RESUMEN

Several studies have reported high overweight and obesity incidence among schoolchildren and adolescents, who mostly consume packaged snacks with critical nutrients exceeding the criteria of international profiling systems during school breaks. Then, the objectives of this work were to reformulate a snack consumed by Argentinian schoolchildren and adolescents (aged 6-13 years) to decrease its critical nutrient contents and to determine if this product would still be accepted. Chocolate chip vanilla cookies were selected for reformulation considering each recommended cut-off point for critical nutrients, since a prohibition of products with warning octagons being offered at schools would come into effect in Argentina. These cookies received good acceptability scores (above 3 of 5 points) and would be consumed by 8 of 10 schoolchildren in a sample of 200 participants. These findings underscore the importance of legislation promoting awareness of healthier eating habits and increasing the availability of healthier food options in schools.

Introducción: la evidencia demostró que las grasas influyen en el desarrollo de la diabetes mellitus (DM). Si bien el contenido ideal de grasa para el tratamiento de esta patología es controvertido, se sabe que la calidad de la grasa es más importante que la cantidad. Objetivos: evaluar el consumo de grasas en la población con DM2 que concurrió a un centro asistencial de la ciudad de Rosario. Materiales y métodos: estudio descriptivo, observacional y transversal en 88 adultos con DM2 de ambos sexos y una edad promedio de 45,55±12,33 años. Se estimó valor calórico total (VCT), consumo de grasa total, ácidos grasos saturados (AGS), monoinsaturados (AGM), poliinsaturados (AGP) y colesterol a través de tres recordatorios de 24 horas, y se compararon los valores con las recomendaciones para el grupo total y según sexo. Se realizó el análisis estadístico con el programa estadístico R versión 4.0.2. Resultados: el VCT medio fue de 1.851 kcal. La ingesta media de grasas totales fue de 43,30%, de AGS 13,44%, de AGM 14,10%, de AGP 12,86% y de colesterol 388,55 mg. Los consumos de grasa total, AGS, AGM y colesterol resultaron significativamente mayores en hombres (p=0,008, p=0,004, p=0,023, p=0,027 respectivamente). El 78,41% tuvo una ingesta excesiva de grasa total. El consumo de AGS resultó inadecuado en el 99% de los participantes. El 92% tuvo un consumo de AGM dentro de los valores recomendados. Los AGP presentaron una ingesta inadecuada en el 68% de los individuos. El consumo de colesterol fue inadecuado en el 83% de los encuestados. No se observaron diferencias significativas en la adecuación a las recomendaciones según sexo. Conclusiones: más de la mitad de las personas con DM2 presentó un consumo de grasas totales excesivo, con ingestas inadecuadas de grasas saturadas, poliinsaturadas y colesterol respecto de las recomendaciones. Solo el consumo de grasas monoinsaturadas resultó ser adecuado


Introduction: the evidence showed that fats have a role in diabetes development. Even though fat ideal amount in this pathology`s treatments controversial; it is known that fat quality is more important that fat quantity. Objectives: to assay the fat intake in type 2 diabetes (T2D) patients who attended in a health care center in Rosario. Materials and methods: a descriptive, observational and cross-sectional study was conducted. The sample included 88 male and female adults, with T2D aged 45.55±12.33. The total energy, total fat, satured, unsatured fatty acids and cholesterol intakes were estimated through three 24-hour food recall instruments and then were compared with recommended values. Statistical analysis was performed using R statistical software 4.0.2 version. Results: mean total energy intake was 1851 kcal. Mean total fat intake was 43.30%, satured fatty acid intake 13.44%, monounsatured 14.10%, polyunsatured 12.86% and choresterol 388.55 mg. Total fat, satured and monounsatured fatty acids and cholesterol intakes were significantly higher in men (p=0.008, p=0.004, p=0.023, p=0.027; respectively). The 78.41% exceeded total fat intake. Satured fatty acid intake was inadequate in 99% of participants. The 92% had a monounsatured intake adequate to recommendations. Polyunsatured fatty acid showed an inadequate intake in 68% of patients. Cholesterol intake was inadequate in 83% of participants. There were not found significant differences in adherence to recommendations between sex.Conclusions: more than a half of T2D patients show and excessive total fat intake with inadequate intakes of saturated and polyunsaturated fatty acids and cholesterol. Only monounsaturated fat intake was adequate to recommendations
