RESUMEN

Food waste, accounting for about one-third of the total global food resources wasted each year, is a substantial challenge to global sustainability, contributing to adverse environmental impacts. The utilization of food waste as a valuable source for bioactive extraction can be facilitated through the application of DES (Deep Eutectic Solvents). Acknowledging the significant need to tackle this issue, the United Nations integrated food waste management into its Sustainable Development Goals, hence, the present review explores the role of DES in bioactive compounds extraction from food waste. Various extraction processes using the DES system are thoroughly studied and the application of bioactive components as antioxidants, antimicrobials, flavourings, nutraceuticals, functional ingredients, additives, and preservatives is investigated. Most importantly, regulatory considerations and safety aspects of DES in food applications are discussed in-depth along with consumer perception and acceptance of DES in the food sector. The key hypothesis of the review is to evaluate emerging DES systems for their efficiency in bioactive extraction technologies and various food applications. Overall, this review provides a comprehensive understanding of utilizing DES for synthesizing valuable food waste-derived bioactive components, offering a sustainable approach to waste management and the development of high-value products.

Food waste is a serious worldwide issue that has an impact on the environment, society, and economy. This comprehensive review provides a detailed description of methods and approaches for reducing food waste, emphasizing the necessity of comprehensive strategies to tackle its intricate relationship with environmental sustainability, social equity, and economic prosperity. By scrutinizing the extent and impact of food waste, from initial production stages to final disposal, this comprehensive review underlines the urgent need for integrated solutions that include technological advancements, behavioral interventions, regulatory frameworks, and collaborative endeavors. Environmental assessments highlight the significant contribution of food waste to greenhouse gas emissions, land degradation, water scarcity, and energy inefficiency, thereby emphasizing the importance of curtailing its environmental impact. Concurrently, the social and economic consequences of food waste, such as food insecurity, economic losses, and disparities in food access, underscore the imperative for coordinated action across multiple sectors. Food waste can also be effectively reduced by various innovative approaches, such as technological waste reduction solutions, supply chain optimization strategies, consumer behavior-focused initiatives, and waste recovery and recycling techniques. Furthermore, in order to foster an environment that encourages the reduction of food waste and facilitates the transition to a circular economy, legislative changes and regulatory actions are essential. By embracing these multifaceted strategies and approaches, stakeholders can unite to confront the global food waste crisis, thereby fostering resilience, sustainability, and social equity within our food systems.

Considering sustainability and circular economy, citrus pulp could become a common dairy feedstuff. Yet, there is no clear indication of the amount of citrus pulp that can be fed without compromising milk performance or that could deliver benefits. In our meta-analysis, we investigated the impact of varying citrus pulp inclusion levels, i.e., no (0 %), low (>0-10 %), medium (>10-20 %), and high (>20 %), on milk performance variables. Replacing cereal grains with citrus pulp increased pectins and sugars while decreasing starch. At the low inclusion level, citrus pulp increased milk yield without affecting feed intake. At higher inclusion levels, citrus pulp reduced feed intake and milk yield but with higher fat contents, the milk energy content was similar to no inclusion. Concluding, citrus pulp is a good energy source with lipogenic properties in dairy cows. We encourage research to fill in the existing gap of knowledge at the rumen and systemic levels.

To enhance circularity in heterotrophic microalgal bioprocesses, this study completely substituted glucose and Bold's basal medium (BBM) with brewer's spent grain (BSG) and soy whey (SW) hydrolysates. Mild acid hydrolysis conditions of BSG (0.2 M H2SO4, 130 °C, 36 min) and SW (0.1 M HCl, 95 °C, 30 min) were optimised for glucose release, and their hydrolysates were optimally mixed (15 % SW-85 % BSG) to obtain a medium that best supported Auxenochlorella protothecoides growth. Maximum biomass production (Xmax) and productivity (PXmax) obtained in the hydrolysate medium containing 50.75 g/L endogenous glucose (Xmax: 22.17 g/L; PXmax: 7.06 g/L/day) were comparable to that in BBM containing 50.44 g/L exogenous glucose (Xmax: 20.02 g/L; PXmax: 6.34 g/L/day). Moreover, estimated hydrolysate medium production costs were within an order of magnitude to BBM. Overall, the integrated approach of tailored hydrolytic treatments and complementary side-streams is potentially technically and economically feasible, with applications extending beyond A. protothecoides.

Proper household organic waste management practices are crucial to limit the negative environmental and health impacts that can result from inappropriate municipal waste treatment. The environmental impacts of organic waste have previously been described in the literature, and the main treatment strategy for managing such waste relies on technical facilities such as biodigesters. However, such technologies require significant financial investments, which could hinder their application in areas with lower economic power. Among the several available organic waste treatment strategies, composting for urban agricultural (UA) use has become increasingly popular. Although the literature suggests that UA can contribute to organic waste management by encouraging self-treatment practices, investigations into how practising UA can influence household waste management behaviours have been limited thus far. To this end, we analyse the role of practising UA along with other demographic variables, such as age, gender, education, income and housing conditions, in influencing citizens' household organic waste management behaviours. The city of Florianópolis, Brazil was selected as a case study since that municipality recently passed a new organic waste regulation law that supports the use of organic compost in UA. We surveyed 206 individuals regarding their household organic waste management habits in four behavioural areas: (i) separation, (ii) use of public services, (iii) self-treatment and (iv) reduction. The dataset comprises 102 individuals who were actively engaged in UA activities and 104 who were not involved in UA to compare habits of the two groups. The results show that UA practitioners are more likely to separate and self-treat their organic waste and use the derived compost for gardening activities. The use of public facilities for organic waste management is influenced by people's housing conditions. Respondents who lived in an apartment with no access to a garden logically had a lower willingness than did those with garden access to self-treat the organic waste produced. On the other hand, the results show that UA practitioners compost their own organic waste regardless of their housing conditions. The results show a strong, positive influence of practising UA on self-composting and thereby highlight the role of such practices in sensitizing urban residents to waste management issues and supporting local organic waste management strategies. Although the debate over the role of UA in organic waste management is still open, we reveal that highlighting this role could support a shift towards a circular approach to organic waste treatment.

Food-waste biochar holds significant potential as a bio-solid fuel for achieving carbon neutrality; however, its high content of sodium (Na), potassium (K), calcium (Ca), chlorine (Cl), and nitrogen, inhibits its potential use. This study explored the effects of post-treatment with ascorbic, acetic, citric, and iminodiacetic acids on the properties of food-waste biochar and volatile ionic substances to establish a foundation for assessing both the environmental impact and practical use of food waste. Post-treatment with organic acids achieved 92% Cl-removal efficiency and induced deformation of the functional groups of food-waste biochar surfaces, leading to the re-adsorption of alkali and alkaline earth metals. This re-adsorption of alkali metal ions showed a distinct correlation with NOx mitigation. The amount of re-adsorbed Na and K varied based on the types of organic acids, resulting in different NOx emission reduction effects. Iminodiacetic acid was particularly effective in alleviating Ca and PO4 volatilization, whereas citric acid exhibited the highest Ca elution performance, and the Ca-contained leachate is a potential source of CO2 storage through indirect mineral carbonation. Acetic acid is the most feasible alternative, considering both economic and environmental aspects. The findings suggest that the post-treatment of food-waste biochar effectively mitigates air pollutants during combustion and is beneficial for sustainable biosolid fuel production and bio-waste management.

Food wastes can be a valuable reservoir of bioactive substances that can serve as natural preservatives in foods or as functional ingredients with potential health benefits. The antimicrobial properties of protein hydrolysates, especially antimicrobial peptides (AMPs) derived from food byproducts (FBs), have been extensively explored. These protein fragments are defined by their short length, low molecular weight, substantial content of hydrophobic and basic amino acids, and positive net charge. The intricate mechanisms by which these peptides exert their antimicrobial effects on microorganisms and pathogens have been elaborately described. This review also focuses on techniques for producing and purifying AMPs from diverse FBs, including seafood, livestock, poultry, plants, and dairy wastes. According to investigations, incorporating AMPs as additives and alternatives to chemical preservatives in food formulations and packaging materials has been pursued to enhance both consumer health and the shelf life of foods and their products. However, challenges associated with the utilization of AMPs derived from food waste depend on their interaction with the food matrix, acceptability, and commercial viability. Overall, AMPs can serve as alternative safe additives, thereby ensuring the safety and prolonging the storage duration of food products based on specific regulatory approvals as recommended by the respective safety authorities.

Peanut hulls (PHs) are an edible food waste that is an underutilized food source for human consumption. While edible and palatable, currently they are mainly diverted to livestock feed or building materials. Here, we describe existing literature supporting human food valorization of PHs, and propose methods to optimize recapturing nutrients (protein, fiber, phenols and other phytonutrients) lost by treating PHs as waste. Incorporated into common foods, PHs could be processed into functional ingredients to improve nutrient-density with anticipated corresponding positive health outcomes associated with increases in plant foods. Valorization of PHs addresses multiple priorities of the UN Sustainable Development Goals using a Food Systems Approach (FSA) including reducing food waste, increasing economic opportunities for farmers, and increasing the availability of healthy shelf-stable foodstuffs to address food security. Recent advances in sustainable food processing technologies can be utilized to safely incorporate PHs into human food streams. We propose future applications that could make meaningful impacts for food availability and the nutritional composition of common foods like bread and plant-based meat alternatives. While the limited literature on this topic spans several decades, no commercial operations currently exist to process PHs for human consumption, and most literature on the topic precedes the technological "green revolution." The approaches outlined in this review may help bolster commercialization of this underutilized and nutritious food potentially improving opportunities for multiple global stakeholders.

The aim of this study was to extract water-soluble dietary fibers (WSDFskin), pectin (PECskin), and xyloglucan (XGskin) from hazelnut skin and to determine their impacts on colonic microbiota and metabolic function. WSDFskin, PECskin, and XGskin were extracted by water, acid, and alkali treatments, respectively. Monosaccharide analysis revealed WSDFskin and PECskin were dominated by uronic acids, while the XGskin was found to contain xyloglucan- and pectin-associated sugars. In vitro fecal fermentation analysis showed that WSDFskin, PECskin, and XGskin are fermented to different microbial short-chain fatty acid profiles by identical microbiota. 16S rRNA sequencing demonstrated that PECskin promoted Faecalibacterium prausnitzii and Lachnospiraceae related operational taxonomic units (OTUs), which are recognized as beneficial members of the human gut, whereas WSDFskin and XGskin stimulated Bacteroides OTUs. Interestingly, increased abundances of F. prausnitzii and Lachnospiraceae OTUs in PECskin were higher than those in commercially available pectin. Finally, PECskin and XGskin were tested in a biscuit model and the results showed that either PECskin or XGskin can be incorporated into biscuit formulations without impacting physical, textural, and sensory properties of the final product. Overall, our results demonstrated that hazelnut skin, an industrial byproduct, can be utilized for the production of functional dietary fibers, especially pectin, to improve colonic health.

Spoilage fungi are a significant cause of financial loss in the food and beverage industry each year. These fungi thrive in challenging environments characterized by low acidity, low water activity and high sugar content, all of which are common in fruit fillings used in pastry products. Fruit fillings are therefore highly susceptible to fungal spoilage. Fungal growth can cause sensory defects in foods, such as changes in appearance, odor, flavor or texture, and can pose health risks due to the production of mycotoxins by certain mold species. To reduce food loss and waste and extend product shelf-life, it is critical that we prevent fungal spoilage. Synthetic chemicals such as sorbic acid and potassium sorbate are commonly used as preservatives to prevent fungal spoilage. However, with consumer demand for 'natural' and 'chemical-free' foods, research into clean-label preservative alternatives to replace chemical preservatives has increased. The objectives of this review are (i) to provide an overview of the sources of fungal contamination in fruit filling production systems, from pre-harvest of raw materials to storage of the final product, and to identify key control factors; and (ii) to discuss preservation techniques (both conventional and novel) that can prevent fungal growth and extend the shelf-life of fruit fillings.

Despite the high global production of beetroot (Beta vulgaris L.), its peel is often discarded. Transforming beetroot into flour can reduce waste, improve food security, and decrease environmental pollution. However, large-scale feasibility depends on understanding drying kinetics and optimal storage conditions. This study aimed to investigate the effects of different temperatures in the convective drying of whole beetroot and evaluate the influence of laminated flexible and plastic packaging on flour stability over two months. Drying kinetics were analyzed using five models, with the Page and Logarithm models showing the best fit (R2 > 0.99). Def values (1.27 × 10-9 to 2.04 × 10-9 m2 s-1) increased with rising temperatures while drying time was reduced (from 820 to 400 min), indicating efficient diffusion. The activation energy was 29.34 KJ mol-1, comparable to other plant matrices. Drying reduced moisture and increased ash concentration in the flour. The flour showed a good water adsorption capacity and low cohesiveness, making it marketable. Laminated packaging was more effective in controlling physicochemical parameters, reducing hygroscopicity, and maintaining quality over 60 days. In summary, the Page model can predict beetroot drying kinetics effectively, and laminated packaging can control flour stability.

Recovering phosphorus (P) and sulfur (S) from biowaste is a key strategy to address the current P resources shortage and soil S deficiency. Food waste digestate (FWD) contains high contents of P and S, while its direct application is severely limited by available nutrient leaching loss and pollutant exposure. Hydrothermal treatment (HT) is an effective technique for biowaste disposal, enabling detoxification and resource recovery. The study systematically investigated the speciation transformation of P and S in FWD during HT, using chemical extraction and in-situ X-ray absorption near-edge structure (XANES) spectroscopy. The results revealed that up to 98% of P in FWD was enriched in the solid product (hydrochar) after HT, with organic P and labile P being converted into stable Ca-bound forms, predominantly hydroxyapatite. This transformation reduced the risk of P leakage loss compared to untreated FWD. Interestingly, the S speciation evolution exhibited more complexity. The highest S proportion in hydrochar of 73.6% was observed at 140 °C under HT. As the temperature increased from 140 °C to 180 °C, S in the hydrochar gradually dissolved into the liquid phase, attributed to unstable aliphatic compounds (mercaptan) and the sulfides oxidizing to sulfates. Above 180 °C, intermediate oxidation states and sulfates were reduced and formed metal sulfides. These findings have important implications for understanding the viability of HT for FWD disposal and the value-added utilization of FWD.

Betalains are hydrophilic pigments naturally present in a limited number of plants and fungi. In addition to providing pigmentation, ranging from yellow to red, they show potential for replacing artificial food colorings. Betalains can be obtained from agri-food waste like vegetable peels through conventional and emerging extraction methods; however, they are susceptible to chemical changes due to various degradation factors, such as the presence of oxygen, light, and increased temperature. In this context, encapsulation can be used as a strategy to stabilize and reduce the pigment degradation rate for later industrial application in processed foods. This study reviews data from the last five years on the production and relevance of valuing agri-food waste, in addition to research carried out on betalains obtained from vegetable peels, such as extraction methods, encapsulation as a method of controlling stability and applications as colorant in food matrices, highlighting news insights for the field of pigments from plant sources. This review shows that encapsulation techniques using mixtures of wall materials offer superior protection than isolated materials. Despite advances in applicability, gaps still persist regarding stability in food matrices, especially on an industrial scale. However, future investigations should focus on filling the gaps regarding the maintenance of the properties of betalains for application in food industries as natural food coloring based on the precepts of circular economy and sustainable technology.

The recycling of food waste (FW) through anaerobic fermentation into lactic acid (LA), with two isomers L-LA and D-LA, aligns with the principles of a bio-based circular economy. However, FW fermentation is often limited by competing pathways, acidification inhibition, and trace metals deficiency. This study investigates the introduction of landfill leachate, containing buffering agents (ammonia) and trace metals, into FW fermentation. Various dosages of landfill leachate, ranging from 90 (LN-90) to 450 mg/L (LN-450) based on inclusive ammonia calculation, were employed. Results showed that LA production peaked at 43.65 ± 0.57 g COD/L in LN-180 on day 6, with a high optical activity of L-LA at 92.40 ± 1.15 %. Fermentation pathway analysis revealed that landfill leachate amendment enhances hydrolysis (as evidenced by increased activity of amylase, α-glucosidase, and protease) and glycolysis (resulting in enhanced utilization of carbohydrates and glucose). The inclusive ammonia in leachate plays a crucial role as a buffer, maintaining optimal pH conditions (5-7), thereby reducing volatile fatty acid production and thus intensifying LA orientations. The increased activity of L-lactate dehydrogenase (L-LA generation) and decreased NAD-independent lactate dehydrogenase (LA consumption) in properly dosed leachate further explained the high accumulation of L-LA. Dominance of lactic acid bacteria, including Streptococcus, Enterococcus, Klebsiella, Bifidobacterium, Bavariicoccus, and Lacticaseibacillus, accounted for 91.08% (LN-90), while inhibitory effects were observed in LN-450 (4.45%). Functional gene analysis further supported the enhanced glycolysis, L-lactate dehydrogenase, and nitrogen assimilation. Finally, a network analysis indicates a beneficial effect on the genus Enterococcus and Klebsiella by landfill leachate addition. This study demonstrates the efficiency of utilizing landfill leachate to enhance LA recycling from FW fermentation, aligning with the concept of circular economy by transforming waste into valuable resources.

BACKGROUND: The consumption of ultra-processed foods (UPF) is increasing in many countries. Simultaneously, there is a growing number of consumers that follow a vegetarian or vegan diet, many due to its possible positive impact on sustainability and food waste. However, little is known about attitudes towards and experiences with UPF among vegetarians and vegans. Thus, this study investigates vegetarians' and vegans' experiences with and attitudes towards UPFs. METHODS: We conducted semi-structured, individual interviews with 14 participants between September and December 2021. The participants were from different areas in Norway. The data were analysed using a thematic analysis by Braun and Clarke. RESULTS: In general, participants appeared to have diverse knowledge of and divergent attitudes towards UPFs. However, participants mainly associated substitute products (e.g. meat substitutes, dairy substitutes) as UPFs. They appreciated the increased availability of vegetarian and vegan UPF which made it easier for them to follow a plant-based diet. They enjoyed the taste and consistency of vegetarian and vegan UPF. However, participants expressed concerns about the effects that industrial processing has on the products' nutritional content. CONCLUSION: This study indicated that there was a diverse knowledge of and various attitudes towards UPFs among the participating vegetarians and vegans. Public information and guidelines about using UPF (e.g. meat substitutes, dairy substitutes) in vegetarian and vegan diets are needed, as well as information about their possible impact on health and sustainability.

PURPOSE OF REVIEW: Global food production leads to substantial amounts of agricultural and food waste that contribute to climate change and hinder international efforts to end food insecurity and poverty. Food waste is a rich source of vitamins, minerals, fibers, phenolic compounds, lipids, and bioactive peptides. These compounds can be used to create food products that help reduce heart disease risk and promote sustainability. This review examines the potential cardiovascular benefits of nutrients found in different food waste categories (such as fruits and vegetables, cereal, dairy, meat and poultry, and seafood), focusing on animal and clinical evidence, and giving examples of functional food products in each category. RECENT FINDINGS: Current evidence suggests that consuming fruit and vegetable pomace, cereal bran, and whey protein may lower the risk of cardiovascular disease, particularly in individuals who are at risk. This is due to improved lipid profile, reduced blood pressure and increased flow-mediated dilation, enhanced glucose and insulin regulation, decreased inflammation, as well as reduced platelet aggregation and improved endothelial function. However, the intervention studies are limited, including a low number of participants and of short duration. Food waste has great potential to be utilized as cardioprotective products. Longer-term intervention studies are necessary to substantiate the health claims of food by-products. Technological advances are needed to improve the stability and bioavailability of bioactive compounds. Implementing safety assessments and regulatory frameworks for functional food derived from food waste is crucial. This is essential for maximizing the potential of food waste, reducing carbon footprint, and improving human health.

Thermophilic anaerobic digestion (AD) offers many benefits for food waste treatment but is seldom adopted in industrial plants due to instability issue, particularly under higher loading conditions. This study thus conducted a 160-day continuous operation of a pilot-scale thermophilic AD system on-site. Results from the experiments showed that the system could operate under relatively lower loading but failed when the loading reached up to 5.69 kg·COD/(m3·d). Volatile fatty acids increased to 6000 mg/L at the corresponding hydraulic retention time of 15 days. Trace elements were then introduced, which restored higher process stability by reducing volatile fatty acids to 400 mg/L. The mass balance and materials decomposition resutls revealed the system's strong resilience. Methanoculleus (92.52 %) and Methanomassiliicoccus (6.55 %) were the dominant methanogens, a phenomenon rarely observed in similar thermophilic systems. This system may tolerate more stressful conditions, as the loading limits had not been reached with the addition of trace elements.

This study proposes a comprehensive evaluation method based on a two-stage model to assess greenhouse gas (GHG) emissions and reductions in high-food-waste-content (HFWC) municipal solid waste (MSW) landfills. The proposed method considers typical processes such as fugitive landfill gas (LFG), LFG collection, flaring, power generation, and leachate treatment. A case study of an HFWC MSW landfill in eastern China is considered to illustrate the evaluation. The findings revealed that the GHG emissions equivalent of the case landfill amounted to 21.23 million tons from 2007 to 2022, averaging 1.03 tons CO2-eq per ton of MSW. There was a potential underestimation of LFG generation at the landfill site during the initial stages, which led to delayed LFG collection and substantial fugitive LFG emissions. Additionally, the time distribution of GHG emissions from HFWC MSW was significantly different from that of low-food-waste-content (LFWC) MSW landfills, with peak emissions occurring much earlier. Owing to the rapid degradation characteristics of HFWC MSW, the cumulative LFG production of the landfill by 2022 (2 years after the final cover) was projected to reach 77 % of the total LFG potential. In contrast, it would take until 2030 for LFWC MSW landfills to reach this level. Furthermore, various scenarios were analyzed, in which if the rapid LFG generation characteristics of HFWC MSW are known in advance, and relevant facilities are constructed ahead of time, the collection efficiency can be improved from 31 % to over 78 %, resulting in less GHG emissions.

The apple processing industry generates large quantities of organic waste, presenting a major source of organic contamination. Consequently, finding an effective solution for valorizing this waste has become a pressing issue. This study aims to address two key concerns: (i) solving an agricultural problem by efficiently using agri-food residue, and (ii) removing lead, an extremely toxic element, from contaminated waters to mitigate environmental pollution. Two biosorbents were tested: raw apple waste (RA), obtained from a mixture of apple varieties, and the same material after extracting valuable bioactive and reusable components, extracted apple (EA). The study evaluated the influence of pH, initial biosorbent mass, adsorption kinetics, and equilibrium isotherms. The results are very promising, showing a lead removal efficiency of 82 % for RA and 100 % for EA at a low initial concentration of the solution of 20 mg Pb2⁺/L and an optimal pH of 5 ± 0.5. The Langmuir model predicted a maximum adsorption capacity of 44.6 mg/g for RA and 48.6 mg/g for EA. These findings demonstrate that apple waste, even after selective extraction of valuable bioactive components, can be effectively used for environmental remediation on a practical scale.

Utilization of organic community wastes towards deriving sustainable renewable energy and adequate disposal of the residual has been an important topic of investigation. Anaerobic digestion and co-digestion of rice-derived food waste and animal manure for sustainable biogas generation is crucial from the view-point of community consumption. This paper presents an extensive review of the important and recent contributions in the related areas. The critical physico-chemical parameters involved in such digestion process are analyzed, including temperature, carbon-nitrogen ratio, microorganisms, pH, substrate characteristics, organic loading rate, hydraulic retention time, volatile fatty acids, ammonia, and light/heavy metal ions. Studies implied that the optimum yield of biogas production could be achieved only when the values of the parameters exist in the specific ranges. Few recent studies highlighted the use of emerging techniques including micro-aerobic system, additives, laser radiation, bio-electrochemical field, among others for efficiency enhancement of the digestion process and optimum yield. The entire study provided a set of important conclusions and future research directives are as well proposed.
