RESUMEN

The effect of introduction of milk proteins in a novel homogenized canned meat of the "Kroshka" type for child and dietetic nutrition was studied. It was shown in animal experiments that introduction of sodium caseinate and fat-free curds in a 5% amount into canned meat raises the biological value of canned food and exerts a favourable effect on some metabolic parameters of the growing organism.

RESUMEN

The nature of influence produced by native and modified starches on the biological value of new baby food homogenized canned meat of the "Kroshka" type was studied. Experiments on animals have found the stabilization of the structure of approbated canned goods modified with phosphate starches, such as maze, amylopectin and potato (TY 18 RSFSR 279-73) ones, causes lowering of the biological value of the product by comparison with analogous native starches.

RESUMEN

Subject to study was the influence of fats differing in their composition on the growing organism of weaned rattlings. An elevated proportion of sunflower oil on the growth and survival of rattlings was found to produce an adverse effect. An autopsy on the 21st day from the outset of tests revealed macro- and microscopically also the affection of the kidneys. In the course of examinations evidence was obtained that at the root of the renal lesion lie changes occurring during the development of the A vitamin deficiency.

RESUMEN

The biological value of new canned meat baby food "Kroshka" with an addition of a protein enrichment agent was investigated. The introduction of protein enrichment in the formulation of the canned food was found to increase its biological value, the latter being related to the concentration of the protein addition. Moreover, the study of canned food containing an additional protein enrichment agent had a beneficial effect on hemopoiesis as well as on the function of the liver and on some aspects of the mineral metabolism.

RESUMEN

Some technological methods employed in the production of new canned foods prepared with chicken meat and intended for 5-7 month old infants were investigated. Biological experiments established the limits for the thermal optimum of sterilization within the range of 125-130 degrees for the new canned goods of the type "Kroshka". Furthermore, the most marked loss of the proteinic value of the canned goods with the use of modified starches--the jellyfying potato and the corn phosphatethan by employing native starches as a structural stabilizer, was ascertained. The need for hygienic evaluation of the technological methods in developing new baby and dietic foods is stressed.
