RESUMEN

Fermentation is an important tool in producing functional beverages through agro-industrial wastes, and medicinal and aromatic plants due to the specific content of bioactive molecules. Therefore, this study evaluated the contribution of Matricaria recutita (chamomile), Cymbopogon citratus (lemongrass), or Mentha piperita (peppermint) extracts to the phytochemical profile and potential biological effects of a functional fermented orange beverage in vitro and in silico. The concentrations of aromatic herbal extracts that yielded the best sensory performance for fermented beverages were selected for analyses that involved characterizing the fermented beverages. The beverages that received the extracts (2%) had the highest phenolic and flavonoid content and antioxidant potential compared to the control. Hesperidin (124-130 mg L-1), narirutin (66-70 mg L-1), chlorogenic (11-16 mg L-1), caffeic (5.3-5.5 mg L-1), and ferulic (1-1.7 mg L-1) acids were found in the different formulations. The in silico analysis suggested that the evaluated compounds do not present a toxicity risk (mutagenicity, carcinogenicity, hepatotoxicity, and ability to penetrate the blood-brain barrier). Additionally, they can contribute to the biological effects of therapeutic importance, such as antioxidant, gastroprotective, and anti-ulcerative properties, and the Mentha piperita L. extract presented the greatest potential among the evaluated herbs for use in functional fermented beverages.

La manzanilla de Castilla, dulce o cimarrona (Matricaria recutita o Matricaria chamomilla), es una planta herbácea anual de la familia de las asteráceas, nativa de Europa y de regiones templadas de Asia, que se ha naturalizado en algunas regiones de América, África y Australia. Ha sido utilizada por el hombre desde hace miles de años con diferentes fines medicinales. Se estudió el efecto in vitro de un extracto fluido de esta planta sobre los linfocitos de 20 donantes voluntarios de sangre y de 20 enfermos con diagnóstico de inmunodeficiencia celular, mediante la cuantificación de los linfocitos T por las técnicas de formación de roseta espontánea y activa y el ultramicrométodo inmunocitoquímico (UMICIQ), así como la función fagocítica (índice opsonofagocítico) de los neutrófilos. No se hallaron diferencias estadísticamente significativas en los parámetros estudiados entre las condiciones experimentales con Matricaria y sin esta(AU)


Castilla Chamomile, sweet, or maroon (Matricaria recutita or Matricaria chamomilla) is an annual herbaceous plant of the Asteraceae family, native to Europe and temperate zones of Asia, which has become naturalized in parts of America, Africa, and Australia. It has been used by man for thousands of years with different medicinal purposes. We studied the in vitro effect of an extract fluid of this plant on lymphocytes from 20 blood donors and 20 patients with a diagnosis of cellular immunodeficiency. We quantified T lymphocytes by the techniques of spontaneous and active rosette formation, and the immunocytochemical ultramicromethod (UMICIQ) as well as the phagocytic function (opsonophagocytic index) of neutrophils. There were no statistically significant differences in the studied parameters between experimental conditions with Matricaria and without it(AU)

The quality of chamomile (Matricaria recutita) tea marketed in the Umuarama City, PR, was assessed. The product authenticity, organoleptic characteristics, purity, humidity, total ashes contents, products labeling, and medium weight of collected samples were analyzed. In 85,7% of the samples in dehydrated whole flowers form and in 100% of the samples in the tea bags form presented > 5% of impurities. The occurrence of high contents of foreign organic matter changes the organoleptic characteristics of tea samples. Analyzing the description on the product labels, the lack of information was revealed, indicating non-conformity with the current legislation. According to the obtained results, it might deduce that the majority of analyzed products were not in accordance with Brazilian Drug Regulation. Thus, diligent efforts to carry out actions from sanitary surveillance are needed.


Com o objetivo de avaliar a qualidade dos chás de camomila (Matricaria recutita), comercializadas na cidade de Umuarama-Paraná, essas amostras foram analisadas quanto à autenticidade do produto, características organolépticas, pureza, teor de umidade e cinzas totais, rotulagem e peso médio, em relação aos correspondentes dados indicados no rótulo da embalagem. A presente análise mostrou a presença de taxas de impurezas acima de 5% em 85,7% das amostras de chá em forma de capítulos florais íntegros e em100% das amostras comercializadas na forma de sachet. O elevado teor de matéria orgânica estranha altera as características organolépticas do chá. Quanto aos descritivos nos rótulos da embalagem dos produtos verificou-se a falta de informações, o qual indica a não conformidade com a legislação vigente. Os dados do presente trabalho mostram que a maioria dos produtos comercializados não se encontrava em concordância com a legislação vigente. Torna-se, portanto, necessária maior assiduidade na ação fiscalizadora dos produtos alimentícios comercializados pela Vigilância Sanitária.
