RESUMEN

Possibility of utilizing a carotenoid concentrate (CC) extracted from Cucumaria frondosa of the North Atlantic in foodstuffs and medicinal and prophylactic diet is considered. A complex of experimental studies including physiological, biochemical and morphological examinations has found that addition of CC in physiological doses to a diet of warm-blooded animals during 12 months causes no side effects. Utilization of CC in medicinal and prophylactic dietary nutrition may be beneficial.

RESUMEN

During initial stages freezing and conservation of Notothenia nudifrons L. muscle tissue are accompanied with nonspecific changes in the intracellular membranous system of fibers, in their lipid and protein composition. Certain connections between development of destructive changes in mitochondrial membranes, sarcoplasmic reticulum, T-system and intensity of accumulation of free fatty acids and products of peroxide oxydation of tissue lipids are revealed. Manifestation of hydrolitic enzymes activity coinsides, in time, with formation of autophage vacuoles. Transformation of the latter into residual bodies is in accord with a decreased enzymatic activity. A supposition is made concerning the mechanism of the muscle tissue destruction in the process of a prolonged conservation in cold.

RESUMEN

Freezing slightly changes ultrastructure of myofibrillar proteins, but is accompanied with their decreased solubility. During frozen storage, progressive decrease in solubility of these proteins by the 4th month is probably depended on the fact that in sarcoplasm certain globular particle associates appear; they are products of the most easily hydrolized proteins in filaments, namely, Z-lines, I-discs, H-zone. The fact that some protein components of the sarcomere disappear simultaneously with decreasing solubility of the myofibrillar proteins demonstrates that these processes are closely connected with each other.
