The use of wastewater in agricultural practices poses a potential risk for the spread of foodborne diseases. Therefore, this study aimed to characterize the bacterial biodiversity in rhizospheric soil, irrigation water, and lettuce crops in three municipalities adjacent to the Bogotá River, Colombia. Samples were collected in Mosquera, Funza, and Cota municipalities, including rhizospheric soil, lettuce leaves, and irrigation water. The total DNA extraction was performed to analyze bacterial diversity through high-throughput sequencing of the 16S ribosomal RNA genes, utilizing the Illumina HiSeq 2500 PE 300 sequencing platform. A total of 198 genera from the rhizospheric soil were detected including a higher abundance of zOTUs such as Bacillus, Streptomyces, and clinically relevant genera such as Mycobacterium and Pseudomonas. In lettuce, the detection of 26 genera of endophytic bacteria showed to Proteobacteria and Firmicutes as the predominant phyla, with Staphylococcus and Bacillus as the most abundant genera. Notably, Funza's crops exhibited the highest abundance of endophytes, approximately 50 %, compared to Cota (20 %). Furthermore, the most abundant bacterial genera in the irrigation water were Flavobacterium and Pseudomonas. The most prevalent Enterobacteriaceae were Serratia, Enterobacter, Citrobacter, Klebsiella, Yersinia, Shigella, Escherichia, and Erwinia. The Bacillus genus was highly enriched in both rhizospheric soils and lettuce crops, indicating its significant contribution as the main endophytic bacterium.

Background: Chagas disease (CD) is transmitted by vectors but can also be transmitted orally through contaminated food, drinks, or meat. The One Health perspective aims to understand the complex interaction between human, animal, and environmental health in controlling disease. This study analyzed risk factors and drew lessons from past outbreaks of orally transmitted CD to develop effective preventive strategies. Methods: A simultaneous mixed methods study was conducted. The study consisted of two phases: an ecological epidemiological analysis at the municipal level using secondary data spanning from 1992 to 2023, and semistructured interviews with health providers and policymakers at the national level in Colombia. The results from both phases were triangulated to gain a comprehensive understanding of the topic. Results: A total of 64 outbreaks, infecting 302 individuals, were reported. Most of these outbreaks (89.2%) were classified as family-related, and they occurred most frequently during the months of April to June (46.6%). It is worth noting that a significant number of these outbreaks took place in municipalities that lacked vector control plans. Risk factors for oral transmission included the location of food preparation, poor housing quality, food preparation water source, the presence of vectors/marsupials, forest type, and climatic variables. Interviews conducted emphasized the importance of implementing outbreak plans and providing staff training to effectively address the issue. Conclusion: A One Health approach strengthening prevention, surveillance, case management and cross-sectoral collaboration is needed to control outbreaks and reduce transmission in Colombia. Preparedness plans and education of health professionals are also important. This study identified modifiable risk factors to guide public health interventions.

The wild boar, an impactful invasive species in Brazil, is subject to population control activities, which often include the use of hunting dogs. Hunters commonly consume wild boar meat, which is also used to feed their dogs, posing a risk of Toxoplasma gondii infection for humans and both T. gondii and Neospora caninum for dogs. The study aimed to investigate the prevalence of infection in wild boars (n = 127) and hunting dogs (n = 73) from São Paulo, Rio Grande do Sul, and Paraná states. We employed histopathological, serological (indirect fluorescent antibody test), and molecular techniques (endpoint polymerase chain reaction). Histopathology slides of wild boar tissue (central nervous system, heart, skeletal muscle, liver, spleen, kidney, gastrointestinal tract, pancreas, lymph nodes, and thyroid) sections revealed no T. gondii or N. caninum cysts (0/47). Antibodies anti-T. gondii were detected in 35/108 (32.4%) and anti-N. caninum in 45/108 (41.7%) wild boars. Only 2/18 (11.1%) wild boar tissue homogenate samples tested positive for T. gondii on endpoint PCR. Hunting dogs showed antibodies against T. gondii in 62/73 (85%) and against N. caninum in 31/73 (42%). The presence of antibodies against T. gondii and N. caninum in wild boars and hunting dogs, along with T. gondii DNA detection in wild boars, indicates the circulation of these parasites. Educating hunters on preventing these foodborne diseases, including zoonotic risks, is crucial.

Os Centros de Tradições Gaúchas (CTG) são entidades de divulgação e perpetuação da cultura do Rio Grande do Sul. A produção de refeições nessas entidades ocorre nos ensaios dos grupos de danças tradicionais e nos eventos oferecidos à comunidade, como jantares. Sabendo do impacto das doenças transmitidas por alimentos (DTA) na saúde humana, o objetivo deste trabalho é identificar a adequação dos CTG às boas práticas para manipulação de alimentos (BPM), explorar quem são os responsáveis pelas atividades de manipulação de alimentos e identificar a frequência e o número da produção de refeições servidas nessas instituições. A Portaria SES-RS nº 78/2009 e um questionário de coleta de dados dos grupos de dança e da produção de refeições foram aplicados em 5 CTG do Rio Grande do Sul. Outros 17 CTG do estado responderam a um segundo questionário, semelhante ao primeiro, com adição de perguntas sobre controle sanitário. Obteve-se uma média de adequação às BPM de 38% entre os CTG. Verificou-se que são servidas, em média, 4 refeições por semana entre os ensaios das invernadas artísticas próximos a competições. Em 36% dos CTG, ocorrem de 2 a 3 eventos por trimestre com produção de refeições. Em 45% dos CTG, são servidas de 100 a 200 pessoas nos eventos. Em relação aos trabalhos na cozinha, apenas 23,5% dos CTG têm como responsáveis dessas atividades pessoas devidamente capacitadas. Sendo os CTG instituições sem fins lucrativos, a criação de programas para a garantia do alimento seguro nesses espaços se faz necessária.
Centros de Tradições Gaúchas (CTG) are entities for the dissemination and perpetuation of Rio Grande do Sul culture. The production of meals in these entities takes place in the rehearsals of traditional dance groups and in events offered to the community, such as dinners. Knowing the impact of the foodborne diseases in human health, the objective of this work is to identify the adequacy of CTG to good food handling practices, to explore who are responsibles for food handling activities and identify the frequency and number of meals served in these institutions. The Portaria SES-RS No. 78/2009 and a questionnaire for data collection from dance groups and meals production were applied in 5 CTG in Rio Grande do Sul. Another 17 CTG in the state answered a second questionnaire, similar to the first, with the addition of questions about sanitary control. The average compliance with good practices was 38% among the CTG. It was found that, on average, 4 meals are served per week between rehearsals of the dance groups close to competitions. In 36% of the CTG, 2 to 3 events are held per quarter with production of meals. In 45% of the CTG, the number of people served at the events varies from 100 to 200. Regarding the work in the kitchen, only 23.5% of the CTG have duly trained people for these activities. Given that CTG are non-profit institutions, the creation of programs to ensure food safety in these spaces is necessary.

This review delves into using natural antimicrobials in the dairy industry and examines various sources of these compounds, including microbial, plant, and animal sources. It discusses the mechanisms by which they inhibit microbial growth, for example, by binding to the cell wall's precursor molecule of the target microorganism, consequently inhibiting its biosynthesis, and interfering in the molecule transport mechanism, leading to cell death. In general, they prove to be effective against the main pathogens and spoilage found in food, such as Escherichia coli, Staphylococcus aureus, Bacillus spp., Salmonella spp., mold, and yeast. Moreover, this review explores encapsulation technology as a promising approach for increasing the viability of natural antimicrobials against unfavorable conditions such as pH, temperature, and oxygen exposure. Finally, this review examines the benefits and challenges of using natural antimicrobials in dairy products. While natural antimicrobials offer several advantages, including improved safety, quality, and sensory properties of dairy products, it is crucial to be aware of the challenges associated with their use, such as potential allergenicity, regulatory requirements, and consumer perception. This review concludes by emphasizing the need for further research to identify and develop effective and safe natural antimicrobials for the dairy industry to ensure the quality and safety of dairy products for consumers.

Introduction: Transmission of foodborne pathogens is related to inadequate sanitary conditions, which are derived from either the food preparation process or the person who prepares it. Food handlers are essential to preserve food innocuousness and protect consumer's health. Objective: To evaluate demographic characteristics, hygiene practices, knowledge, work conditions and the presence of pathogenic microorganisms in food handlers at public school restaurants in Antioquia, Colombia. Materials and methods: The study evaluated 104 food handlers in a municipality in Antioquia. Demographic data and stool samples were collected to identify intestinal parasites, Salmonella spp., and Staphylococcus aureus. Results: The presence of intestinal parasites (e.g. Entamoeba Complex and Trichuris trichiura) was identified in 61% of female participants. Staphylococcus aureus was isolated from 49% of food handlers. Conclusion: Infection of food handler was confirmed, making them potential sources of food contamination. They are committed to their work and have the knowledge to preserve basic hygiene conditions. It is highlighted their importance and influence in adequate hygienic practices to minimize the risks of transmission, as well as the need for medical treatment and regular checkups of food handlers to counteract the risk to consumers.
Introducción: La transmisión de patógenos a través de alimentos está relacionada con condiciones sanitarias inadecuadas, las cuales se derivan del proceso de elaboración de los alimentos o de quien los procesa. Los manipuladores de alimentos son esenciales para preservar la inocuidad de los alimentos y proteger la salud del consumidor. Objetivo: Evaluar las características demográficas, prácticas de higiene, conocimiento, condiciones laborales y la presencia de microorganismos patógenos en manipuladores de alimentos en restaurantes de escuelas públicas de Antioquia, Colombia. Materiales y métodos: El estudio evaluó 104 manipuladores de alimentos de un municipio de Antioquia. Se recolectaron datos demográficos y muestras fecales para identificar parásitos intestinales, Salmonella spp. y Staphylococcus aureus. Resultados: Se identificó la presencia de parásitos intestinales (Entamoeba Complex y Trichuris trichiura) en 61% de mujeres. Staphylococcus aureus fue aislada del 49% de participantes. Conclusión: Se confirmó la infección de los manipuladores, lo que los convierte en fuentes potenciales de contaminación. Ellos estan comprometidos con su labor y tienen el conocimiento para preservar condiciones higiénicas básicas. Se resalta su importancia e influencia en prácticas higiénicas adecuadas para minimizar riesgos de contaminación y la necesidad de tratamiento médico y chequeos periódicos para contrarrestar riesgos para el consumidor.

This study aimed to evaluate the effectiveness of using two ozone applications (gaseous and mist) as a disinfection method for fresh persimmon. To test these sanitizers, in vitro and in vivo assays were performed, and the Escherichia coli was selected because it is a pathogen that causes foodborne diseases in humans. For in vitro experiments, a plate was inoculated with Escherichia coli strain ATCC 25922 and treated. For in vivo assays, persimmon fruit surface was inoculated with the bacteria and treated. For both assays, it was used 10,15,20,30,40 and 50 µL L-1 of gaseous ozone or ozonized mist for five minutes. The results demonstrated that the gas ozone application significantly reduced the growth of E. coli on the plate surface in vitro at doses of 30, 40 and 50 µL L-1 (with 0.83, 0.89 and 0.95 log CFU mL-1, respectively). The application of ozonized mist showed a significant reduction for 50 µL L-1 (with 1.28 log CFU g-1). And, for the in vivo assays, ozonized mist significantly reduced the number of bacteria on the persimmon surface, with a 1.57 log reduction, which was the largest for 40 µL L-1. Therefore, it is possible to conclude that the ozone application can contribute to the control of microorganisms present on fruit surfaces.

Introducción: Las enfermedades transmitidas por los alimentos es un fenómeno a nivel internacional que provoca cada año miles de enfermos o muertos, con la inclusión de niños y ancianos. La inocuidad de los alimentos es el proceso que garantiza la calidad de estos durante el proceso productivo, almacenamiento y distribución. Evitar afectaciones en este proceso beneficia directamente la calidad de vida sin que represente un riesgo para la salud. Objetivo: Ofrecer acciones en el proceso industrial de la Unidad Empresarial de Base Planta de Leche y sus Derivados, perteneciente a la Empresa Productos Lácteos Guantánamo, que permitan la inocuidad de los productos lácteos a partir de insuficiencias identificadas. Método: Se realizó un estudio cualitativo y cuantitativo en dicha planta en el periodo 2021-2022, donde participaron 43 obreros (N=43) directamente vinculados con el proceso productivo de los productos lácteos. Se aplicaron el cuestionario y la observación participante para la obtención de la información. Se contó, además, con los criterios y opiniones de cuatros directivos y seis especialistas de la entidad. Resultados: Se hallaron limitaciones en la concepción de alternativas que constituyen acciones novedosas para la aplicación en el proceso industrial de resultados de calidad en la inocuidad de los productos lácteos a partir de la obsolescencia de los equipos y los niveles de conocimiento de Regular y Mal en el 100 porciento de los obreros. Se aplicaron acciones que permitan asegurar la inocuidad. Conclusiones: Las acciones que se presentan satisfacen las limitaciones diagnosticadas, corroborada durante el desempeño laboral para satisfacer las demandas sociales de inocuidad.(AU)
Introduction: Foodborne diseases are an international phenomenon that causes thousands of illnesses or deaths every year, including children and the elderly. Food safety is the process that guarantees food quality during the production process, storage and distribution. Avoiding effects in this process directly benefits the quality of life without representing a risk to health. Objective: To offer actions in the industrial process of the Milk and its Derivatives Plant Base Business Unit, belonging to the Productos Lácteos Guantánamo Company, that allow the safety of dairy products based on identified insufficiencies. Method: A qualitative and quantitative study was carried out in said plant in the period 2021-2022, where 43 workers (N=43) directly linked to the production process of dairy products participated. The questionnaire and participant observation were applied to obtain the information. In addition, the criteria and opinions of four directors and six specialists of the entity were included. Results: Limitations were found in the conception of alternatives that constitute novel actions for the application in the industrial process of quality results in the safety of dairy products based on the obsolescence of equipment and the levels of knowledge of Regular and Poor in 100 percent of the workers. Actions were applied to ensure safety. Conclusions: The actions presented satisfy the diagnosed limitations, corroborated during work performance to satisfy social demands for safety.(AU)
Introdução: As doenças transmitidas por alimentos são um fenómeno internacional que causa milhares de doenças ou mortes todos os anos, incluindo crianças e idosos. A segurança alimentar é o processo que garante a qualidade dos alimentos durante o processo de produção, armazenamento e distribuição. Evitar efeitos nesse processo beneficia diretamente a qualidade de vida sem representar risco à saúde. Objetivo: Oferecer ações no processo industrial da Unidad Empresarial de Base Planta de Leche y sus Derivados, pertencente à Empresa Produtos Lácteos Guantánamo, que permitam a segurança de produtos lácteos com base nas insuficiências identificadas. Método: Foi realizado um estudo qualitativo e quantitativo na referida fábrica no período 2021-2022, onde participaram 43 trabalhadores (N=43) ligados diretamente ao processo produtivo de laticínios. O questionário e a observação participante foram aplicados para obtenção das informações. Além disso, foram incluídos os critérios e opiniões de quatro diretores e seis especialistas da entidade. Resultados: Foram encontradas limitações na concepção de alternativas que constituam ações inéditas para a aplicação no processo industrial de resultados de qualidade na segurança de produtos lácteos com base na obsolescência dos equipamentos e nos níveis de conhecimento Regular e Ruim em 100 porcento dos trabalhadores. Ações foram aplicadas para garantir a segurança. Conclusões: As ações apresentadas satisfazem as limitações diagnosticadas, corroboradas durante o desempenho do trabalho para satisfazer as demandas sociais de segurança.(AU)

Practical methodologies that include food safety and hygiene education in pedagogical activities are strategies to prevent foodborne diseases (FBDs). Thus, the aim of this study was to investigate the knowledge of 7th-grade middle school students regarding food microbiology and food safety, and to apply workshop-based educational strategies that focus on scientific literacy. The students (144) were initially evaluated using a Likert-scale questionnaire (pre-intervention, Q0) with ten objective questions on microbiology and food safety. Once the questionnaire was evaluated, interventions were conducted through five science workshops of 50 min, over a period of 5 months. The workshops included educational games, laboratory practices, videos, and lectures that addressed microorganisms that are known to cause the most common FBDs in Brazil. After each workshop, students were asked to express their opinions and understanding of the content through semi-structured interviews. Six months after the end of the practical interventions, the students completed a second identical Likert-scale questionnaire (post-intervention, Q1), and the answers to both questionnaires (Q0 and Q1) were analyzed by calculating the middle rank. The middle rank of Q1 (mean = 0.65 ± 0.13) was 21% greater than the middle rank of Q0 (mean = 0.44 ± 0.16), and statistical significance was observed (p = .0135). This demonstrates that new information acquired during the workshops positively influenced learning. We believe that when practical approaches to food safety are included in school education as a priority, the prevalence of FBD will decrease.

Food and waterborne illnesses are still a major concern in health and food safety areas. Every year, almost 0.42 million and 2.2 million deaths related to food and waterborne illness are reported worldwide, respectively. In foodborne pathogens, bacteria such as Salmonella, Shiga-toxin producer Escherichia coli, Campylobacter, and Listeria monocytogenes are considered to be high-concern pathogens. High-concern waterborne pathogens are Vibrio cholerae, leptospirosis, Schistosoma mansoni, and Schistosima japonicum, among others. Despite the major efforts of food and water quality control to monitor the presence of these pathogens of concern in these kinds of sources, foodborne and waterborne illness occurrence is still high globally. For these reasons, the development of novel and faster pathogen-detection methods applicable to real-time surveillance strategies are required. Methods based on biosensor devices have emerged as novel tools for faster detection of food and water pathogens, in contrast to traditional methods that are usually time-consuming and are unsuitable for large-scale monitoring. Biosensor devices can be summarized as devices that use biochemical reactions with a biorecognition section (isolated enzymes, antibodies, tissues, genetic materials, or aptamers) to detect pathogens. In most cases, biosensors are based on the correlation of electrical, thermal, or optical signals in the presence of pathogen biomarkers. The application of nano and molecular technologies allows the identification of pathogens in a faster and high-sensibility manner, at extremely low-pathogen concentrations. In fact, the integration of gold, silver, iron, and magnetic nanoparticles (NP) in biosensors has demonstrated an improvement in their detection functionality. The present review summarizes the principal application of nanomaterials and biosensor-based devices for the detection of pathogens in food and water samples. Additionally, it highlights the improvement of biosensor devices through nanomaterials. Nanomaterials offer unique advantages for pathogen detection. The nanoscale and high specific surface area allows for more effective interaction with pathogenic agents, enhancing the sensitivity and selectivity of the biosensors. Finally, biosensors' capability to functionalize with specific molecules such as antibodies or nucleic acids facilitates the specific detection of the target pathogens.

BACKGROUND: Salmonellosis is a major cause of morbidity and mortality and one of the most frequent etiologies of diarrhea in the world. Mortality due to Salmonellosis in Latin America still poorly understood, and there is a lack of studies that evaluate resistance and clinical manifestations. The aims of this study were to characterize patients infected with Salmonella spp. seen in a university hospital in Colombia between 2012 and 2021, to evaluate trends in antibiotic resistance and to determine the proportion of overall mortality and related factors. METHODS: Retrospective observational study. All patients with microbiological diagnosis of Salmonella spp. were included. The sociodemographic, clinical and microbiological characteristics were described, and the proportion of antibiotic resistant isolates per year was estimated. The prevalence of mortality according to age groups was calculated. Log binomial regression models were used to establish factors associated with mortality. RESULTS: Five hundred twenty-two patients were analyzed. Salmonellosis accounted for 0.01% of all medical consultations. The median age was 16 years old. The most common clinical presentation was gastroenteric syndrome (77.1%) and symptoms included diarrhea (79.1%), fever (66.7%), abdominal pain (39.6%) and vomiting (35.2%). Of the Salmonella spp. isolates, 78.2% were not classified, 19.1% corresponded to non-typhoidal Salmonella and 2.7% to Salmonella typhi. Mortality occurs in 4.02% of the patients and was higher in patients with hematologic malignancy (11.6%). When analyzing by age group, the proportion of deaths was 2.8% in patients aged 15 years or younger, while in those older than 15 years it was 5.4%. Factors associated to mortality where bacteremia (aPR = 3.41 CI95%: 1.08-10.76) and to require treatment in the ICU (aPR = 8.13 CI95%: 1.82-37.76). In the last 10 years there has been a steady increase in resistance rates to ciprofloxacin, ampicillin, ampicillin/sulbactam and ceftriaxone, reaching rates above 60% in recent years. CONCLUSIONS: Despite improved availability of antibiotics for the treatment of salmonellosis in the past decades, mortality due to salmonellosis continues occurring in children and adults, mainly in patients with hematological malignancies and bacteremia. Antibiotic resistance rates have increased significantly over the last 10 years. Public health strategies for the control of this disease should be strengthened, especially in vulnerable populations.

RESUMEN Objetivo. Determinar la presencia de Salmonella spp y el PRA en aislamientos de hisopados cloacales y musculares en especímenes de Caiman crocodilus fuscus y Crocodylus acutus en cautiverio en Colombia. Materiales y métodos. Se realizó un muestreo de tipo transversal y descriptivo con un diseño no probabilístico por conveniencia una única vez, durante el mes de febrero de 2021. Se incluyeron 150 animales de Caiman crocodilus fuscus y Crocodylus acutus, con una distribución 50/50. Se tomaron muestras cloacales y musculares con hisopos estériles. Estas se sembraron en agar MacConkey, posteriormente en agar SS. Luego, se reconfirmaron las muestras positivas en agar TSI. Se realizó la serotipifación con antisueros monovalentes y polivalentes específicos. Se realizó la prueba de difusión en agar Mueller-Hinton. Resultados. No existió crecimiento de colonias en ninguna muestra muscular. La presencia de la bacteria en muestras cloacales de Caiman crocodilus fuscus fue del 36% y para Crocodylus acutus de 50.6%, los dos serotipos con mayor porcentaje de detección en ambos grupos fueron el serogrupo C1 y el serogrupo polivalente B. Ocho colonias fueron resistentes a tetraciclina, mientras que otras colonias tuvieron una resistencia intermedia a ampicilina, cefoxitin, sulfatrimetropim y tetraciclina. Conclusiones. Este es el primer reporte relacionado con la detección de Salmonella spp. en canales de caimanes en el país, sin encontrar presencia del agente en ninguna muestra evaluada, sin embargo, se recalca la importancia de seguir su monitoreo para garantizar productos inocuos.
ABSTRACT Objective. Determine the presence of Salmonella spp and the AMR in isolates of cloacal and muscle swabs in specimens of Caiman crocodilus fuscus and Crocodylus acutus in captivity, in Colombia. Materials and methods. A cross-sectional and descriptive sampling was carried out with a non-probabilistic design for convenience, once, during the month of February 2021. 150 Caiman crocodilus fuscus and Crocodylus acutus animals were included, with a 50/50 distribution. Cloacal and muscle samples were taken with sterile swabs. These were planted on MacConkey agar, then on SS agar. These positive samples were then reconfirmed on TSI agar. Serotyping was performed with specific monovalent and polyvalent antisera. The diffusion test was performed on Mueller-Hinton agar. Results. There was no growth of colonies in any muscle sample. The presence of the bacteria in cloacal samples of Caiman crocodilus fuscus was 36% and for Crocodylus acutus 50.6%. The serotypes with the highest detection percentage in both groups were serogroup C1 and polyvalent serogroup B. Some colonies were resistant to tetracycline, while other colonies had intermediate resistance to ampicillin, cefoxitin, sulfa trimethoprim, and tetracycline. Conclusions. This is the first report related to the detection of Salmonella spp. in alligator carcasses in the country, without finding the presence of the agent in any sample evaluated, however, the importance of continuing its monitoring is emphasized to guarantee innocuous products
RESUMEN
The consumption of fresh vegetables is related to healthy lifestyle habits present in culinary preparations in different regions. The presence of pathogenic parasites in these foods can cause gastrointestinal disorders. Thus, the objective of the present study was to carry out a narrative review of the literature on the prevalence of helminths in fresh vegetable samples. The analysis of the studies published from 2016 to 2022 showed that hookworms and Ascaris lumbricoides are the most common pathogenic helminths in fresh vegetable samples, with a prevalence of up to 73.8% and 55.1%, respectively. In addition, studies have shown associations between the presence of helminths and pathogenic protozoa. The results obtained in this review indicate the urgent need to implement actions at all stages of the vegetable production chain, from the water used in planting irrigation to cleaning before sale to the final consumer. © 2022 Society of Chemical Industry.

Essential oils are volatile aromatic liquids derived from the secondary metabolism of plants, consisting of a complex mixture of different active compounds. Several medicinal plants are sources for the extraction of essential oils, being recognized as safe (GRAS) by the FDA (Food and Drug administration). The use of essential oils as possible food preservatives has been gaining ground in research due to their antioxidant and antibacterial activities, important characteristics in food preservation and also to the population's interest in consuming healthier products. Essential oils are a promising alternative for the food industry, as they act to control pathogenic and deteriorating bacteria. Compared to synthetic chemical preservatives, essential oils are generally safer, but have low stability, so encapsulation is a way to protect them from adversities. This review aims to demonstrate the effectiveness, stability and safety of essential oils and their use in food matrices.
Os óleos essenciais são líquidos aromáticos voláteis derivados do metabolismo secundário das plantas, sendo constituído por uma mistura complexa de diferentes compostos ativos. Diversas plantas medicinais são fontes de extração de óleos essenciais sendo reconhecidos como seguros (GRAS) pelo FDA (Food and Drug administration). A utilização de óleos essenciais como possíveis conservantes em alimentos vem ganhando espaço nas pesquisas devido a suas atividades antioxidantes e antibacterianas, características importantes na preservação de alimentos e também ao interesse da população em consumir produtos mais saudáveis. Os óleos essenciais são uma alternativa promissora para a indústria de alimentos, pois atuam no controle de bactérias patogênicas e deteriorantes. Em comparação com os conservantes químicos sintéticos, os óleos essenciais geralmente são mais seguros, porém apresentam baixa estabilidade, deste modo a encapsulação é uma forma de protegê-los de adversidades. Esta revisão tem como objetivo demonstrar a efetividade, estabilidade e a segurança dos óleos essenciais e seu uso em matrizes alimentares.

Varias plantas medicinales son fuentes para la extracción de aceites esenciales, siendo reconocidas como seguras (GRAS) por la FDA (Administración de Alimentos y Medicamentos). El uso de aceites esenciales como posibles conservantes de alimentos ha ido ganando terreno en las investigaciones debido a sus actividades antioxidantes y antibacterianas, características importantes en la conservación de alimentos y también al interés de la población por consumir productos más saludables. Los aceites esenciales son una alternativa prometedora para la industria alimentaria, ya que actúan para controlar las bacterias patógenas y deteriorantes. En comparación con los conservantes químicos sintéticos, los aceites esenciales son generalmente más seguros, pero tienen baja estabilidad, por lo que la encapsulación es una forma de protegerlos de las adversidades. Esta revisión tiene como objetivo demostrar la eficacia, estabilidad y seguridad de los aceites esenciales y su uso en matrices alimentarias.
RESUMEN
A qualidade microbiológica dos alimentos é de extrema importância a nível de saúde pública. Por isso, são necessárias análises para identificar possíveis contaminações e, a partir delas, estabelecer recomendações e medidas para garantia da segurança dos alimentos ofertados à população. A presença de Escherichia coli e coliformes totais nos alimentos indica condições de higiene insatisfatórias. Desta forma, no presente trabalho buscou-se avaliar a presença de E. coli e coliformes totais em queijos comercializados em feiras livres nos municípios da Baixada Santista, por meio de kit comercial COLItest ®. Verificou-se a presença de coliformes totais em nove amostras (100%). Sendo que cinco (55,5%) das amostras analisadas foram positivas para E. coli, indicando que os produtos vendidos na feira, sem controle de qualidade, possuem contaminações bacterianas que podem prejudicar a saúde dos consumidores.(AU)
The microbiological quality of food is extremely important in terms of public health. Therefore, analyzes are necessary to identify possible contaminations and based on them, establish recommendations and measures to guarantee the safety of food offered to the population. The presence of Escherichia coli and total coliforms in food indicates unsatisfactory hygiene conditions. In this way, the present work sought to evaluate the presence of E. coli and total coliforms in cheese sold in free fairs located in municipalities of Baixada Santista, through the commercial kit COLItest ®. The presence of total coliforms was verified in nine samples (100%). Five (55.5%) of the samples were positive for E. coli, indicating that the products sold at the fair, without quality control, have bacterial contamination that can harm the health of consumers.(AU)

Staphylococcus aureus is an important foodborne pathogen associated to food intoxication and other multiple infections in human being. Its presence in salted food is a serious issue due to its salt tolerance potential. A study was conducted to analyze the presence of enterotoxins producing drug resistance S. aureus in salted sea fish from Gwadar. Freshly persevered samples (n=50) of salted fish were subjected to analyze the presence of S. aureus using 16S rRNA and Nuc genes primers. The isolates were then evaluated for drug resistance and enterotoxins producing potential using specific primers for MecA (methicillin resistance gene), (SEA) staphylococcal enterotoxin A and (SEB) staphylococcal enterotoxin B genes. Total 13/50 (26%) of the samples were found positive for the presence of S. aureus, preliminary confirmed with biochemical profiling and finally with the help of target genes presence. The isolates were found showing 100% resistant to methicillin, which were molecularly confirmed by the presence of MecA gene present in genome. The isolates 5/13 (38%) were positive for SEA and 3/13 (23%) for SEB genes, whereas 2/13 (15%) were confirmed having both SEA and SEB genes in its genome. It was also confirmed that all the isolates were capable to form biofilm over the glass surfaces. It was concluded that the study confirmed the presence of enterotoxigenic methicillin resistance Staphylococcus aurous (MRSA) in salted fish product, that poses gross food safety concern. Preventive and control measures are necessary to handle this serious food safety concern.(AU)

O mercado hoteleiro é um dos ramos principais da cadeia turística, tendo a área de alimentos e bebidas (A&B) como parte dessa estrutura hoteleira. O setor A&B tem grande participação na receita de um hotel, porém deve proporcionar ao hóspede satisfação gastronômica e garantir a segurança dos alimentos servidos. Dessa forma, o objetivo do estudo foi verificar se o binômio tempo x temperatura durante a distribuição dos alimentos em um buffet de café da manhã em um hotel no Rio de Janeiro atendia aos parâmetros legais. A aferição de temperatura dos alimentos distribuídos foi realizada por meio de termômetro durante 30 dias consecutivos. Os resultados mostraram que, dentre os 18 alimentos distribuídos refrigerados, 36,6% das amostras coletadas estavam com temperatura entre 10°C e 21°C por mais de duas horas. Já dentre os cinco alimentos distribuídos quentes, 42,2% das amostras foram expostas a temperaturas inferiores a 60°C por mais de uma hora, estando ambos em desacordo com as normas legais. Os resultados mostraram que, com exceção do bolo, todos os alimentos apresentaram inconformidade em pelo menos um dia, demonstrando risco para os hóspedes.(AU)
The hotel industry is one of the main branches of the tourist chain, with the food and beverage (F&B) area being part of this hotel structure. The F&B sector has a large share of a hotel's revenue, but it must provide the guest gastronomic satisfaction and ensure the safety of the food offered. Thus, the objective of the study was to verify if the binomial time X temperature during the distribution of food in a breakfast buffet in a hotel in Rio de Janeiro met the legal parameters. The temperatures were measured for 30 consecutive days punctually at 8 a.m. Among the 18 different refrigerated foods samples, 36,6% were distributed at temperatures between 10°C and 21°C for more than 2 hours. On the other hand, among the 5 different heated foods 42,2% were exposed to temperatures below 60°C for a period longer than an hour, both in disagreement with local regulation. The results showed that, with the exception of the cake, all preparations showed non-compliance in at least one day, putting guests at risk.(AU)

RESUMEN
Introduction: Anisakiasis is a human parasitic disease caused by the consumption of raw fish or shellfish containing larvae of the Anisakidae family. It is currently considered an emerging disease of public health interest. Objective: To identify the presence of larvae of the Anisakidae family in samples of frozen raw fish fillets intended for human consumption in markets in Medellín and its metropolitan area in Antioquia, Colombia. Materials and methods: A cross-sectional study was carried out, in which larvae of the Anisakidae family were detected and identified in frozen raw fish fillets from three representative markets in Medellín and its metropolitan area. A total of 384 ready for consumption fillets were analyzed (197 sawfish, 137 salmon, 37 tuna, and 13 hake), using the pressing and ultraviolet light method. Taxonomic keys were used to identify the collected parasites and to establish its genus. Conventional PCR and Sanger sequencing was performed to determine the species. Results: Four larvae were found in 4 of the 384 (1.04%) fillets (CI95% 1.04 ± 1.01%). The species of fish in which the larvae were found was sawfish (Scomberomorus spp.) and the genus and species of the larvae was established as Anisakis pegreffii. Conclusions: According to the study, the presence of Anisakis parasites in frozen raw fish fillets in the influence area is evident.
Introducción. La anisakiasis es una infección producida por parásitos de la familia Anisakidae, transmitida a los humanos por el consumo de pescado o mariscos crudos. En la actualidad, se considera una enfermedad emergente de interés en salud pública. Objetivo. Identificar la presencia de larvas de la familia Anisakidae en muestras de filetes de pescado crudo congelado destinados a consumo humano, en mercados de Medellín y su área metropolitana en Antioquia (Colombia). Materiales y métodos. Se realizó un estudio transversal, en el cual se buscó la presencia de larvas de la familia Anisakidae en filetes de pescado crudo congelado de tres mercados representativos de Medellín y su área metropolitana. Se analizaron 384 filetes listos para el consumo (197 sierras, 137 salmones, 37 atunes y 13 merluzas). Cada filete fue analizado mediante el método de prensado y luz ultravioleta. Los parásitos recolectados se identificaron a partir de claves taxonómicas para establecer el género, así como PCR convencional y posterior secuenciación Sanger, para determinar la especie. Resultados. Se encontraron 4 larvas en 4 de los 384 filetes (1,04 %) (IC95% 1,04 ± 1,01 %). Las larvas encontradas fueron identificadas como Anisakis pegreffi y el tipo de pescado en el cual se encontraron fue la sierra (Scomberomorus spp.) Conclusiones. De acuerdo con el estudio realizado, se evidencia la presencia de parásitos anisákidos en filetes de pescado crudo congelado en el área de influencia.
