Zinc (Zn) is an essential element for plants and mammals and its deficiency affects billions of people worldwide. This study aimed to evaluate the effects of soil Zn fertilization and foliar Zn sprays in different phenological stages of the plant on the grain nutritional quality of common bean (Phaseolus vulgaris L.). Field experiments were carried out in two consecutive harvest years under no-till system in an Oxisol. Two commercial common bean cultivars were used: BRS Esteio (black bean) and IPR Campos Gerais (Carioca bean). Total concentration of Zn, amino acids, sucrose, total sugars and storage proteins (albumin, globulin, glutelin and prolamin) in grains were evaluated. The cultivar BRS Esteio exhibited higher grain enrichment with Zn than the cultivar IPR Campos Gerais, showing genotypic variation. Single foliar Zn spray of 600 g ha-1 at the initial grain filling stage was shown to be the best way to improve the grain Zn concentration, without affecting grain yield. Foliar Zn spray at the final stage of grain filling favored the increase of Zn concentration in the pods over the Zn concentration in the grains. Agronomic biofortification of bean grains with Zn was more efficient with foliar Zn spraying than with the soil Zn fertilization, however, the soil Zn application favored the increase of concentrations of total amino acids and storage proteins (albumin, globulin and glutelin) in the grains. Agronomic biofortification proved to be efficient in increasing concentrations of Zn and storage proteins in common bean grains.

Biofortification is the process of increasing the concentrations and/or bioavailability of micronutrients in staple crops and has the potential to mitigate micronutrient deficiencies globally. Efficacy trials have demonstrated benefits of consuming biofortified crops (BFCs); and in this paper, we report on the results of a systematic review of biofortified crops effectiveness in real-world settings. We synthesized the evidence on biofortified crops consumption through four Impact Pathways: (1) purchased directly; (2) in informal settings; (3) in formal settings; or (4) in farmer households, from their own production. Twenty-five studies, covering Impact Pathway 1 (five studies), Impact Pathway 2 (three), Impact Pathway 3 (three), Impact Pathway 4 (21) were included. The review found evidence of an improvement in micronutrient status via Impact Pathway 4 (mainly in terms of vitamin A from orange sweet potato) in controlled interventions that involved the creation of demand, the extension of agriculture and promotion of marketing. In summary, evidence supports that biofortified crops can be part of food systems interventions to reduce micronutrient deficiencies in farmer households; ongoing and future research will help fully inform their potential along the other three Impact Pathways for scaling up.

BACKGROUND: Many African countries are seeking to improve nutrition by introducing biofortified foods in school feeding programs. These programs are generally designed to create demand for biofortified foods both in and outside of school. Finding ways to encourage child acceptance of novel biofortified foods is key to the success of this strategy. OBJECTIVES: The aim was to assess effects of 2 behavioral interventions in promoting the consumption of biofortified foods as part of school lunch meals. METHODS: The study is based on a field experiment involving 360 school-going children of in the third, fourth, and sixth grades. We tested if structured provision of information about the nutritional benefits of a biofortified food and its association with an aspirational figure influence its consumption when served alongside a favorite local food as part of school lunch meal. Six schools in Tigray, Ethiopia, were randomly selected to participate, with 4 participating in the Orange-Fleshed Sweetpotato (OFSP) Program. Of the 4 participating in the program, 2 were assigned to provide educational information about sweetpotato, whereas 2 presented the same information plus depictions of an aspirational figure (a famous local athlete) associated with the sweetpotato. RESULTS: Provision of information on the nutritional benefits of biofortified food combined with an aspirational figure resulted in increased consumption of biofortified food by children. However, provision of the information alone did not detectably increase consumption. An analysis of trends over the course of the study revealed no discernable decay effect. CONCLUSIONS: Our results highlight the potential for relatively inexpensive behavioral interventions to increase acceptance of novel biofortified foods among children in a developing-country context. Larger studies with more varied interventions and larger numbers of participating schools could address several of the weaknesses in this study and establish more robust findings.

Micronutrient malnutrition, also known as hidden hunger, continues to affect more than 2 billion people globally. Biofortification, which is a process of breeding staple crops with improved micronutrient contents such as vitamin A, iron, and zinc, offers a cost-effective and sustainable solution in reducing hidden hunger. However, the success of these foods depends on consumer acceptance. In contrast to previous studies, this research focuses on the mechanism of consumer acceptance of biofortified crops that undergo physical changes (i.e., changes in appearance) after biofortification. We use data on 473 Chinese consumers collected through online surveys to examine their purchase intentions for biofortified foods that have visible (vs. invisible) nutrition traits. Using two online surveys, we conduct two studies to reveal the mechanism and antecedents of consumer acceptance of different biofortified foods. In Study 1, we find that consumer purchase intentions vary depending upon the visibility of nutrition traits in biofortified foods. Specifically, consumers exhibit a nutrition-related food neophobia (NFN) regardless of visibility of the nutrition trait in biofortified foods; and a sensory-affective food neophobia (SFN) which is only pronounced when the nutrition trait in biofortified foods is visible. The results of the mediation analysis show that for both types of biofortified foods, NFN mediates consumers' purchasing intentions. For foods that involve visible changes after biofortification, SFN acts as an additional mediator of consumer purchase intentions. Using ordered logistic regression analysis, we find that both food neophobias have a negative impact on consumer acceptance of biofortified foods. The results of Study 2 confirm our findings and further show that nutrition information moderates the mediation of NFN and SFN, i.e., the negative impact of NFN and SFN on purchase intentions can be reduced by providing nutrition information to consumers. The results of this study have several theoretical and practical implications and are of interest to stakeholders and marketers in the promotion of biofortified foods.

Biofortification of staple crops has a potential for addressing micronutrient deficiencies, such as vitamin A deficiency (VAD), which are prevalent in South Africa. The poor acceptability of provitamin A (PVA)-biofortified foods could be improved by combining them with other food items to produce modified traditional dishes. The nutritional composition of the dishes could also be improved by the modification. The study aimed to investigate the effect of replacing white maize and cream-fleshed sweet potato (CFSP)] with PVA-biofortified maize and orange-fleshed sweet potato (OFSP) on the nutritional composition of South African traditional dishes. The protein, fibre, total mineral (ash), lysine, and iron concentrations of the PVA maize phutu (traditional porridge) composite dishes (control), were not significantly different (P > 0.05) from those of white maize phutu composite dishes. However, the PVA concentration of PVA maize phutu composite dishes was higher than that of the white phutu composite dishes (P > 0.05). The OFSP had a significantly lower protein concentration, but a significantly higher (P > 0.05) fibre, ash, lysine, isoleucine, leucine, and PVA concentration, relative to the CFSP. The findings indicate that composite dishes in which white maize is replaced with PVA-biofortified maize, and switching over from CFSP to OFSP, would contribute to combating VAD in South Africa, and in other developing counties.

OBJECTIVE/PURPOSE: To use Protection Motivation Theory (PMT) to evaluate stakeholders' intention to adopt iodine biofortified foods as an alternative means to improve children's iodine status and overall school performance. METHODS: A survey was administered with 360 parents of primary school children and 40 school heads. Protection motivation is measured through matching the cognitive processes they use to evaluate iodine deficiency (threat appraisal), as well as iodine biofortified foods to reduce the threat (coping appraisal). Data were analyzed through Robust (Cluster) regression analysis. RESULTS: Gender had a significant effect on coping appraisal for school heads, while age, education, occupation, income, household size and knowledge were significant predictors of threat, coping appraisal and/or protection motivation intention among parents. Nevertheless, in the overall protection motivation model, only two coping factors, namely self-efficacy (parents) and response cost (school heads), influenced the intention to adopt iodine biofortified foods. CONCLUSION: School feeding programs incorporating iodine biofortification should strive to increase not only consumer knowledge about iodine but also its association to apparent deficiency disorders, boost self-efficacy and ensure that the costs incurred are not perceived as barriers of adoption. The insignificant threat appraisal effects lend support for targeting future communication on biofortification upon the strategies itself, rather than on the targeted micronutrient deficiency. PMT, and coping factors in particular, seem to be valuable in assessing intentions to adopt healthy foods. Nevertheless, research is needed to improve the impacts of threat appraisal factors.
