The pre-slaughter operations are characterized by all the steps after the phase of raising at the farm until hanging ofbirds on the slaughter line, and this period is relatively faster than the farm phase. Nevertheless, this phase can cause acutestress in broilers, due to the direct handling of the birds at catching and by offering unknown stressful stimuli to the birdsduring transportation, lairage and hanging on the slaughter line. Other stressful factors such as handling the bird, cratingdensity, impacts on live load, distance and duration of transport between farm and slaughterhouse, and microclimaticconditions in transport and lairage affect the welfare and, consequently, the meat quality of broiler chickens. The effectsof these losses will be felt by all sectors of poultry farming. For all these factors, it is important that the poultry productionchain be aligned in the near future to meet the external and internal consumers' requirements regarding animal welfare.Therefore, the aim of this review is to address the main critical points, which affect the welfare of broilers during pre-slaughter operations in intensive production systems.

Considerando a possibilidade de erros na identificação das lesões e a necessidade de melhorar o diagnóstico, o objetivo desse trabalho foi caracterizar macroscopicamente e microscopicamente as principais lesões parasitárias observadas em ovinos na linha de abate. Os materiais foram colhidos durante duas visitas a um matadouro frigorífico de ovinos no estado do Rio Grande do Sul. Totalizaram-se 161 amostras com lesões parasitárias de ovinos em diferentes órgãos. As alterações observadas incluíam hidatidose, cisticercose por Cysticercus ovis, cisticercose por Cysticercus tenuicollis, sarcocistose (morfologia compatível com Sarcocystis gigantea), fasciolose (Fasciola hepatica) e esofagostomose. Das 161 amostras, 25,5% correspondiam a hidatidose, e os cistos hidáticos foram observados, predominantemente, nos pulmões (46,3%) e fígado (41,5%). Ao corte, os cistos demonstraram três padrões morfológicos: cistos uniloculares viáveis (34%); cistos multivesiculares viáveis (31,7%); e cistos hidáticos (uniloculares e multivesiculares) degenerados (34%). As lesões de cisticercose por C. ovis (22,4%) foram visualizadas no coração (63,9%), língua (13,9%), músculo masseter (11,1%) e diafragma (11,1%). Morfologicamente os cisticercos foram classificados em vivos (viáveis), degenerados e mineralizados. Lesões provocadas por S. gigantea (19,2%) estavam presentes na túnica muscular do esôfago, na língua e na laringe. Macroscopicamente, observaram-se múltiplas estruturas nodulares brancas que continham uma cápsula fibrosa e lúmen preenchido por material gelatinoso translúcido. Cisticercose por C. tenuicollis representaram 18,6% das lesões. Os cistos foram observados aderidos no omento, no mesentério, na cápsula do fígado e na vesícula biliar. Morfologicamente os cistos foram classificados como vivos (viáveis) e degenerados. Os cistos vivos apresentavam a parede translúcida ou levemente opaca, contendo um escólex no seu interior.(AU)


Considering the possibilities of mistaken diagnoses in identifying lesions at meat inspection this study was designed to provide data for a better-educated diagnosis by the meat inspectors through the gross and microscopic characterization of parasitic lesions observed in slaughtered sheep at the inspection line. One hundred and sixty-one samples of parasitic lesions were sampled from various organs of slaughtered sheep during two visits to a sheep abattoir located in the state of Rio Grande do Sul, Brazil. Lesions observed included hydatid cysts, cysticercosis due to Cysticercus ovis and to Cysticercus tenuicollis, sarcocystosis (morphology compatible with Sarcocystis gigantea), fasciolosis (Fasciola hepatica) and oesophagostomosis. Twenty-five point five percent of the 161 samples corresponded to hydatidosis and the hydatid cysts were observed predominantly in the lungs (46.3%) and liver (41.5%). Cysticercosis by C. ovis (22.4%) was observed in the myocardium (63.9%), tongue (13.9%), masseter (11.1%), and diaphragm (11.1%). Morphologically the cysticerci were classified as viable, degenerated or mineralized. Lesions caused by S. Gigantea (19.2%) were observed in the muscle layer of the esophagus, tongue, and larynx. Grossly there were multiple white nodular structures that contained a fibrous capsule with the lumen filled by translucent and gelatinous material. Cysticercosis by C. tenuicollis accounted for 18.6% of observed parasitic lesions; the cysts adhered to the omentum, mesentery, liver capsule, and serosal surface of gall bladder; grossly the cysts were classified as viable and degenerated. Viable cysts had translucent or slightly opaque walls and contained a single scolex.(AU)

As lesões hepáticas caracterizavam-se macroscopicamente por espessamento variável dos ductos biliares por fibrose e ocasionalmente havia exemplares de F. hepatica no lúmen dos ductos. Em oito casos, observaram-se áreas de acentuada necrose do parênquima hepático. Lesões provocadas por Oesophagostomum spp. perfizeram 6,8% dos casos. As alterações foram observadas no intestino delgado e intestino grosso de todos os ovinos e em dois casos, havia também envolvimento dos linfonodos mesentéricos. Nos intestinos, as lesões caracterizavam-se por nódulos bem delimitados, salientes na serosa, firmes e que invadiam também a camada muscular. Nos linfonodos havia obliteração do parênquima nodal por acentuada mineralização. É extremamente importante a identificação morfológica das diferentes lesões parasitárias encontradas nas linhas de abate em frigoríficos de ovinos, para posterior destino correto das mesmas. As alterações devem ser avaliadas com o intuito principal de reconhecer a sua capacidade infecciosa. Além disso, é fundamental o conhecimento dos locais anatômicos mais comuns em que cada alteração geralmente costuma ocorrer.(AU)

Cysticercosis by C. tenuicollis accounted for 18.6% of observed parasitic lesions; the cysts adhered to the omentum, mesentery, liver capsule, and serosal surface of gall bladder; grossly the cysts were classified as viable and degenerated. Viable cysts had translucent or slightly opaque walls and contained a single scolex. Degenerated cysts were white, firm and with a thick fibrous capsule and mineralized center. Lesions caused by F. hepatica accounted for 7.4% of the cases and were grossly characterized by variable fibrous thickening of bile ducts which occasionally contained the adult flukes in their lumina. In eight cases there were marked areas of necrosis in the hepatic parenchyma. Lesions caused Oesophagostomumspp. accounted for 6.8% of the observed parasitic cases and the changes were observed in all cases in the walls of the small and large intestine; in two cases mesenteric lymph nodes were also involved. In the intestines, lesions were characterized by firm well-circumscribed nodules prominent in the serosal surface and also invading the muscle layer. In the lymph nodes marked mineralization obliterated the nodal parenchyma. The correct identification of the various parasitic lesions found in the viscera of sheep in the abattoir inspection line it is important to dictate the proper destination of affected organs and carcasses. The lesions should be evaluated aiming to determine their infective capacity and to acquire knowledge about their more frequent anatomical sites.(AU)

Objetivou-se com este estudo conhecer o comportamento de ovelhas da raça Santa Inês em diferentes estágios fisiológicos durante o manejo pré-abate, assim como a perda de peso corporal, valores de hematócrito do sangue das mesmas e a qualidade da carne. Utilizaram-se 21 ovelhas de descarte, que foram distribuídas nos respectivos tratamentos: T1 = ovelhas que permaneceram por 60 dias em lactação com seus respectivos cordeiros e abatidas um dia após o desmame dos mesmos; T2 = ovelhas que permaneceram por 60 dias em lactação com seus respectivos cordeiros e mais um período aproximado de 30 dias sem os cordeiros e posteriormente foram abatidas; e T3 = ovelhas que permaneceram por 60 dias em confinamento e que não pariram durante o ano. O peso das ovelhas após o transporte foi menor para as do tratamento 1 em comparação às do tratamento 2. Os valores de hematócrito no sangue das ovelhas antes do transporte, após o mesmo e após o jejum dos animais no curral de espera não diferiram entre si, com valor médio de 58,50%. Concluiu-se que a qualidade da carne proveniente de ovelhas de descarte em diferentes estágios fisiológicos não é alterada pelo manejo pré-abate, quando realizado de maneira correta (evitando o estresse animal), quanto ao pH da carne.


The aim of this study was to know the behavior of Santa Inês ewes in different physiological stages during the pre-slaughter management, as well as their body weight loss, blood hematocrit values and meat quality. 21 discard ewes were used, arranged into the following treatments: T1 = ewes which remained in lactation for 60 days with their respective lambs and slaughtered one day after weaning; T2 = ewes which remained in lactation for 60 days with their respective lambs and one more period of approximately 30 days without the lambs and afterwards slaughtered; and T3 = ewes which remained in confinement for 60 days and did not give birth during the year. The weight of ewes after transportation was lower for T1 in comparison with T2. Blood hematocrit values of ewes before and after transportation and after fast in the waiting pen were not different among the treatments, with mean value of 58.50%. We concluded that the quality of meat of discard ewes in different physiological stages is not altered by pre-slaughter management, when correctly performed (avoiding animal stress), concerning meat pH.

The pre-slaughter period is considered critical in broiler production. Several factors contribute to increase the birds' stress, such as handling, harvesting, and transportation, negatively affecting their welfare. This study aimed at evaluating the addition of lemon grass (Cymbopogon citratusStapf) to the drinking water of broilers during the pre-slaughter period on their behavior, blood cortisol, and surface temperature. The study was carried out at the experimental farm of the Federal University of Grande Dourados (UFGD), Dourados, MS, Brazil. In total, 2594 broilers were distributed according to a completely randomized experimental design, in a 3x2x2 factorial arrangement, with four replicates per treatment. Treatments consisted of three different lemon grass levels (Cymbopogon citratus Stapf) used in the form of an infusion (0, 0.1, and 5 g per L of water), sex (male or female), and genetic strain (Ross(r) 308 or Cobb(r) 500). The infusion was offered when birds were 42 days old. On that day, blood was collected for blood cortisol level determination, broiler surface temperature was recorded, and an ethogram was applied to register broiler behavior. Blood cortisol level and broiler surface temperature were not affected by treatments (p>0.05). The behavior of beak opening was different between the genetic strains (p 0.05), being more frequent in Ross(r) 308 broilers. Lemon grass water content did not affect broilers' surface temperature when consumed during the pre-slaughter period.

This work was carried out to evaluate the animal performance, carcass characteristics and meat quality of crossbred heifers slaughtered at three different body weights. The heifers were slaughtered with 330 (Light), 360 (Medium) and 400 (Heavy) kg body weight. The final weight, average daily gain and carcass weight were greater for HEA heifers, intermediate for MED heifers and lower for LIG heifers. However, carcass dressing and pH were similar for the three heifers groups. Dripping loss, dissection loss and the muscle, fat and bone percentages on the 6th rib did not alter by slaughter weight. Slaughter weight did not affect the colour, shear force and lipid oxidation of meat. In conclusion, heavy heifers finished in pasture and that were concentrate-supplemented had better animal performance; however, the carcass characteristics and meat quality were similar for the three heifers groups.(AU)


Este trabalho foi realizado para avaliar o desempenho animal e características da carcaça e da carne de novilhas mestiças abatidas com três diferentes pesos vivos. As novilhas foram abatidas com 330 kg (LEV), 360 kg (MED) e 400 kg (PES). O peso vivo final, ganho médio diário e peso de carcaça foram superiores para as novilhas PES, intermediário para as novilhas MED e inferiores para as novilhas LEV. No entanto, o rendimento de carcaça e pH foram semelhantes para os três grupos de animais. As perdas por gotejamento, dissecação e as percentagens de músculo, gordura e ossos na 6ª costela não foram alteradas pelos três pesos de abate. Da mesma forma, o peso de abate não teve efeito sobre a coloração, força de cisalhamento e oxidação lipídica da carne. Em conclusão, novilhas mais pesadas terminadas em pastagem e suplementadas com concentrado apresentaram melhor desempeno animal; todavia, as características de carcaça e qualidade da carne não foram alteradas.(AU)

O peso vivo final, ganho médio diário e peso de carcaça foram superiores para as novilhas PES, intermediário para as novilhas MED e inferiores para as novilhas LEV. As perdas por gotejamento, dissecação e as percentagens de músculo, gordura e ossos na 6ª costela não foram alteradas pelos três pesos de abate. Da mesma forma, o peso de abate não teve efeito sobre a coloração, força de cisalhamento e oxidação lipídica da carne. Em conclusão, novilhas mais pesadas terminadas em pastagem e suplementadas com concentrado apresentaram melhor desempeno animal; todavia, as características de carcaça e qualidade da carne não foram alteradas.

RESUMEN

We aimed to describe the flow of slaughter pigs produced in MatoGrossobetween 2008 and 2012. We used data 9.426.729 of pork produced in MatoGrosso and transported for slaughter from January 2008 to December 2012, which conducted a descriptive analysis of the information, with frequencies of origin and destination; males and females in terms of months and years and the distances traveled. There was growth in the number of trips and pigs transported the State of MatoGrosso, with average values of 19.83 and 19.61% in the study period, respectively. There was a variation from 142.73 to 147.42 of pigs transported per trip. The frequencies of the lower transport distances increased to 200 km, while reducing the frequency of those up to 500 km. Therefore concludes that long of years there have been changes on the volume of animals, distance and routes, which, increased the volume of transported pigs, reduced the volume of pigs transported long distances, and there was installation of plant closest to the production of pigs. Thus, 73.47% of pigs transported to slaughter traveled between zero and 200 km from origin to destination, and the average distance was 205.74 km.


Objetivou-se descrever o fluxo de suínos para abate produzidos no Estado de Mato Grosso entre os anos de 2008 e 2012. Foram utilizados dados de 9.426.729 suínos produzidos no Estado de Mato Grosso e transportados para abate de janeiro de 2008 a dezembro de 2012, no qual realizou-se análise descritiva das informações, com frequências de origem e destino; machos e fêmeas em função dos meses e anos e as distâncias percorridas. Observou-se crescimento no número de viagens e de suínos transportados do Estado de Mato Grosso, com valores médios de 19,83 e 19,61% no período avaliado, respectivamente. Registou-se uma variação de 142,73 a 147,42 de suínos transportados por viagem. As frequências de transporte a distâncias inferiores à200 km aumentaram, enquanto a frequência acima de 500 km reduziram. Portanto, conclui que ao longo dos anos houve alterações quanto ao volume de animais, distância e percursos, no qual, aumentou o volume de suínos transportados, reduziu o volume de suínos transportados a longa distância, e houve implantação de unidades frigoríficas mais próximas ao local de produção. Desta forma, 73,47% dos suínos para abate transportados percorreram entre zero e 200 km da origem ao destino, e a média ponderada de distânciafoi de 205,74 km.
