas de produção de carne atuais.

Thirty-six Polled Hereford steers with an average of 2 years old and 436kg live weight were used to verify the effects of hot boning and aging on meat quality. The hot boning was performed by removal of the Longissimus dorsi muscle when entering the chilling room. The loins were aged for 14 days at 2°C. The type of boning did not affect the temperature drop (P > 0.05), pH fall (P > 0.05), meat color, losses at thawing and cooking (P > 0.05). Hot boning caused more exsudation on the vacuum package (P 0.05). The type of boning also did not affect tenderness. juiciness and palatability of the meat (P > 0.05) although the sarcomere length was shorter in hot boning than in the controls (1.66 and 1.85µ, respectively, P .05). Aging promoted a darker color in vacuum packaged meat (P 0.05), as well a tendency for more exsudation in the bag. It can be concluded that hot boning had no effect on the quality of the meat, although presenting higher exsudation and shorter sarcomere length. Aging did not improve the quality of the meat that was hot boned.


Foram avaliados os efeitos da associação da desossa a quente e maturação sobre a qualidade da carne bovina. Foram utilizados 36 novilhos Polled Hereford, abatidos com 24 meses de idade e peso médio ao abate de 436kg. A desossa a quente constou da retirada do músculo Longissimus dorsi logo após a entrada das carcaças no resfriamento. A maturação foi realizada mantendo-se a carne, embalada a vácuo, à temperatura de 2°C por 14 dias. O tipo de desossa não influenciou as curvas de queda da temperatura (P > 0,05) e pH (P > 0,05), coloração após o resfriamento e quebras ao descongelamento e cocção (P > 0,05). A desossa a quente provocou maior exsudação na embalagem a vácuo (P 0,05). O tipo de desossa não afetou a suculência, palatabilidade, maciez e força de cisalhamento (P > 0,05), porém houve maior encurtamento do sarcômero (P 0,05) com a desossa a quente (1,66µ) do que com a normal (1,85µ). A maturação promoveu um escurecimento da carne (P 0,05), assim como tendeu a aumentar o grau de exsudação. Pode-se concluir que a desossa a quente, apesar de não prejudicar a maciez da carne, aumentou a exsudação e promoveu um encurtamento do sarcômero. A maturação não melhorou a qualidade da carne desossada em pré-rigor.
