RESUMEN

The aim of this work is to assess the nutritional value of service tree (Sorbus domestica L.) bark, fruit exocarp and mesocarp, and seeds by establishing the levels of macro- and microelements, total phenolics, flavonoids and tannins. Our results revealed that all of the tested service tree samples were rich in potassium. Bark was the best source of calcium and zinc, while seeds were the best source of magnesium. Compared to the bark and seeds, fruit exocarp and mesocarp contained significantly lower amounts of these three elements. Immature exocarp and bark contained the highest amounts of total phenolics and showed the highest antioxidant activity. Maturation significantly decreased the amount of total phenolics in fruits, as well as the antioxidant activity of total phenolics and total tannins from exocarp, but not from mesocarp. Exocarp was the richest in total flavonoids. Based on the obtained data, we have concluded that the under-utilised species S. domestica L. could serve as an important source of mineral elements and antioxidants in the human diet.

Herbal mixtures composed of blackberry leaf and natural sweeteners (dried apples, prunes, figs, raisins, apricots, carrot and sweet potato, stevia leaves and liquorice root) were developed. Their nutritive and bioactive profile, biological activity and sensory properties were determined. Formulated mixtures exhibited lower total polyphenol content (259.09-350.00 mg GAE/L) when compared to plain blackberry leaf, but contained higher content of chlorogenic, ferulic, p-coumaric, rosmarinic acids and quercetin, as well as some macroelements (Ca, K, Mg) and microelements (Ba, Na). Stevia addition to formulated mixtures ensured higher polyphenolic content. Dried carrot exhibited the highest (0.988 g/g) and liquorice the lowest (0.087 g/g) content of total sugars but it contributed to the sweetness with 574.48 mg/L of glycyrrhizic acid derivatives. Plain blackberry leaf extract exhibited cytotoxic and antioxidative activity on human colon cancer cells. Formulated mixtures exhibited improved flavour profile and balanced sweetness in relation to plain blackberry leaf infusion.

Concentrations of Ag, Al, Ba, Cd, Co, Cr, Cu, Fe, K, Mn, Na, Ni, Pb, Sr, and Zn-isolated by sequential extraction steps from apple orchard soil-were analyzed by inductively coupled plasma-atomic emission spectroscopy and compared to the total amount of metal in soil determined by XRF. The extractable amount of each metal was calculated by the extraction yields of the four steps. The LODs of the different elements in all extracts ware below 3 µg/L except for Ba (steps 1 and 2), Cu (step 1), Fe (all steps), K (steps 1-3), Mn (step 2), Na (steps 1-3), Ni (step 1), Pb (steps 1 and 4), and Zn (steps 1 and 2). The highest LOD (>10 µg/L) was found for Fe, K, and Na (step 1). The recovery of all metals after four sequential extraction steps was 90-112%. The repeatability (<1.1%), the intermediate precision (<5.3%), the day-to-day reproducibility (<6.2%), and the overall uncertainty of measurement (approximately 4-8.5%) for all analyzed metals supports the choice of the method used.
